Steps:

  • Heat broiler. In a small bowl, whisk together orange juice, hoisin sauce, and honey.
  • Rinse salmon steaks, and pat dry. Season both sides with salt and pepper. Place steaks on a rimmed baking sheet. Brush generously with glaze.
  • Broil salmon about 4 inches from the heat source, basting once, until opaque in center, 10 to 13 minutes.

1/4 cup orange juice concentrate
1/4 cup balsamic vinegar
1 tablespoon extra-virgin olive oil
2 cloves garlic, finely chopped

4 salmon steaks (about 6 ounces each)
Vegetable cooking spray

Steps:

  • Place first 7 ingredients in a large sealable plastic bag. Shake well. Add salmon and refrigerate 30 minutes to 1 hour. Remove steaks from marinade and pat dry with a paper towel. Coat grill with cooking spray and heat on high. Grill steaks, turning once halfway through, until no longer translucent in the center, about 4 minutes per side.

¼ cup hoisin sauce
1 tablespoon chili garlic sauce
2 tablespoons fresh lemon juice
1 tablespoon grated fresh ginger root
1 clove garlic, pressed
2 tablespoons olive oil
6 (6 ounce) skinless, boneless salmon fillets

Steps:

  • Whisk together the soy sauce, hoisin sauce, chili sauce, lemon juice, ginger, garlic, and olive oil in a 9x13 inch baking dish. Place the salmon fillets into the marinade, and turn to evenly coat. Cover the dish with plastic wrap, and marinate in the refrigerator for 30 minutes.
  • Preheat an oven to 350 degrees F (175 degrees C). Remove and discard the plastic wrap from the salmon, use a spoon to scoop up the marinade that has collected in the bottom of the baking dish, and drizzle it over the salmon fillets.

Spice Crust:
1 tsp ground coriander
2 tsp sesame seeds
1/2 tsp ground ginger
1/4 tsp lightly ground Szechuan peppercorns (or black peppercorns)
1/2 tsp salt
2 tsp Asian sesame oil
Glaze/Marinade:
1/2 cup hoisin sauce
1/4 cup orange juice
1 tsp grated orange rind
1/2 tsp red Curry Paste (or other hot chili paste)
1 large garlice clove minced
1 tbsp minced ginger root
1 tbsp minced scallions - white part

Steps:

  • Combine dry spices for the rub, lghtly coat both side of each salmon steak with the sesame oil, and then dust with the spice rub and press with fingers to evenly distribute. Chill while preparing marinade. Combine marinade/glaze ingredients in small saucepan and bring to a boil, reducing slightly to thicken. Remove from heat and bring to room temperature. When cooled, brush both sides of fish and reserve the rest for brushing during cooking and serving as a sauce. Broil the fish for 8-10 minutes total, depending on thickness, turning once, and brushing it with the marinade at a couple of intervals. Heat the remaining marinade to use as a sauce for serving. A garnish of slivered scallions makes a nice finishing touch.

4 (6 ounce) salmon fillets, 24 ounces, boneless, towel dried
2 tablespoons coriander seeds, crushed
2 tablespoons cardamom, seed crushed
1/2 teaspoon cayenne pepper
1/2 teaspoon dried dill weed
2 tablespoons flour
1 egg white
1 teaspoon olive oil
1 teaspoon salt, to taste
6 ounces balsamic vinegar
1 tablespoon honey (or brown sugar)
1 -2 tablespoon unsalted butter
1 tablespoon chopped fresh dill
4 tablespoons toasted sliced almonds

Steps:

  • Spread the spice mix on a plate and stir to mix.
  • Toss egg mixture together.
  • Dip the salmon fillets in the egg mixture and then in the spices.
  • Heat enough olive oil to coat bottom of a large pan until the olive oil begins to ripple. Cook the salmon 3-4 minutes on each side over medium heat (about 8 minutes per inch of thickness).
  • Remove salmon to a serving dish and kept warm. Discard the oil, add the balsamic to the pan.
  • Swirl around over high heat to pick up the salmon flavors. Reduce the liquid by half. On low heat, add the honey, butter and swirl. The consistency of the sauce should thicken slightly. Don't boil it. When the honey and butter is completely mixed, add in the chopped dill and pour over the salmon. Or pour on plate and place salmon on glaze. Garnish with nuts. Serve immediately.
