CRANBERRY ORANGE RELISH
- Food Grinder Method: Put fresh cranberries and orange quarters through food grinder. Add sugar. Mix well and chill for several hours before serving
- Blender Method: Cut each orange quarter in half. Place 1/2 cup cranberries and 1/8th orange in blender container. Process on high until evenly chopped. Transfer the mixtue to a bowl. Repeat with remaining cranberries and orange sections. Add sugar and mix well.
- Makes 3-1/2 cups. Store in airtight container in refrigerator or freezer.

- 1. Wash the cranberries. Slice the orange into thin slices, leaving the peeling on. Combine the orange & cranberries.
- 2. Prepare according to the directions on the cranberry bag for WHOLE CRANBERRY RELISH
- 3. After the cranberries & orange have cooked according to the directions, add the orange marmalade. Cook an additional minute or until mixed.
UNCOOKED CRANBERRY AND ORANGE RELISH
- Make sure there are no seeds in oranges. Cut the oranges into quarters and then chop them up roughly. Either in a meat grinder or in a food processor chop the raw cranberries and oranges. Transfer to glass or ceramic serving bowl and add the sugar. Cover with plastic and let stand for 24 hours. Refrigerate after that; this will keep for 2 weeks. Leftovers can be combined with mayonnaise and used as a dressing for leftover turkey sandwiches.

- slice unpeeled orange into 8ths and remove seeds, place 1/2 orange slices and 1/2 cranberries in food processor with 1/2 of the stevia powder and process until mixture is evenly chopped, almost pureed. transfer to bowl and repeat with remaining orange, cranberries and stevia. add sugar to taste if desired, but give the relish a chance to sit first and meld the flavors. you may not want to add sugar at all. for best flavor make a day ahead and refrigerate.

This is how my husband's cousin prepared the cranberries for a family reunion type Thanksgiving a couple of years ago. It is really different from cooked cranberry sauce, which we also love- a light and refreshing alternative.
