1 cup chickpeas
1 zucchini, grated
1 carrot, grated
2 eggs
½ cup whole wheat panko
2 teaspoons fresh basil, chopped
½ teaspoon garlic powder
½ teaspoon salt
½ teaspoon pepper
olive oil
plain greek yogurt
green onion, diced

Steps:

  • Mash chickpeas with a fork in a large bowl. Set aside.
  • Grate zucchini. Place in a clean dish towel or cloth.
  • Grate carrots. Place in a clean dish towel or cloth with zucchini.
  • Squeeze out as much moisture as possible.
  • Add veggies, panko, egg, basil, garlic powder, salt, and pepper to the bowl with the mashed chickpeas.
  • Stir until completely combined.
  • Heat olive oil in a large skillet on medium heat.
  • Scoop 2 tablespoons of mixture into your hand press to compress it into a patty.
  • Cook for about 1-2 minutes, until the underside is golden brown then flip and repeat.
  • Serve with a dollop of plain greek yogurt and diced green onion.
  • Enjoy!

2 ounces celery root, peeled
1/4 lb zucchini, washed
1/8 teaspoon finely minced or grated garlic
2 teaspoons Dijon mustard
2 tablespoons tarragon vinegar
1 teaspoon fresh lemon juice
1/4 cup olive oil
1/2 teaspoon salt
1/4 teaspoon fresh ground pepper
1 tablespoon chopped fresh basil

Steps:

  • Mix together thoroughly the garlic, mustard, vinegar and lemon juice. Gradually add the oil and pour over the vegetables.
  • Once dressed, the salad's texture starts to soften. It will be soggy in 6 hours, so serve before that.
  • NOTE: Leftover peeled celery root should be rubbed with lemon juice. It can be stored in the vegetable bin of the refrigerator for 2 days and used in Cream of Celery Soup.

It should glisten, but not be swimming in dressing.

1/2 bunch flat leaf parsley
2 lemons, juiced
2 -3 tablespoons olive oil
2 teaspoons sugar

1 dash Dijon mustard (optional)

Steps:

  • Peel and grate 7 large carrots. Coarsely chop the parsley and combine with carrots.
  • To make the dressing: mix together the juice of 2 lemons, 2 or 3 tablespoons of olive oil, and 2 teaspoons of sugar, some salt, and fresh ground pepper. You may add a dab of Dijon.
  • Toss with Carrots then taste; you may add ingredients to your liking.

3 lbs red new potatoes, washed
6 1/2 teaspoons salt, in all
3/4 teaspoon fresh ground black pepper
1 1/2 tablespoons sherry wine vinegar
2 tablespoons tarragon vinegar
1/4 cup dry white wine or 1/4 cup dry vermouth
1/3 cup fruity olive oil
2 tablespoons soy or walnut oil
1 tablespoon minced shallot
1/3 cup coarsely chopped scallion, white and green parts
1/3 cup loosely packed chopped herbs, dill, parsley, tarragon

Steps:

  • In a large saucepan, cover the potatoes with about 4 quarts water, 4 t salt and bring water to a boil.
  • Lower the flame so that the potatoes cook at a medium simmer until they are easily pierced with a fork, approximately 20 minutes.
  • Drain and rinse briefly under cool water for 1 minute.
  • While the potatoes are still warm, cut them into thirds and add the remaining ingredients except for the scallions and herbs.
  • IT IS IMPORTANT TO ADD THE DRESSING WHILE THE POTATOES ARE STILL WARM SO THAT THE FLAVORS ARE ABSORBED.
  • Add the scallions and herbs after the salad has cooled or they will discolor.
  • Serve at room temperature or chilled.

1/2 lb carrot
2 ounces parsnips, peeled
2 ounces celery root, peeled
2 ounces red cabbage
1/3 cup walnuts, broken into pieces
2 tablespoons currants
2 tablespoons sherry wine vinegar
1 teaspoon fresh lemon juice
1/4 cup soy oil
1 tablespoon walnut oil
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper

Steps:

  • Grate each vegetable on a Microplane brand grater [these are the brand the White House chef uses and she recently said they are her favorite cooking tool - they are So Sharp; well worth the price!] or slice very thinly. Mix together with the walnuts and currants [or raisins].
  • Mix together the dressing ingredients: sherry vinegar, lemon juice, soy oil, walnut oil, salt and pepper.
  • Drizzle dressing over the shredded vegetables OR spray dressing over them from a misting spray bottle.
  • Serves 4-6.

1/4 cup grated or finely chopped red onion (optional)
3 tablespoons capers, rinsed and coarsely chopped
Use 2 tablespoons lemon juice and omit the vinegar
Add 1 teaspoon curry powder and 1/2 teaspoon ground lightly toasted cumin seeds
Substitute 2 to 3 tablespoons buttermilk for 2 to 3 tablespoons of the oil

Steps:

  • Place the onions in a bowl and cover with cold water. Soak for 15 minutes, drain, rinse with cold water, and drain on paper towels. Add to the carrots along with the capers and parsley. Make the dressing as directed, adding to it the curry powder and ground cumin. Toss with the salad.
