BUTTERY WHITE BREAD RECIPE (INSTANT YEAST)
This white bread recipe uses instant yeast to easily produce a delicious & buttery homemade bread. Instant yeast is a quicker way to make bread because it doesn't need to 10 minutes to "proof" (activate in a liquid). You just add the instant yeast to the dry ingredients when making the recipe and there is no need to pre-activate the yeast.

Steps:
- Your bread machine should be unplugged.
- Remove the bread pan from the bread machine (so when you add the ingredients, they can not accidentally spill into the machine).
- Pour the milk into the bread pan and then add the other ingredients. Place the instant yeast (bread machine yeast) in last and the yeast should not touch the liquid (until the bread machine is turned on and the ingredients start to be mixed together by the bread machine). Some bakers like to make a small indent on top of the flour to prevent the yeast from spilling into the liquids or mixing with the salt before the machine is turned on.
- Put the bread pan with ingredients back into unplugged bread machine.
- Plug in bread machine. Enter the "Dough" setting on your bread machine and then press the "Start" button.
- When the bread machine has finished making the bread dough, unplug the bread machine.
- Remove the bread pan from the bread machine.
- Now go to the instruction section below on "preparing the dough & baking the bread". FYI - Ignore the instructions for the electric stand mixer below if you are using a bread machine to make your dough. Skip down to the preparing the dough & baking the bread section below.
- Your electric mixer should be unplugged.
- Remove the mixing bowl from the electric mixer.
- Insert a dough hook into the electric mixer.
- Pour the milk into the mixing bowl and then add the other ingredients. Place the instant yeast in last and the yeast should not touch the liquid (until the electric mixer is turned on and the ingredients start to be mixed together). Some bakers like to make a small indent on top of the flour to prevent the yeast from spilling into the liquids or mixing with the salt before the machine is turned on.
- Place the mixing bowl back into the electric stand mixer.
- Plug in the electric mixer and use a low speed (i.e. setting 2) to mix the dough. Mix the dough for 7-10 minutes.
- Turn off the electric mixer and unplug machine.
- Remove the mixing bowl from the electric mixer. Pour the dough into a second large mixing bowl that has been lightly "greased" with olive oil, melted butter, cooking spray, etc.
- Loosely cover the bowl with plastic wrap and let the dough rise for 60-90 minutes until it doubles in size.
- After the dough has risen, go to the instruction section below on "preparing the dough & baking the bread".
- Preheat the oven to 350 F.
- Sprinkle a little bit of flour onto a large cutting board.
- Remove the dough from the bread pan or mixing bowl and place the dough on the cutting board.
- Press down on the dough with your hands and create a "flattish" rectangle with the dough. The dough should be roughly 1 inch high.
- Roll up the dough into a tight "jelly roll". FYI - Please see the short instructional videos in the tips section below on how to shape the dough if you haven't shaped bread dough before. It is easier to watch & learn from these short videos versus trying to explain the rolling technique step by step.
- Place the rolled up dough into the bread pan.
- Press down on top of the dough so the edges of the dough press out towards the sides of the bread pan. This should result in little or no gaps between the dough and the bread pan. This helps the bread to turn into a nice loaf shape without any misshapen edges. Make sure that the top of the pressed down dough is roughly level (so one side isn't much higher than the other).
- Lightly coat the top of dough with vegetable oil in order to prevent dough exterior from drying out.
- Loosely cover the top of the bread pan with plastic wrap. Set the covered bread pan aside for 45-60 minutes for the dough to rise into a loaf shape. When the dough has risen modestly (1/2 inch to 1 inch) over the top of the bread pan, it is time to place the bread pan in the oven. FYI - Do not wait for the dough to rise higher (or the bread top will be too large after baking). The dough will continue to rise naturally in the oven.
- Place the bread pan in the (preheated) oven to bake at 350 F for 37-42 minutes. Wear oven mitts when dealing with a hot oven. Place the bread pan in the middle of the oven.
- Rotate the bread pan in the oven after 15-20 minutes (in order to ensure an even browning of the bread).
- After the 37-42 minute baking period has finished, remove the bread pan from the oven. Wear oven mitts.
- Remove the bread from bread pan and place the bread on a wire cooling rack. Wear oven mitts.
- Optional (but recommended!) - Brush melted butter on top of the bread with a pastry brush. This "basting" helps to create a more golden, buttery & tasty crust.
- Allow the bread to cool down on the wire cooling rack for 1-2 hours before cutting the bread.

