THREE-HERB BUTTER



Three-Herb Butter image

Tucking this butter under the skin of your holiday turkey makes the meat incredibly flavorful and succulent.

Provided by Ris Lacoste

Yield Yields about 1-1/4 cups.

Number Of Ingredients 6

1/2 lb. (1 cup) unsalted butter, at room temperature
1/2 cup finely chopped shallots (about 3 oz.)
1/2 cup dry white wine
1/4 cup chopped fresh flat-leaf parsley (from about 1 oz. parsley sprigs)
1/4 cup chopped fresh thyme leaves (from about 3/4 oz. thyme sprigs)
1/4 cup chopped fresh sage leaves (from about 1/2 oz. sage sprigs)

Steps:

  • In a 10-inch skillet, melt 1 Tbs. of the butter over medium heat until it begins to foam. Add the shallots and cook until soft and fragrant, stirring occasionally, about 3 minutes. Add the wine and boil until it's completely evaporated 5 to 8 minutes. Stir in the parsley, thyme, and sage and cook until fragrant, 2 minutes more. Transfer to a medium bowl and refrigerate. When well chilled, put the remaining butter in the bowl of a mixer fitted with the paddle attachment. Add the herb mixture and beat on medium speed until blended, about 1 minute.
  • On a large piece of plastic wrap, shape the herb butter into a log. Wrap in plastic and refrigerate.

Number Of Ingredients 11

1 stick (1/2 cup) unsalted butter
1/4 cup heavy cream
3 large eggs at room temperature
1 1/4 cups granulated sugar
1/2 teaspoon salt
2 teaspoons finely grated fresh lemon zest
2 teaspoons baking powder
1 teaspoon vanilla
2 1/2 cups cake flour (not self-rising)
6 cups mixed berries (1 3/4 ponds) such as raspberries, blackberries, and blueberries
2 tablespoons confectioners sugar

Steps:

  • Preheat oven to 350°F. Grease a 13- by 9- by 2-inch metal baking pan, then line bottom with wax paper and grease paper.
  • Heat butter with cream in a small saucepan over low heat until melted, then cool.
  • Beat eggs, granulated sugar, and salt with an electric mixer on high speed until mixture is thick, pale, and forms a ribbon when beaters are lifted, about 5 minutes with a standing mixer or about 12 minutes with a handheld. Add zest, baking powder, and vanilla and mix on low speed until blended.
  • Add 1 1/4 cups flour and half of butter mixture and mix on low speed until blended. Mix in remaining butter and 1 1/4 cups flour in same manner. Increase speed to medium and beat 1 minute with a standing mixer or 2 minutes with a handheld, or until batter is thick and sticky. Add berries and carefully fold in with a rubber spatula until barely combined. (Raspberries will begin to fall apart, and batter will look slightly pink.) Spoon batter into baking pan, gently smoothing top. Bake in middle of oven until springy to the touch and a tester inserted into center comes out clean, 45 to 50 minutes. Cool completely in pan on a rack.
  • Run a knife around edge of cake, then invert rack over cake and flip cake onto it. Remove wax paper and reinvert onto a platter.
  • Just before serving, dust with confectioners sugar.

4 -5 stems of parsley

2 large cloves of garlic

Steps:

  • Soften the butter by stirring and set aside. Wash dill, parsley, and chives and dry with a paper towel. Add garlic to the herbs and chop in a food chopper. Now add salt and mix it with the butter. Divide the herb butter into two and place each portion on a sheet of baking paper. Roll the baking paper with the butter and let it harden in refrigerator. When ready, remove paper and cut into slices. DONE!

Garlic Chive Butter
6 cloves garlic
1 pound lightly salted butter, room temperature
Juice of 1 lemon
Handful of fresh chives, finely chopped
Pinch sea salt
Lime Butter
1/2 pound lightly salted butter, room temperature
2 limes, the finely grated zest of 1 lime, and the juice of 2
Freshly ground black pepper
Smoked Paprika Butter
2 to 3 teaspoons smoked paprika
Dash of hot sauce (recommended: Tabasco)

Steps:

  • To make the garlic chive butter: Mince the garlic and add to the soft butter in a bowl. Mince the fresh chives, and add. Squeeze the lemon juice over top. Add a pinch of salt. Stir to incorporate. Place half of the compound butter on a piece of wax paper, shape into a log and roll up, twisting the ends to secure shut. Place the other half on another wax paper sheet, roll up, and refrigerate. To make the lime butter: Combine the butter, lime zest and lime juice in a small bowl, Stir to combine. Place the butter on a piece of wax paper, shape into a log and roll up, twisting the ends to secure shut, and refrigerate. If you've ever purchased herbs for a recipe and you have some left over, put them to good use by making an herb butter. This recipe uses parsley, sage, rosemary, and thyme, because I have them growing in my garden. If your family prefers a different combination, go ahead and substitute what they like. The ratio is 1/2 cup of butter to 1/4 cup minced herbs, so use any herbs you like. Simply place a portion on top of a cooked steak, just like a fancy steakhouse would do.

½ cup unsalted butter, softened, divided
2 cloves garlic, minced
2 tablespoons minced fresh parsley
1 tablespoon minced fresh sage
2 teaspoons minced fresh rosemary
1 teaspoon fresh thyme leaves
¼ teaspoon sea salt, or to taste
aluminum foil or parchment paper

Steps:

  • Place 7 tablespoons softened, unsalted butter in a small mixing bowl.
  • Melt remaining 1 tablespoon unsalted butter in a skillet over medium heat. Add minced garlic and cook, stirring constantly, until fragrant, 1 to 2 minutes. Stir cooked garlic into reserved softened butter.
  • Press minced fresh herbs into the garlic-butter mixture using a rubber spatula, stirring and pressing until evenly distributed. Season with sea salt to taste. Cover and refrigerate until slightly firmed up, about 20 minutes.
  • Turn mixture out onto a 9x12-inch strip of aluminum foil or parchment paper.
  • Form mixture into a log, about 6 inches long and 1 inch thick. Roll herb butter up in the foil or parchment, twisting the ends and closing with a twist tie or rubber band.
  • Return to the refrigerator until firmed up, about 40 minutes.
  • Slice into 8 equal portions and serve on top of steak or other dishes. Wrap and refrigerate any leftovers up to 4 days.
