Spicy Ginger Applesauce Cake With Cream Cheese Frosting image

This simple sheet cake is packed with three kinds of spicy ginger: fresh, ground and crystallized. The cake is delicious on its own, but cream cheese frosting and a sprinkle of crystallized ginger push it closer to dessert. The cake can be made a day in advance, covered and refrigerated and brought to room temperature before serving. The crystallized ginger should be sprinkled on just before serving as it will weep in the fridge.

2 large eggs
2 cups/480 milliliters unsweetened applesauce
3/4 cup/180 grams neutral oil like canola or grapeseed
2 tablespoons fresh ginger, peeled and finely grated
1 tablespoon ground ginger
1 teaspoon finely grated orange zest
1 teaspoon ground cinnamon
1 teaspoon ground cardamom
1/4 teaspoon ground allspice
1 teaspoon vanilla extract
3/4 teaspoon kosher salt
2 cups/255 grams all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup/85 grams finely chopped crystallized ginger
12 ounces/350 grams cream cheese, softened
1/2 cup/115 grams unsalted butter, softened
2 1/4 cups/226 grams confectioners' sugar, sifted
1 tablespoon fresh ginger, peeled and finely grated
1 teaspoon lemon zest
1 teaspoon vanilla extract
Pinch of kosher salt
1/2 cup/85 grams finely chopped crystallized ginger

Steps:

  • Heat oven to 350 degrees. Butter and flour a 9-by-13-inch glass or light-colored metal baking pan.
  • In a large bowl, whisk sugar and eggs until light, about 1 minute. Add applesauce, oil, fresh and ground ginger, orange zest, cinnamon, cardamom, allspice, vanilla extract and salt. Whisk to combine.
  • Add the flour, baking soda and baking powder, and whisk until just combined. Fold in 1/2 cup chopped candied ginger.
  • Pour the batter into the prepared pan, smooth the top and firmly tap the pan on a countertop to release air bubbles. Bake the cake until golden and puffed, and a tester inserted into the center comes out clean, 25 to 35 minutes. Cool the cake in the pan on a rack.
  • When the cake is cool, make the frosting: Add the cream cheese and butter to the bowl of a stand mixer fitted with the whisk attachment. Mix on medium-high until smooth, stopping the mixer occasionally to scrape the bottom and sides of the bowl. Turn the speed to low, and slowly add the confectioners' sugar. Mix until the sugar is moistened, then turn the mixer speed up to medium-high and whip until smooth. Scrape down the bottom and sides of the bowl. Add the ginger, lemon zest, vanilla and salt, and mix on low.
  • Spread the frosting over the cooled cake in dramatic swoops and swirls, then sprinkle the remaining 1/2 cup crystalized ginger on top. Serve at room temperature.

1 tablespoon ground ginger
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon finely ground black pepper
1/2 cup (1 stick) unsalted butter, room temperature
3/4 cup (packed) golden brown sugar
1 large egg
3/4 cup mild-flavored (light) molasses
1/2 cup boiling water
Puddings
3 cups whole milk
2 4-inch-long pieces fresh ginger (about 4 ounces), peeled, thickly sliced
1 tablespoon whole black peppercorns
4 large eggs
3/4 cup sugar
1 teaspoon vanilla extract
1 teaspoon ground ginger
Pinch of salt
Ice cream or crème fraîche*
*Available at some supermarkets and at specialty foods stores.

Steps:

  • For candied apple garnish:
  • Combine all ingredients in large pot. Bring to boil over high heat, stirring until sugar dissolves. Reduce heat to medium and simmer until apples are soft and translucent and cider coats apples thickly, stirring occasionally, about 2 hours. Transfer to bowl and cool. DO AHEAD Can be made 1 week ahead. Cover and chill. Bring to room temperature before serving.
  • For gingerbread:
  • Preheat oven to 350°F. Butter 9x9x2-inch metal baking pan. Whisk first 7 ingredients in medium bowl to blend. Using electric mixer, beat butter in large bowl until fluffy. Add brown sugar and egg and beat until blended. Beat in molasses, then flour mixture. Using rubber spatula, stir in 1/2 cup boiling water. Transfer batter to prepared pan.
  • Bake gingerbread until tester inserted into center comes out clean, about 40 minutes. Transfer pan to rack and cool gingerbread completely in pan. DO AHEAD Can be made 1 day ahead. Cover pan with foil; let stand at room temperature.
  • For puddings:
  • Preheat oven to 325°F. Combine milk, fresh ginger, and peppercorns in heavy medium saucepan; bring to simmer. Remove from heat. Whisk eggs, sugar, vanilla, ground ginger, and salt in medium bowl to blend. Gradually whisk hot milk mixture into egg mixture. Strain custard into medium bowl; discard solids in strainer.
  • Cut enough gingerbread into 1/2-inch cubes to measure 5 1/3 cups (reserve any remaining gingerbread for another use). Divide gingerbread cubes among eight 3/4-cup custard cups or ramekins. Pour custard over gingerbread in each cup, dividing equally. Let stand 15 minutes to allow gingerbread to absorb some custard.
  • Place cups in roasting pan. Pour enough hot water into pan to come halfway up sides of cups. Cover pan with foil. Bake puddings until set, about 1 hour. Remove from water bath.
  • Serve puddings warm or at room temperature, topped with candied apple garnish and ice cream.

