Porcini Popovers image

Popovers are an appealing alternative to Yorkshire pudding (the same batter is used for both), and embellishing with dried porcini mushrooms imparts an unexpected woodsy dimension. You'll want to make these all winter long.

Yield Makes 12

Number Of Ingredients 7

1/2 oz dried porcini mushrooms
2 1/2 cups all-purpose flour
1 1/2 tsp salt
6 large eggs, lightly beaten
2 1/2 cups whole milk
1/2 stick unsalted butter (2 Tbsp melted and 2 Tbsp cold) plus additional for popover cups
2 nonstick popover pans with 6 (2/3-cup) cups

Steps:

  • Grind porcini to a powder in an electric coffee/spice grinder or a blender (you'll have about 1/4 cup). Whisk together porcini powder, flour, salt, eggs, milk , and melted butter until smooth, then let rest, chilled, 1 hour.
  • Preheat oven to 400°F with rack in middle. Butter popover cups. Cut remaining 2 Tbsp butter into 12 pieces.
  • Heat popover pans in oven 2 minutes. Remove from oven and add a piece of butter to each cup. Return to oven and heat until butter is bubbling, about 1 minute. Divide batter among cups (a scant 1/2 cup each) and bake until puffed and golden-brown, 30 to 35 minutes.
  • Pierce top of each popover with a sharp knife to release steam, then continue to bake until deep golden-brown, 5 to 10 minutes more. Serve immediately.
  • Popovers can be baked 4 hours ahead. Remove from pans and reheat on a baking sheet in a 350°F oven until hot and crisp.

  • Preheat the oven to 425 degrees F.
  • Generously grease aluminum popover pans or Pyrex custard cups with softened butter. You'll need enough pans to make 12 popovers. Place the pans in the oven for exactly 2 minutes to preheat. Meanwhile, whisk together the flour, salt, eggs, milk, and melted butter until smooth. The batter will be thin. Fill the popover pans less than half full and bake for exactly 30 minutes. Do not peek.

150g plain flour
4 eggs
200ml milk

Steps:

  • Heat the oven to 240C/220C fan/gas 9. Pour a little oil into the holes of a deep 12-hole muffin tin or 12 popover tins, making sure the oil coats the bases in a thin layer. Slide into the oven for 10 mins to heat the oil.
  • Whisk the flour and eggs together in a bowl with a pinch of salt until you have a smooth, thick paste. Slowly pour in the milk, whisking continuously until you have a thin batter that's the consistency of double cream.
  • Carefully remove the hot tin from the oven and quickly pour in the batter, filling the tins half full. The batter should sizzle immediately as it hits the oil. Bake for 10 mins, then reduce the oven to 200C/180C fan/gas 6 and bake for 10-15 mins more until the popovers are golden, crisp and well-risen. Serve straightaway.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Put 12-cup muffin tin in oven to preheat as well.
  • Beat eggs and milk together in a bowl with an electric hand mixer. Add flour and salt; continue beating into smooth batter.
  • Put about 3/4 teaspoon butter into each muffin tin and carefully spread butter up sides of each cup. Quickly divide batter among prepared cups.

1 tablespoon minced parsley
1 cup milk
1 egg, beaten lightly
3 teaspoons melted butter

Steps:

  • Preheat the oven to 400 degrees.
  • In a large mixing bowl combine the flour, salt, pepper and parsley. Using a whisk or a mixer, add the milk in a steady stream, working quickly. Combine the egg with 1 teaspoon of the melted butter, and whisk this mixture into the batter.
  • Rub a muffin tin well with the remaining 2 teaspoons of butter. Place the tin in the oven, and heat it until it is hissing hot, about 6 minutes. Remove from the oven, and ladle the batter into the hot muffin cups, filling each slightly over half. Return to the oven, and bake for 30 minutes until the popovers are puffed and golden. Do not open the oven during the baking, or the popovers will fall. Serve immediately.

Steps:

  • Preheat oven to 450 degrees. Lightly grease and flour a popover tin.
  • In a large bowl, whisk together flour and salt. In a separate medium bowl, whisk together eggs, milk, and 1 tablespoon melted butter. Pour over flour mixture, and fold until just blended.
  • Fill the popover cups two-thirds to three-quarters full.

2 teaspoons dried oregano
2 teaspoons garlic powder
2 teaspoons kosher salt
2 ½ tablespoons unsalted butter, melted, divided
1 ¼ cups all purpose flour
¼ cup parmesan cheese, finely grated, plus 1½ tablespoons
½ cup pepperoni, chopped, divided
1 tablespoon fresh basil, thinly sliced, for garnish
1 cup marinara sauce, warm
1 6 cup popover pan

Steps:

  • Preheat the oven to 425°F (220°C).
  • In a blender, combine the eggs, egg whites, milk, and tomato paste. Blend until smooth. Add the oregano, garlic powder, salt, 2 tablespoons of melted butter, and flour and blend on high speed for 2-3 minutes, until completely smooth. Transfer the batter to a liquid measuring cup with a pour spout and let rest at room temperature for 20 minutes.
  • Meanwhile, place the popover pan in the oven to preheat.
  • After resting, fold ¼ cup (30 g) Parmesan and ¼ cup (35 g) chopped pepperoni into the popover batter.
  • Remove the popover pan from the oven and brush ¼ teaspoon melted butter in each cup, then fill ¾ of the way full with batter. Sprinkle with the remaining pepperoni and remaining 1½ tablespoons Parmesan cheese.
  • Bake the popovers for 25-30 minutes, or until they appear puffed and dry (do not open the oven door to check).
  • Garnish the popovers with basil and serve immediately with warm marinara sauce alongside.
