STACKED TOMATO SALAD WITH BLACK OLIVE TAPENADE AND BASIL PESTO DRESSING
Stacked Tomato Salad with Tapenade and Basil Pesto Dressing is a twist on classic Caprese salad. It's easy, impressive and the perfect way to showcase fresh tomatoes!

Steps:
- Combine all ingredients in a food processor or blender and process until smooth. Transfer to a small bowl and wash out the blender or food processor bowl. Refrigerate until needed. (Can be made up to 2 days ahead.)
- Combine the basil, garlic, lemon juice, pine nuts and Dijon mustard in a food processor or blender. Pulse until coarsely chopped.
- With the machine running, slowly drizzle in the olive oil and blend until smooth. Season to taste with salt and black pepper.
- Place 1 tomato slice on each of 5 plates. (Alternately, arrange on a platter.)
- Top with a tablespoon of the tapenade.
- Top with a slice of fresh mozzarella. Repeat layering, finishing each stack with a slice of tomato. (You will have a slice left to enjoy another way.)
- Spoon some of the dressing over each stack and garnish with fresh basil leaves. Serve immediately.

STACKED TOMATO SALAD WITH BLACK OLIVE TAPENADE AND SWEET BASIL DRESSING
Steps:
- Place a tomato slice on a plate and spread with some of the tapenade. Then place a slice of the mozzarella on top, add a few basil leaves, and finish with another tomato slice. You can add another layer to make Napoleon as high as you desire. Top with another small spoonful of the tapenade and then drizzle the Sweet Basil Dressing over the tomato and around the plate. Garnish with a sprig of fresh basil and repeat to make 4 to 6 plates.
- Combine olives, garlic, anchovies and pine nuts in a food processor and process until smooth. With the motor running, slowly add the oil until emulsified. Season with salt and pepper, to taste.
- Whisk together vinegar, Dijon mustard, and honey in a medium bowl. Slowly whisk in the olive oil until emulsified. Season with salt and pepper, to taste, and then stir in the basil.
SPAGHETTI WITH TAPENADE SAUCE AND ROASTED TOMATOES

- Heat the oven to 400 degrees F.
- Bring a large pot of water over medium heat to a boil. Salt the water, add the spaghetti and cook to al dente. Remove and reserve a cup or so of the cooking liquid before draining.
- Add the tomatoes to a small bowl and season with salt and pepper, to taste. Drizzle with extra-virgin olive oil and sprinkle with oregano. Scatter the tomatoes on a baking rack over a baking sheet and roast about 20 minutes.
- Heat about 3 tablespoons extra-virgin olive oil in a large skillet over medium heat. Add the anchovies, working them into oil with a wooden spoon. Stir in the capers, red pepper flakes, garlic, olives, and a splash of olive brine, and saute 3 to 4 minutes, stirring frequently. Stir in the pasta cooking liquid, about 1 cup, and toss in the pasta.
- Put the tapenade pasta into serving bowls and top with oven roasted cherry tomatoes. Serve as a first course or alongside a seafood entree.
TOMATO STACK WITH TAPENADE
Steps:
- For the tampanade, blend first 4 ingredients and with machine running, add oil. Season with salt and pepper. For dressing. Whisk vinegar, honey and mustard. Gradually whisk in oil. Stir in basil. Season with salt and pepper. For salad place 1 tomato slice on each of 8 plates. Spread with tapenade. Top with cheese. Repeat layering. Top each with 3rd tomato. Chop remaining tomato slices. Place in bowl and toss with 2 tbsp dressing. Spoon some dressing over each stack and spoon chopped tomatoes alongside.
TOMATO TAPENADE
This is a very intense appetizer. I've also served it on hot pasta. Outstanding! The recipe comes from "Great Good Food" by Julee Rosso.

- Except for the parsley and oil, place all ingredients in a food processor and process until fairly smooth.
- With the machine running, add the oil from the anchovies first.
- If you want a looser consistency, add some oil from the jar of tomatoes.
- Place in a small bowl and cover.
- Refrigerate for at least 1 hour.
- To serve, bring the tapenade to room temperature and sprinkle with the parsley.
- Serve on toasted French bread.