EXTRA SOFT WHITE BREAD RECIPE

- Add water, yeast, sugar, wheat gluten, salt, dry milk, oil, potato flakes, and 4 cups of flour to the bowl of a stand mixer with a dough hook attachment.
- Mix on low for 10-12 minutes (this is machine kneading).
- After the mixing time, add additional flour, 1/4 cup at a time. The dough is ready when it isn't too sticky and can be handled. Give the dough time to work the flour in before adding more.
- If it is gooey, add flour and mix after each addition, until the dough can be worked with your hands without sticking to them. I generally add 5.5 to the full 6 cups total flour for this recipe. It will depend some on your kitchen conditions and flour.
- Form the dough into a smooth bowl and add it back to your mixing bowl. Cover tightly with plastic wrap.
- Let dough rise for 1 hour.
- Remove it from the bowl.
- Divide the dough into two even pieces and form each piece into a loaf.
- Place the dough in 2 greased loaf pan and let rise in a warm place for 1 hour or until the dough is about 1 inch above the rim of the bread pan.
- Bake at 375℉ for 20-25 minutes until golden brown and sounds hollow when lightly tapped.
- Remove from the oven and grease the tops of the loaf with a little bit of butter.
- Remove the bread from the pans and allow to cool on a wire rack before slicing (you can slice warm but the texture is best once it has cooled and the bread has set).
- Once the bread has completely cooled, store leftovers in an air-tight container at room temperature for up to 3 days, in the fridge for up to 5 days, and in the freezer for up to 3 months.

- In a large bowl, dissolve sugar in warm water. Add yeast; let stand for 5 minutes.
- Add the canola oil, egg, salt and enough flour to form a soft dough. Knead for 5 minutes.
- Form dough into a smooth ball. Keeping the dough in the bowl, spray with non-stick spray and cover bowl with plastic wrap. Let rise in a warm place for 15 minutes.
- Punch down dough. Knead for 1 minute.
- Form loaf by rolling ball into an oblong shape then tucking and pinching the ends under the loaf.
- Place loaf in a bread pan. Brush thoroughly with egg mixture.
- Let loaf sit while oven is preheating to 400 degrees F, or about 10 minutes. It bakes at a higher temp than other bread recipes. Make sure your oven rack is on a lower setting so that the top doesn't burn!
- Bake for 30-40 minutes, until outside is golden brown and internal temperature of loaf registers 195-200 degrees.
- Let cool. Slice & enjoy with butter!

SOFT AND FLUFFY WHITE BREAD
This recipe is adapted from King Arthur Flour Baker's Companion. It produces a fine-textured loaf, very soft, fluffy and definitely delicious. And it's easy too. You may do it by hand/mixer/bread machine. Instructions are given for hand-method as i usually make manually. Update - I've included instructions for cinnamon rolls and ham & cheese buns.