(Sometimes I speed things up by using 2 cans of apple pie filling instead of the apples, brown sugar, lemon juice and cinnamon.) It's great with hot cider. Adding a scoop of vanilla ice cream puts it over the top. =)

4 medium apples, pared, cored & sliced (about 4 cups)
1/2 cup brown sugar, packed
1 tablespoon lemon juice
1/4 teaspoon cinnamon

2 tablespoons cooking oil
1 cup all purpose flour
1/2 teaspoon baking soda

  • 2. Combine apples, brown sugar, 1 cup water, lemon juice and cinnamon. Cover and cook til apples are tender.

  • 4. In a big bowl, stir together flour, baking soda, baking powder, spices, and 1/4 tsp salt.
  • 5. Add the egg mixture to the dry mix and beat til smooth.
  • 6. Combine cornstarch and 1 T cold water. Stir into apple mixture.
  • 7. Pour into a 1 1/2 qt casserole. Spoon gingerbread mix atop apples.
  • 8. Bake 350 degrees for 30 minutes.
  • 9. (Can cook apple mixture in MW. Cook on High for 10-12 minutes, stirring 3 times during cooking.).
  • 10. While cake is cooking make the Lemon Sauce.
  • 11. LEMON SAUCE Makes 1 cup.
  • 12. In saucepan mix sugar, cornstarch, nutmeg, and dash salt. Gradually stir in 1 cup water.
  • 13. Cook and stir over low heat until thickened. Stir half of the hot mixture into egg yolks; return to pan.
  • 14. Cook and stir 1 minute. Remove from heat; blend in the butter, lemon peel and lemon juice. (When grating lemon peel, make sure you don't include any of the bitter white part).
  • 15. Spoon over hot gingerbread cobbler.

1/2 cup hot water
heavy cream, whipped (optional)

Steps:

  • Preheat the oven to 325 degrees.
  • Melt the butter in a 10-inch heavy-bottomed skillet. Sprinkle the brown sugar uniformly over the bottom. Peel, core, and cut apples into one-half inch crosswise slices. Arrange them in the bottom of the skillet, overlapping the edges.
  • Combine the next 7 ingredients in a mixing bowl and mix well. Beat in the egg. Stir in the molasses. Add the milk alternately with the flour. Beat in the hot water.
  • Spoon the batter over the apples and bake for 45 to 50 minutes or until a toothpick inserted in the center comes out clean. Cool in the pan 10 minutes, then invert onto a serving plate, but do not remove the pan for 5 minutes. This permits sugar and butter topping to run down over cake. Serve with the whipped cream, if desired.

Steps:

  • Mix juice, soy sauce (you can replace it with worchestshire sauce) and ginger in a liquid measure cup.
  • Add to hot pan and reduce by half.
  • Wisk in cornstarch mixture. place cod in a nonstick pan and add the pan sauce, cover and cook for 8-10 minutes.
  • Turn over and cook a few more minutes or until fish is flakey with a fork.
  • You can use any white fish you prefer and serve as a sandwich on a bagel or as the main dish.

2 lbs granny smith apples, peeled, cored, and thinly sliced (about 8)

1/4 teaspoon ground allspice
1/2 teaspoon ground ginger
1 pinch ground cloves
1/4 cup maple syrup
1 tablespoon canola oil
2 tablespoons tapioca starch or 2 tablespoons arrowroot

Steps:

  • Preheat oven to 375°F.
  • MAKE THE CRUST: Sift together the flour, sugar, spices, salt, and baking powder.
  • Add the margarine one tablespoonful at a time and cut in with a pastry cutter, knife, or your fingertips.
  • Drizzle hte molasses and water over the dough, mixing with your fingertips until the crumbs of dough begin to cling together.
  • Set aside 1/2 cup of the dough. Gather together the rest of the dough and knead it into a ball. Press it evenly into the bottom and sides of a pie pan and bake for 10 minutes.
  • MAKE THE FILLING: While the crust bakes, combine in a mixing bowl all the filling ingredients except the tapioca starch.
  • Sprinkle the tapioca over the apple mixture and mix until the starch is dissolved.
  • ASSEMBLE THE PIE: Fill the pie crust with the apple mixture, and crumble the remaining 1/2 cup of dough over the filling.
  • Cover with foil and bake for 20 more minutes.
  • Remove the foil and bake 30 minutes more; the filling should be bubbling and the apples should be tender.
  • Serve warm or at room temperature.

2 Tablespoon water
1 Tablespoon lemon juice
1/2 teaspoon cinnamon
1 egg
1/2 cup buttermilk
1/4 cup molasses
2 Tablespoons vegetable oil
1 cup flour
1/2 cup white sugar
1/2 teaspoon ground ginger
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon baking powder
1/4 teaspoon nutmeg

Steps:

  • Preheat oven to 350*F
  • Spray an 8x8 casserole dish with cooking spray and set aside.
  • Peel, core and slice apples in ¼ inch thick slices.
  • Place in a prepared casserole dish.
  • In a mixing bowl combine brown sugar, cornstarch, water, lemon juice and cinnamon. Mix well and pour over apples.
  • Cover the dish with foil and bake for 20 minutes.
  • While the apples are pre-baking, make gingerbread topping.
  • In a bowl combine egg, buttermilk, molasses, oil, flour, sugar, ginger soda, salt baking powder and nutmeg.