- To make tapenade, put olives, capers, anchovies and garlic in container of food processor or blender, along with a bit of olive oil. Pulse machine once or twice, and swiftly add remaining olive oil while machine is running. Do not purée. You want a coarse, uneven blend. (If you have the energy, you can chop all the ingredients by hand or grind them with mortar and pestle.) Thin with more olive oil if you like.
- Core tomatoes, cut them in two horizontally and shake out the seeds, squeezing gently. Chop. Toss with tapenade, and some salt and pepper if necessary. Stir in basil leaves. Taste, adjust seasonings and serve.

- Position racks in top third and bottom third of oven. Preheat oven to 400°F. Line 2 baking sheets with parchment paper. Working with 1 pastry sheet at a time, roll out on floured surface to 13-inch square. Using 6-inch-diameter plate, cut out 4 rounds from 1 sheet and 2 rounds from second sheet (reserve remaining pastry for another use). Transfer 3 rounds to each baking sheet. Pierce each round with fork. Top rounds with another sheet of parchment. Place another baking sheet atop parchment on each sheet.
- Place 1 baking sheet stack on each rack in oven and bake 10 minutes. Rotate baking sheets and bake until rounds are golden, about 10 minutes longer. Using oven mitts, carefully remove top baking sheets and top sheets of parchment. Continue baking pastries until deep golden, about 3 minutes longer. Transfer sheets to rack to cool. DO AHEAD: Can be made 1 day ahead. Store airtight at room temperature.
- Increase oven temperature to 450°F. Spread generous tablespoon tapenade over each pastry round, leaving 1/2-inch border around edges. Alternate 4 tomato slices with 4 mozzarella slices atop each pastry in pinwheel pattern. Bake just until cheese begins to melt, about 2 minutes. Sprinkle with fleur de sel and pepper, then drizzle with olive oil and balsamic vinegar. Arrange a few basil leaves and olive slices atop each tartlet and serve immediately.
STACKED TOMATOES WITH TARRAGON INFUSED OIL
A beautiful beginning to any kick off a Dinner Party. Using gorgeous summer heirloom tomatoes. A mandolin is perfect to slice the vegetables in this but a good sharp knife will do the trick. Store bought Black Olive Tapenade is OK but is better home made so do take a look at recipes on zaar. Serve with a fresh loaf of crusty bread.

Steps:
- Heat oil and add garlic, tarragon bring to a sizzle and turn heat off. Let sit for 30 minutes.
- Add pepper and vinegar.
- In a container with a top, place the zucchini and onions pour the dressing over it. Marinade for 30 minutes.
- Remove zucchini and onions placing on a plate.
- To the marinade add the tapenade and give a shake.
- On four serving plates start to layer.
- By first placing the largest tomato, sprinkle of dressing, next layer avocado slices dividing all of the avocado on each of four plates.
- Then place the next largest slice of tomato over the avocado drizzle with a touch of dressing.
- Top each stack with the next largest tomato slice, then with zucchini slices to cover tomato.
- Top with the next largest tomato and top with onion slices.
- Finishing by topping the smallest of the tomato slices.
- Garnish with cheese. The cheese can also go in between each layer if desired.
- Drizzle the remaining dressing over the stacks.
- Place one sprig of tarragon into each stack for a beautiful presentation.
SUNDRIED TOMATO TAPENADE
A to-die-for take on the usual olive tapenade. Don't use California sundried tomatoes because they are too sweet! Every time I make this I get requests for the recipe! I've never actually had the patience to chill this and always end up serving it right away. It's a huge hit! Serve with your favorite crackers.

- Stir balsamic vinegar, olive oil, and cayenne pepper together in a bowl; fold in sun-dried tomatoes, Kalamata olives, green olives, and garlic. Season with black pepper. Cover bowl with plastic wrap and refrigerate for flavors to blend, at least 2 hours to overnight.