- Combine all ingredients (reserve about 1/2 cup of flour) and mix thoroughly in a large mixing bowl.
- Add reserved flour a tablespoon at a time to mixture until a soft, smooth dough is formed.
- You may not need the whole amount or you may need more.
- Anyway, add JUST enough flour until dough comes away from bowl and it doesn't stick to your fingers (ie the dough becomes manageable) Remember, the more flour you add while kneading, the heavier and drier your loaf will be.
- Turn dough out on lightly greased surface and knead for a while, about 10mins.
- Cover and let rise for about 1 hour, until puffy (dough might not double in bulk).
- Transfer dough to a lightly greased surface and shape it into a 8" log.
- Transfer log to a lightly greased loaf pan (8 1/2" x 4 1/2"), cover the pan with plastic proof cover (i just cover with a greased cling wrap, loosely).
- Let dough rise for about 1 hour, until outer edge has risen about 1" over the rim of the pan.
- Preheat oven to 350F.
- Uncover pan and bake for 35-40mins, tenting lightly with foil for the final 10-15mins if the top is browning too quickly.
- Remove bread from oven, take it out of the pan, and cool on wire rack.
- After 15mins, brush with butter, if desired; to give loaf an exceptionally soft crust.
- NOTE 1: I've tried substituting 2 tbsp lecithin granules for half of the butter (2 tbsp lecithin+ 2 tbsp butter)- it makes an even more tender loaf, and extends the shelf life a bit.
- NOTE 2:You may also use 1/4 cup nonfat dry milk+ 1 1/8 cup of lukewarm water to replace the milk called for in recipe.
- NOTE 3: Potato flour (1/4 cup) may be replaced with 1/3 cup potato flakes.
- Cinnamon Sticky Buns - Combine 3 TB brown sugar and 1 tsp cinnamon. Lightly beat 1 egg. Roll out the dough after the 1st rise into a rectangle about 1/3" thick. Brush egg over the dough, and sprinkle the cinnamon-sugar. If you like, you can also sprinkle 1/4 cup of dried cranberries or raisins, and 1/4 chopped toasted almonds/walnuts/pecans. Roll up dough, from the long side, into a log. Pinch the edges to seal (brush edges with egg glaze if necessary). Cut the log into 12-14 equal pieces. Place into greased muffin cups/two 8" round pans. Let rolls rise for another 45mins - 1 hr, brush egg glaze again and bake for 25mins until lightly brown. Brush with softened butter after the rolls came out from the oven, if desired.
- Ham & Cheese Buns- You will need 2 slices of ham, chopped (I use honey-glazed ham) and 2 oz. / 1/2 cup cheddar cheese, grated. Lightly beat 1 egg. Roll out the dough after the 1st rise into a rectangle about 1/3" thick. Brush egg over the dough, and sprinkle the chopped ham and cheese (reserve 2 tablespoon). Roll up dough, from the long side, into a log. Pinch the edges to seal (brush edges with egg glaze if necessary). Cut the log into 12-14 equal pieces. Place into greased muffin cups/two 8" round pans. Let rolls rise for another 45mins - 1 hr. Just before baking, brush egg glaze and sprinkle reserved cheese and bake for 25mins until lightly brown. Brush with softened butter after the rolls came out from the oven, if desired.
EXTREMELY SOFT WHITE BREAD (BREAD MACHINE)

- Pour milk into a glass 2-cup measuring cup and heat in the microwave until it starts to boil and climb the sides, about 1 minute. Add butter, 1/4 cup sugar, and salt to the scalded milk; set aside to cool until it gets below 110 degrees F (45 degrees C).
- Dissolve yeast and 1 teaspoon sugar in warm water in a large bowl. Let stand until the yeast softens and begins to form a creamy foam, about 10 minutes.
- Pour milk mixture into the yeast mixture; add 2 cups bread flour and egg. Stir the mixture with a wooden spoon until smooth. Add remaining flour, 1/2 cup at a time, mixing thoroughly after each addition, until the dough is smooth and a little tacky.

- Line a baking sheet with parchment paper. Divide dough into thirds. Break each third into six evenly sized balls and arrange onto prepared baking sheet. Cover balls with a towel to rise further for another 30 minutes.
- Preheat oven to 350 degrees F (175 degrees C).

- In a bowl, combine 5 cups flour, sugar, dry milk powder, yeast and salt. In a saucepan, heat water and butter to 120°-130° (butter does not need to melt). Add to flour mixture.
