Steps:
- In a blender or food processor, combine mayonnaise, buttermilk, cheese, Worcestershire and garlic powder, and process until smooth. Store in tightly covered jar in the refrigerator until ready to serve. Serve over tossed salad greens.

STEAKS WITH ROQUEFORT SAUCE
This recipe came to me when I was doing a Spanish themed party for a Hemingway book. Everyone LOVED the sauce so much I try to make it all the time. However, if you don't like bleu cheese, I wouldn't try it. I also substitute whiskey for the brandy, or any liquor that isn't sweet.

Steps:
- Melt the butter and heat the oil in a skillet over high heat. Season steaks with salt and pepper, and quickly sear on both sides. Reduce heat to medium, and continue cooking steaks 5 minutes on each side, or to desired doneness. Remove from skillet and keep warm.
- Pour brandy into the skillet and stir to loosen browned bits from bottom. Stir in cream, and return to a boil. Cook and stir until sauce is thick enough to coat the back of a spoon. Mix cheese into the sauce until melted. Pour over the steaks to serve. Garnish steaks with parsley.

ROQUEFORT AND PEAR STRUDEL

- For dough:
- Combine 2 cups flour, 3/4 cup warm water, oil, and 1/2 teaspoon salt in large bowl of stand mixer fitted with paddle attachment. Mix on medium speed 3 minutes (dough will be sticky). Remove strudel dough from bowl and divide in half. Form each dough half into ball; wrap each in plastic. Refrigerate 1 dough ball overnight for strudel; freeze second dough ball for another use.
- For filling:
- Melt 1 1/2 teaspoons butter in heavy large skillet over high heat. Add pears and sauté until soft, about 4 minutes. Strain pear mixture, discarding juices, then transfer pears to rimmed baking sheet, spacing apart; cool completely. Transfer cooled pears to large bowl. DO AHEAD: Can be made 1 day ahead. Cover and chill.
- Add cheese, pecans, flour, and lemon juice to pears and toss gently to combine.
- Place 36x24-inch cotton cloth or clean cotton tablecloth on large work surface; secure all 4 corners to work surface with tape to keep in place. Dust cloth lightly with flour. Unwrap refrigerated strudel dough and place in center of prepared cloth; sprinkle lightly with flour. Using rolling pin, roll out dough as thinly as possible without tearing, dusting dough lightly with flour as needed to prevent sticking.
- Line rimmed baking sheet with parchment paper. Slide hands under center of dough and gently pull with palms (not fingers) toward edges, being careful not to tear dough and stretching to thin rectangle. Gently pull dough edges with floured fingertips to form 34x18-inch rectangle. Using sharp knife, trim edges to form 33x17-inch rectangle. Cut dough rectangle lengthwise in half, forming two 33x8 1/2-inch rectangles. Brush each dough rectangle lightly with melted butter, then sprinkle each evenly with 1 tablespoon sugar and 1 tablespoon dried breadcrumbs. Starting 1 inch in from 1 short end of dough, spoon filling crosswise atop each dough rectangle in 1 1/2-inch-wide log, leaving 1-inch plain border on long sides of both rectangles. Starting at edge of cloth closest to filling and using cloth as aid, lift edge of cloth and start rolling up strudel dough (not cloth) over filling, enclosing filling completely and forming 2 strudels. Tuck in short ends of dough and pinch to seal. Transfer strudels to prepared baking sheet. Brush strudels all over with melted butter. Chill at least 1 hour and up to 6 hours.
- Position rack in bottom third of oven and preheat to 375°F. Bake strudels until golden brown, about 40 minutes. Cool strudels on baking sheet 30 minutes.
- Cut strudels crosswise into 1-inch-thick slices. Serve warm or at room temperature.
- Test-Kitchen Tip:
- Although only half of the strudel dough is used in this recipe, you'll need to make a full batch of the dough to achieve the best texture. The remaining dough half can be stored airtight in the freezer for up to one month.

Great starter especially at christmas, this is absolutely impossible to mess up. Stilton also works very well here.

ROQUEFORT BUTTER
Steps:
- Place the butter and Roquefort cheese in the bowl of an electric mixer fitted with the paddle attachment and mix on medium speed until smooth. Add the scallions and mix until combined. Cut a strip of parchment paper 4 1/2 inches wide and place the mixture on the short end of the paper. Roll into a log about 1 inch in diameter, rolling the parchment paper around the butter mixture. Chill.

The Auld Alliance is a series of historic friendship treaties between Scotland and France, first signed in 1295, as well as a traditional cheese and whisky pâté. - Pound the cheese to a thick cream. Add drop by drop as much whisky as it will 'drink' to make a firm cream.
- Pack into small earthenware pots or ramekins and chill in the fridge for 3 to 4 hours.

ROQUEFORT TERRINE

- Before serving, let terrine soften about 30 minutes, then sprinkle top with remaining tablespoon nuts.
TOAST AU ROQUEFORT

- Put the cheese and creme fraiche into the container of a food processor or electric blender. Blend thoroughly. Scrape the mixture into a small bowl and add the walnuts. Blend well.
- Toast the bread on both sides.
- Spread one slice of toast with one-sixth of the cheese mixture. Top this with a second slice of toast and spread this with another sixth of the cheese mixture. Repeat with a third slice of toast and top with a final slice of toast. Press gently to make a sandwich. Prepare a second sandwich in the same manner as the first.
- Using a sharp knife with a serrated blade, carefully trim off and discard the crusts of each sandwich. Cut each of the trimmed sandwiches into four rectangles of equal size. Arrange on a platter and garnish with sprigs of chervil.

ROQUEFORT NAPOLEON

- Preheat the oven to 375 degrees.
- Line a 12-by-18-inch baking pan with parchment paper. On a lightly floured surface, roll out the pastry to a thickness of one-eighth inch, approximately the size of the baking sheet. Sprinkle the parchment lightly with water and place the rolled pastry on the sheet. Poke the dough with a fork all over. Bake for 12 minutes or until golden. When baked, remove the pastry with the parchment to a wire rack and allow to cool.
- Using the paddle of a mixing machine, blend three-quarters of a pound of Roquefort with the cream cheese until smooth. Fold in the mascarpone and port. Set aside. Crumble the remaining Roquefort and set aside.
- Using a sharp serrated knife, cut the pastry crosswise into six equal strips, each about 2 inches by 10 inches.
- Peel the pear and slice into one-quarter-inch thin "sheets."
- Using a long metal spatula, coat one strip of pastry with a thin layer of the cheese mixture. Place a single layer of pears over the cheese and coat the pears with more cheese mixture. Place another strip on top and coat with the cheese mixture. Sprinkle with crumbled Roquefort and coat with more cheese mixture; cover with a final strip of pastry. Repeat once more with the remaining pastry strips and set aside. (Extra cheese mixture can be used as a spread on crackers.)
- In a small bowl, whisk the creme fraiche with the heavy cream and set aside. Lightly dust the top surfaces of the pastry with paprika through the mesh of a fine sieve. Dip the tines of a fork into the cream mixture and rapidly drizzle the cream over the top. Sprinkle with the chopped walnuts. Cut into one-inch widths for hors d'oeuvres or into six triangles as a first course or cheese course.
