1 1/2 ounces blanco tequila
1 1/2 ounces tamarind nectar
1/2 ounce simple syrup
4 ounces ginger ale (or to fill)

Steps:

  • Gather the ingredients.
  • Pour the tequila, nectar, and syrup into a highball glass filled with ice .
  • Stir well . Top with ginger ale.
  • Serve and enjoy.

MEXICAN TAMARIND CANDY

This is the most favorite Mexican candy of all 10 of my children...sweet, spicy, and so yummy. Full of tamarind fruit. Makes a great activity for children to help with on a long rainy or hot summer day...and homemade has no traces of lead...like some store-bought tamarind candies.

1 pound tamarind pods, peeled
1 cup water
1 orange, peeled and segmented
4 cups white sugar
4 tablespoons chile-lime seasoning (such as Tajin®), or more to taste
1 tablespoon butter

Steps:

  • Bring tamarind pulp, water, and orange to a boil in a pot; continue to boil for 30 minutes. Remove from heat and let cool for 30 minutes.
  • Pour tamarind mixture into a colander placed over a large bowl. Mash and scrape against the side of the colander until all the juice and pulp drips into the bowl. Dump remaining seeds into a strainer and repeat the process; remove the outer casing around the seeds by hand and toss out the seeds.
  • Blend outer casings with juicy pulp in an electric blender.
  • Return mixture to the large pot and add sugar, Tajin®, and butter. Bring to a soft boil, stirring constantly. Heat to 240 degrees F (115 degrees C) or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from water and placed on a flat surface.
  • Remove from heat and let cool, about 2 hours.
  • Fill a pastry or plastic sandwich bag with the candy mixture and squeeze onto plastic spoons. Place plastic spoons onto a cookie sheet and chill until firm, about 1 hour. Coat with more Tajin® if desired, wrap with plastic, and close with a twist tie.

This is another favorite agua fresca drink of mine. The tamarind has a sweet and sour kind of taste to it. You can find tamarind concentrate in most Mexican or Asian markets. Serve immediately or chill until ready to serve.

⅓ cup tamarind concentrate
⅓ cup white sugar
1 orange, thinly sliced
1 lime, thinly sliced

Steps:

  • Fill glasses with ice. Combine water, tamarind concentrate, and sugar in a pitcher; stir until sugar is dissolved. Pour over ice and garnish with orange and lime slices.

Palm sugar syrup:
1/3 cup palm sugar or light brown sugar
Cocktail:
6 ounces bourbon
4 ounces fresh lime juice
2 ounces tamarind concentrate
Orange wedges and maraschino cherries (for serving)
Ingredient info: Tamarind concentrate is available at Asian markets or online.

Steps:

  • For palm sugar syrup:
  • Bring palm sugar and 1/3 cup water to a boil in a small saucepan; cook, stirring occasionally, until sugar is dissolved. Let cool.
  • For cocktail:
  • For each cocktail, combine 1 1/2 ounces bourbon, 1 ounce lime juice, 1 ounce palm sugar syrup, and 1/2 ounce tamarind concentrate in a cocktail shaker; fill shaker with ice and shake until outside is frosty, about 30 seconds. Strain into a rocks glass filled with ice and serve with an orange wedge and a cherry.

Number Of Ingredients 6

2 1/2 cups boiling water
1/4 cup firmly packed light brown sugar
2 tablespoons minced crystallized ginger
1 tablespoon tamarind paste (the soft pliable variety, available at Thai, East Indian, and other Asian markets), or to taste
1 tablespoon fresh lemon juice, or to taste
Thin lemon slices for garnish

Steps:

  • In a bowl whisk together the boiling water, the brown sugar, the ginger, and the tamarind paste until the mixture is combined well, let the mixture cool, and strain it through a fine sieve set over a pitcher. Stir in the lemon juice and chill the mixture for at least 1 hour, or until it is very cold. Divide the cooler among tall glasses filled with ice cubes and garnish each drink with a lemon slice.
