4 cups white wine vinegar
2 tablespoons sugar
1/2 teaspoon red pepper flakes
1 teaspoon white peppercorns
1 teaspoon coriander seeds
1 teaspoon mustard seeds
1/2 teaspoon fennel seeds
1/2 teaspoon cumin seeds
2 tablespoons kosher salt
3 tablespoons fresh dill, coarsely chopped
3 tablespoons fresh cilantro leaves, coarsely chopped
6 kirby cucumbers, washed and sliced crosswise into 1/2-inch thick slices

Steps:

  • Combine the first 9 ingredients in a medium saucepan and bring to a boil. Let boil for 2 minutes, remove from the heat and let sit until cooled to room temperature. Add the dill and cilantro. Place the cucumbers, into a large Mason jar, pour the cooled vinegar mixture over them, cover and refrigerate for at least 24 hours or up to 4 days.

2 lb firm-ripe red or black plums
2 cups water
2 1/2 cups sugar
1 3/4 cups red-wine vinegar
3 dried chiles de árbol*
3 whole star anise
3 (1-inch) dried long peppers**, or 1 (3-inch) piece peeled fresh ginger cut crosswise into 1/2-inch-thick slices

Steps:

  • Slit skin of each plum lengthwise from top to bottom with a sharp paring knife evenly around plum in 4 to 6 places, then put in a heatproof jar.
  • Bring water to a boil with remaining ingredients in a 3-quart nonreactive saucepan, stirring until sugar is dissolved, then simmer, uncovered, stirring occasionally, 15 minutes.
  • Immediately pour pickling liquid over plums. Cool, uncovered, then chill, covered, at least 1 day.

1/2 cup sugar
1/2 cup white vinegar
1/2 cup cider vinegar
1 banana pepper, sliced
2 jalapeno peppers, sliced
1 red chili pepper, sliced
4 cinnamon sticks (3 inches)
2 inches fresh gingerroot, peeled and thinly sliced
1 tablespoon coriander seeds
1 teaspoon whole allspice
4 drops hot pepper sauce
1-1/2 pounds green grapes, halved
1-1/2 pounds seedless red grapes, halved

Steps:

  • In a large saucepan, bring the first 11 ingredients to a boil. Reduce heat; simmer until sugar is dissolved, 3-5 minutes. Remove from heat and cool slightly. Place grapes in a large bowl; add pickling liquid. Refrigerate, covered, at least 12 hours before serving.

Several years ago I was looking for a recipe to take advantage of our bumper crop of plums, and came across a recipe similar to this. After tweaking a bit, I have come up with a very versatile version that my family and friends love. Season with ground white pepper and use it as a side dish for pork or chicken. Sprinkle with toasted almonds and spoon it over vanilla bean ice cream, angel food, or pound cake for dessert! Play around with the spice combination by adding cloves, allspice, or cayenne. Be adventurous!

4 plums, halved and pitted
½ cup orange juice
2 tablespoons packed brown sugar
½ teaspoon ground cinnamon
⅛ teaspoon ground nutmeg
⅛ teaspoon cumin
⅛ teaspoon ground cardamom
¼ cup toasted slivered almonds

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a shallow baking dish with cooking spray.
  • Place the plums, cut-side up, in a single layer in the baking dish.
  • Whisk together the orange juice, brown sugar, cinnamon, nutmeg, cumin, and cardamom in a bowl; drizzle over the plums.
  • Bake in preheated oven for 20 minutes, or until plums are hot and the sauce is bubbly. Top with toasted almonds, if desired (see Cook's Note).

  • Pack the plums, cloves, star anise, cinnamon, peppercorns and fennel seeds into the jars, leaving 1/2 inch at the top. Ladle the hot brine over the plums, stopping 1/2 inch from the top. Using the tongs, screw the lids and rings on the jars securely but not too tightly.
