ONION BREAD
This recipe originally came from the booklet that accompanied my bread machine. I've modified it a bit and it's my family's favorite bread. We use it for sandwiches, toasted with parmesean cheese for dinner and even just toasted with butter for breakfast!

Steps:
- Measure and add liquid ingredients to the bread pan.
- Measure and add dry ingredients (except yeast) to the bread pan.
- Use your finger to form a well (hole) in the flour where you will pour the yeast. Yeast must NEVER come into contact with a liquid when you are adding ingredients. Measure the yeast and carefully pour into the well.
- Close up bread machine.
- Choose the "basic" setting that most machines have - it's the three hour setting on mine.
- I always use the "light" crust color because the bread comes out quite a bit softer.

THREE CHEESE AND ONION BREAD (FOR BREAD MACHINE)
A good protein filled bread (perfect for toddlers who only eat a few bites of food at any given meal!) I prefer to dice the cheese, rather than grate it, because then the machine doesn't mash it all up and you get the occasional bite of cheese in the bread... but it works just as well grated! addendum: i've made this recipe a few times since posting, and have found that i've needed to add another 1/4 c. milk, and decreased the salt to about 1/4 tsp. i found that after a few tries as the original recipe that it was a little too dry and didn't rise as much as i'd like. the dryness could be because i live in a super dry climate, so it might not be so for everyone. and i'm sure the yeast issue was because i like a super cheesy bread, and there's a lot of salt in cheese... hope this helps!

Steps:
- In a large mixing bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
- Stir salt, shortening, minced onions, oregano and 2 cups bread flour into yeast mixture. Stir in the remaining flour, 1/2 cup at a time, beating well after each addition. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
- Stir dough to deflate and place it into a lightly greased 9x5 inch loaf pan. Cover with a damp cloth and let rise until the top of the dough is within 1/2 inch of the top of the pan, about 40 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
- After loaf has risen, arrange onion slices on top of the loaf. Pour melted butter over the slices and bake in preheated oven for 35 to 40 minutes, or until golden brown. Remove from pan to cool on a wire rack.

ONION AND GARLIC BREAD

- Melt butter in a small pan over moderate heat. Add onions and garlic and season with sugar, thyme and pepper. Cook 15 minutes, stirring occasionally, until onions are golden in color and translucent.
- Place the split bread on a baking sheet and broil until golden. Spread half the onions and garlic on each half of bread in a thin layer. Sprinkle each side of loaf with a handful of cheese and return to broiler for 30 seconds to bubble cheese. Serve with a hearty, soup-er supper

- Grease a 9x5-in. loaf pan and sprinkle lightly with cornmeal; set aside., In a large bowl, combine 1 cup all-purpose flour, rye flour, onion, sugar, caraway, salt and yeast. In a small saucepan, heat the milk and butter to 120°-130°. Add to dry ingredients; beat just until moistened. Stir in enough remaining all-purpose flour to form a firm dough., Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. - In a bowl, dissolve yeast in warm water. Add 1/2 cup flour, 2 tablespoons sugar and salt; beat until smooth, about 1 minute. SAVORY ONION BREAD
Sharp cheddar cheese combined with tender onions and it 's a quick bread that goes great with green salads.

- Preheat oven to 400 degrees F (205 degrees C). Grease one 8 inch round or one 8x8 inch square pan.
- Combine flour, baking powder and salt, cut in 2 tablespoons of the butter until mixture is crumbly. Stir in 1/2 cup of the grated cheese. Make a well in the center of the mixture.
- Fry the onion in 1 tablespoon of the butter or margarine until clear and golden. Set aside.
- In a small bowl beat the egg and stir in the milk and the cooked onion. Pour egg mixture into the well in the flour mixture. Stir until just moistened. You will have a soft dough. Pat dough into the prepared pan. Sprinkle remaining 1/2 cup grated cheese over top.
- Bake at 400 degrees F (205 degrees C) for 25 minutes. Serve hot. Makes about 6 servings.

- Preheat a fan oven to 200 degrees celsius. Line a baking tray with tin foil and lightly sprinkle with flour.
- Mix the flour, sugar, baking powder, salt, cheese, and onion in a large bowl.
- In a separate bowl, mix the egg, milk and sunflower oil.
- In small quantities, gradually add the wet mixture to the dry until a sticky dough is formed. Careful - you may not need to use all of the wet mixture!
- On a floured surface, roughly shape the dough into a flattened ball and place on the prepared baking tray. Place in the preheated oven and bake for 35-40 minutes, or until cooked. The crust should be golden brown and starting to darken. A knife should come out clean when placed into the bread.
- Enjoy warm, straight out of the oven or when cooled.
THREE-ONION STUFFING

- Preheat oven to 350°F.
- In a shallow baking pan spread bread in one layer and bake in middle of oven, stirring occasionally, until golden, 10 to 15 minutes. Transfer bread to a large bowl.
- In a bowl of water wash leeks and drain by lifting leeks from water into a colander.
- In a large heavy skillet cook leeks, red onions, shallots, celery, garlic, and herbs with salt and pepper to taste in butter and oil over moderate heat, stirring, until onion mixture is softened, about 10 minutes. Add onion mixture to bread with salt and pepper to taste and toss to combine well. Cool stuffing and transfer to a buttered 4-quart baking dish. Stuffing may be made 1 day ahead and chilled, covered.
- During last 1 1/2 hours of grilling turkey, drizzle stuffing with stock or broth and bake, covered, in middle of oven 1 hour. Bake stuffing, uncovered, 20 to 30 minutes more, or until golden brown.
THREE ONION BREAD

- 1. Stir together flours, dry milk and salt. Set aside.2. In large electric mixer bowl, combine yeast, sugar and water. Stir in KELLOGG'S ALL-BRAN cereal. Let stand about 2 minutes or until cereal softens. Add egg whites, margarine and 1/2 of flour mixture. Beat at medium speed, for 2 minutes or about 200 strokes by hand. Mix in green onions, red onions and dill weed. Stir in remaining flour mixture by hand to form stiff, sticky dough. Cover lightly. Let rise in warm place until double in volume (about 1 hour).3. Stir down dough to original volume. Spoon into 2-quart round casserole dish coated with cooking spray or 9 x 5 x 3-inch loaf pan coated with cooking spray. Brush surface with milk and sprinkle evenly with white onions.4. Bake at 350°F about 55 minutes or until loaf is golden brown and sounds hollow when lightly tapped. Remove from dish and place on wire rack to cool completely.
