1 (2 pound) pie pumpkin, peeled and coarsely chopped
3 pears - peeled, cored, and sliced
1 tablespoon olive oil
6 slices bacon, diced
½ onion, diced
½ bulb fennel, diced
3 tablespoons butter
3 cloves garlic, minced
½ teaspoon ground cinnamon
salt and ground black pepper to taste
4 cups chicken broth
½ cup crumbled goat cheese

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Place pumpkin chunks on one side of a rimmed baking sheet. Place sliced pears on the other side. Drizzle with olive oil and mix around to coat.
  • Roast in the preheated oven, stirring halfway through, until pumpkin is easily pierced with a fork, about 30 minutes.
  • Meanwhile, fry bacon in a large pot over medium heat for 5 minutes. Add onion and fennel; cook until onion is soft and clear, about 5 minutes. Add butter and garlic; season with cinnamon, salt, and pepper. Add pumpkin and pears. Cook for 3 to 4 minutes.
  • Pour in chicken broth to cover all the vegetables. Bring to a boil. Reduce heat and simmer for 20 minutes. Puree soup with an immersion blender until smooth. Serve hot, with crumbled goat cheese on top.

If store bought Creme Fraiche can't be found you can make your own by combining 1/4 cup whipping cream and 1/4 cup sour cream. Cover and let warm to room temperature for 2 to 5 hours until mixture thickens then refrigerate for at least 2 hours.

2 leeks, thinly sliced (white part only)
1 medium sweet onion, chopped
2 tablespoons butter
3 tablespoons flour
4 cups chicken broth
1 (15 ounce) can pumpkin
1/2 vanilla beans, split lengthwise or 2 teaspoons vanilla extract
1/4 teaspoon salt
1/4 teaspoon white pepper
1/4 teaspoon ground nutmeg
3 canned pear halves
1 cup pear syrup, from canned pears
1/2 cup light cream
creme fraiche

Steps:

  • Cook leeks and onion in hot margarine or butter in a large saucepan over medium heat until tender. Stir in flour. Carefully add chicken broth all at once. Cook and stir over medium heat until slightly thickened and bubbly. Stir in pumpkin, vanilla bean (if using), salt, pepper, and the 1/4 teaspoon nutmeg. Return to boiling. Reduce heat, cover, and simmer for 20 minutes. Remove from heat. Cool slightly. Remove vanilla bean; discard. Add pear halves and pear liquid to pan.
  • Process mixture in three or four batches in a food processor bowl or blender container until smooth. Return mixture to saucepan. Stir in light cream and vanilla extract, if using. Heat through, but do not boil.
  • To serve, ladle soup into bowls. Top with a spoonful of Creme Fraiche; sprinkle with additional nutmeg, if desired.

1 large onion, coarsely chopped
2 cloves garlic, coarsely chopped
1 large carrot, peeled and coarsely chopped
2 stocks celery, coarsely chopped
7 cups vegetable stock, or water
1 1/2 cups pumpkin puree (not flavored pie filling)
1/4 teaspoon ground Mexican cinnamon, plus 1 teaspoon (canella)
1/4 teaspoon allspice
1/4 teaspoon ground ginger
1/4 teaspoon freshly grated nutmeg
2 tablespoons honey
2 teaspoons chipotle puree
3/4 cup creme fraiche or sour cream
Salt and freshly ground pepper
1/2 cup toasted pumpkin seeds
4 ounces pancetta, medium dice
1 small shallot, minced
1/4 cup sherry vinegar
1 teaspoon Dijon mustard
1 teaspoon finely chopped fresh thyme
1/4 cup olive oil
Salt and freshly ground pepper
10 ounces fresh spinach leaves
2 Bosc pears, halved, cored and thinly sliced
1 small red onion, finely sliced

Steps:

