CAMPARI & ORANGE GRANITA

1 cup sugar
1 cup water
3 cups freshly squeezed orange juice (6 to 8 oranges)
1 cup Campari liqueur
1/4 cup freshly squeezed lemon juice (1 large lemon)

Steps:

  • First make the sugar syrup: Combine the sugar and water in small saucepan and boil over high heat until the sugar is dissolved.
  • Pour the sugar syrup into a 10 x 13 x 2-inch ceramic dish and stir in the orange juice, Campari, and lemon juice. Carefully place the dish on a level surface in the freezer. Freeze for one hour, rake the granita with a large dinner fork, and return it to the freezer. Rake the granite every 30 minutes, until it's firm and granular. This should take a several hours. Serve frozen in pretty bowls or stemmed martini glasses.

4 1/2 cups tangerine juice
1/4 cup sugar, to taste
2 tablespoons Mandarin Napoleon or Grand Marnier liqueur
Vanilla bean ice cream, as desired
Homemade cookies, as desired

Steps:

  • Combine all ingredients in a stainless steel mixing bowl. Adjust sugar and liquor, to taste. Pour liquid into large shallow stainless steel pan and place in freezer. When the top of the liquid forms an icy layer, scrape through entire pan with a fork. Return to freezer and let another frozen layer form; scrape again with fork. Repeat freezing and scraping steps until all liquid is frozen. Fluff with a fork to create soft, snowy granita. Serve in a glass over vanilla bean ice cream with homemade cookies.

2 cups (470g) fresh tangerine juice
1/4 cup (50g) sugar
1/3 cup (75g) Campari

Steps:

  • Put 1/2 cup of the tangerine juice in a small saucepan with the sugar and heat, stirring, until the sugar is dissolved. Combine with the remaining 1 1/2 cups juice and the Campari.
  • Pour into a baking dish and freeze for at least 8 hours.
  • To serve, scrape across the top of the granité with a fork to make small crystals.

1 1/3 cups sugar
1 cup water
3 cups fresh pink grapefruit juice (from about 4 pink grapefruits) with some pulp
1/4 cup Campari
Garnish: 3-inch-long pieces fresh grapefruit zest, removed with a vegetable peeler

Steps:

  • In a saucepan bring sugar and water to a boil, stirring until sugar is dissolved. Let syrup cool. Stir in grapefruit juice and Campari and freeze in a shallow metal pan, stirring and crushing lumps with a fork every 30 minutes, 3 to 4 hours, or until mixture is firm but not frozen. Scrape granita with a fork to lighten texture. Serve granita in chilled goblets and garnish with zest.

1 cup chilled Simple Syrup for Granita
1 cup fresh tangerine juice (from about 4 medium tangerines)
1 teaspoon freshly grated tangerine zest
2 tablespoons mandarin orange liqueur

Steps:

  • 1 Prepare the simple syrup, if necessary, and chill it. Then, place a 13 × 9 × 2-inch metal pan in the freezer. 2 In a large bowl, stir together the juice, zest, syrup, and liqueur until well blended. Remove the chilled pan from the freezer and pour the liquid into the pan. 3 Place the pan in the freezer for 30 minutes or until a 1-inch border of ice crystals forms around the edges. Stir the ice crystals into the center of the mixture. Return the pan to the freezer and continue freezing, stirring every 30 minutes, until all of the liquid is frozen, about 2 to 2 1/2 hours. Serve immediately, or scrape the mixture into a plastic container, cover, and store in the freezer up to 24 hours. 4 Remove from the freezer to soften about 15 minutes before serving, if necessary. 3 nectarines, halved, pitted, cut into 1/3-inch-thick wedges

Steps:

  • Stir orange juice, Campari and 1/2 cup sugar in medium bowl until sugar dissolves. Transfer to 13 x 9 x 2-inch glass baking dish. Freeze until frozen, at least 6 hours or overnight.
  • Place 6 dessert glasses or Martini glasses in freezer. Mix nectarines and remaining 2 tablespoons sugar in large bowl. Let stand at room temperature at least 30 minutes, or refrigerate up to 2 hours.
  • Using fork, scrape surface of granita to form crystals. Divide granita among frozen glasses. Top with nectarine mixture. Garnish with mint and serve immediately.
