2 tablespoons Thai fish sauce or 2 tablespoons vietnamese fish sauce
2 teaspoons thai chili sauce or 2 teaspoons other asian chili sauce

Steps:

  • Combine all of the ingredients in a small bowl.
  • Serve at room temperature or chilled.
  • The salsa will keep for up to 2 days in the refrigerator.

4 large ripe tomatoes, mixed colors, 1 " large dice
1 small red onion, 1/4" dice

  • In a large bowl, whisk together the dijon and juice. Drizzle in oil. Add the tomatoes and onion and season. Check for seasoning. Can be stored in an air tight container for up to 4 hours before serving. Right before serving, toss with the basil leaves.

  • Roasted salsa variation: Place the garlic, onion, jalapeno and tomatoes on a sheet pan and roast for 30 minutes at 400 degrees, then proceed as directed.

4 large Roma tomatoes, halved lengthwise
2 medium jalapeno peppers, halved lengthwise
½ medium white onion, coarsely chopped
1 tablespoon olive oil, or to taste
salt and ground black pepper to taste
1 medium lime, juiced
1 tablespoon chopped fresh cilantro

Steps:

  • Set an oven rack about 10 inches from the heat source and preheat the oven's broiler for 5 minutes. Line a baking sheet with foil.
  • Spread tomatoes and jalapenos, skin-side up, on the prepared baking sheet. Add onion. Drizzle with a little olive oil and season lightly with salt and pepper.
  • Cook under the broiler for 20 minutes. Remove from the oven and let cool.
  • Remove stems from tomatoes and jalapenos. Transfer to a blender with onions and all roasting juices. Add lime juice and more salt, to taste. Pulse to blend.
  • Transfer to a serving bowl and mix in cilantro.

1 (28 ounce) can crushed tomatoes
3/4 medium yellow onion
1 cup cilantro
1 tablespoon sugar
1/2 tablespoon kosher salt
3 garlic cloves (or 3 tbsp prepared minced garlic)
1/2 cup jalapeno (pickled)
1 teaspoon black pepper
1 lime (juice of)

Steps:

  • Put everything into the blender or food processor, chunkier items first. Don't worry about chopping everything too much as the blender takes care of that.
  • For smoother salsa use crushed tomatoes and let the blender run as long as needed.
  • For chunkier salsa use whole tomatoes and give all the ingredients a nice rough chop so you do not have to leave the blender running very long. Carefully pulse for a couple of seconds.
  • Flavor improves over time but this should be used within a few days.
  • Refrigerate unused portions.