  • Heat the butter in a medium stockpot over medium heat. Add the onions, garlic, carrots and celery and cook until soft. Add the water and bring to a boil. Reduce heat and simmer for 20 to 30 minutes. Strain the stock into a clean medium saucepan and whisk in the pumpkin puree until smooth. Bring to a simmer and add the 1/4 teaspoon cinnamon, spices, honey and chipotle. Cook for 15 to 20 minutes. Add water, if the soup is too thick. Remove from the heat and whisk in 1/4 cup of the creme fraiche and season with salt and pepper to taste. Mix together the remaining creme fraiche and remaining 1 teaspoon cinnamon until combined. Divide the soup among 4 bowls and garnish with the cinnamon creme fraiche and a handful of pumpkin seeds.
  • For the Spinach, Pear and Pancetta Salad: Saute pancetta in skillet over medium heat until crisp. Drain on paper towels. Pour all but 1 tablespoon of the drippings out. Add shallots and cook until soft. Add vinegar, mustard and thyme; whisk to blend. Add oil and whisk to blend. Season with salt and pepper. Keep warm. Combine spinach, pears, red onion and pancetta in a large bowl. Toss with enough dressing to coat.

One 15-ounce can pumpkin puree
1 rotisserie chicken, skin discarded, meat shredded or chopped
1 stalk celery, finely chopped
1 clove garlic, grated on a rasp
2 teaspoons chopped fresh sage, 3 to 4 leaves
2 teaspoons chopped fresh thyme, 10 to 12 sprigs
1 cup walnuts, toasted and chopped
2 scallions, finely chopped
1/2 cup dried cranberries, chopped
1 teaspoon Hungarian paprika
Kosher salt and freshly ground black pepper
1 1/2 cup shredded Swiss or gruyere
24 empanada wrappers, such as Goya discos
2 eggs
Sunny's Creme Fraiche Dipping Sauce, to serve, recipe follows
8 ounces creme fraiche
3 scallions, cut into thirds
1 clove garlic, grated on a rasp
1 tablespoon hot sauce, such as Frank's Red Hot Sauce
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • For the filling: In a large bowl, combine the pumpkin puree, chicken, celery, garlic, sage, thyme, walnuts, scallions, dried cranberries and Hungarian paprika. Taste, making sure to get a bit of each ingredient in the sample. There should be a nice balance of sweet and savory; adding a nice pinch of salt can bring you to the right place. Stir before tasting again and adjust as needed. Once done with the salt, add a few grinds of black pepper. Add the cheese and stir to combine. Refrigerate until mix is firm and less sticky, about 20 minutes.
  • For the wrappers: Wrappers should be packed with paper between each. Remove one wrapper at a time along with the paper and roll and flatten each slightly with a rolling pin. If not packed with paper, roll on a sheet of wax paper. Cut each in half to create 48 half circles. Fill one side of each half with a heaping tablespoon of filling and fold the empty side over the filled side to create a triangle with a curved edge. Then, using the tines of a fork, close both open sides by pressing them together with the top 1/2 inch of the fork. Repeat for the rest.
  • In a small bowl whisk the eggs and 1 tablespoon water. Lightly brush one side of each bite and place the brushed side up on a parchment or nonstick aluminum foil-lined baking sheet. Bake until golden brown, 20 to 24 minutes. Serve with Sunny's Creme Fraiche Dipping Sauce.
  • In a food processor, add the creme fraiche, scallions, garlic and hot sauce. Taste the dip and season with a pinch of salt and a few grinds of black pepper. Blend again and taste, seasoning again if needed. Refrigerate at least 30 minutes before serving cold.

5 whole star anise

Pinch of fine sea salt
6 medium firm but ripe pears (about 2 1/2 pounds), peeled, quartered, cored

Steps:

  • Combine 2 1/2 cups water, honey, star anise, lemon juice, and sea salt in large saucepan. Bring to boil over medium heat, stirring occasionally. Add pears; reduce heat and simmer until tender, turning occasionally, 4 to 6 minutes, depending on ripeness. Using slotted spoon, transfer pears to medium bowl. Boil liquid and star anise until reduced to 1 cup syrup, about 22 minutes. Pour syrup with star anise over pears. Cover and chill until cold, about 2 hours. DO AHEAD: Can be made 1 day ahead. Keep chilled.
  • Remove star anise from syrup. Divide pears and syrup among 6 bowls. Top each with dollop of crème fraîche and serve.
