SPICED VANILLA PEAR TART WITH ALMOND WHIPPED CREAM
Steps:
- Press pie crust firmly and up the sides of a 10-inch tart baking pan or a 9 inch pie plate. Line crust with parchment paper or aluminum foil and add pie weight or dried beans. Bake for 8 minutes. Remove parchment paper and pie weights. Bake for another 6 minutes. Remove from oven and allow to cool completely while you prepare the filling. Peel, core and chop 3 medium-sized Comice pears, set aside. Combine 1 cup sour cream and 3/4 cup half and half in a large bowl; beat until smooth. Whisk in pudding mix. Add 2 Tbsp. maple syrup, continuing to beat. Gently fold in the chopped pears. Pour the pudding mixture into prepared pie crust. Cover; refrigerate several hours (at least 3) or overnight. Just before serving, preheat broiler. Peel the final pear, and cut into thin slices. Arrange in a pattern in the center of the pudding mixture. Combine 1/3 cup brown sugar, 1/4 tsp. ginger, 1/4 tsp. cinnamon and 1/8 tsp. cloves in a small bowl. Sprinkle evenly over pears. Rim the edges of the tart with the 1/3 cup of chopped pecans. Broil 4 to 6 minutes or just until the sugar is melted and begins to crystalize, watching carefully not to burn the sugar. Prepare the whipped topping: Add 1 cup heavy cream, 1 1/2 tsp. almond extract and 1 Tbsp confectioners sugar to the bowl of a stand mixer and beat on low. Gradually increase the speed until soft peaks begin to form. Serve the pear tart immediately with a dollop of whipped cream and a sprig of mint, if desired. TIP: To easily peel pears, submerge the pears in a large pot of boiling water for about 10-15 seconds then place into a large bowl of ice cold water. Using your fingers, gently rub the pear skin from each pear.

- For crust:
- Roll out pastry to 12-inch square and trim off corners, forming slightly rounded crust. (If using all-butter puff pastry, roll out to 12-inch round.) Transfer pastry to 10-inch-diameter springform pan, pressing pastry firmly onto bottom and 1 to 1 1/2 inches up sides of pan. Freeze crust until firm, 1 to 1 1/2 hours. DO AHEAD: Can be made 1 day ahead. Cover and keep frozen.
- For pears:
- Melt butter in heavy large skillet over low heat. Add sugar and next 4 ingredients. Scrape in seeds from vanilla bean; add bean. Increase heat to medium-high and cook, stirring until sugar melts and turns brown (color of peanut butter), about 3 minutes. Reduce heat to medium; add pears, rounded side down. Cook until pears are almost tender, turning and moving skillet around occasionally to ensure even cooking, 10 to 15 minutes, depending on ripeness of pears. Carefully turn pears over; continue to cook until pears are very tender, about 10 minutes longer. Remove skillet from heat; cool pears in skillet with spices (pears will release juice while cooling).
- For filling:
- Melt butter in small saucepan over low heat. Scrape in seeds from vanilla bean; add bean. Add cinnamon, star anise, and cloves. Increase heat to medium; cook until butter is golden (watch to avoid burning), 3 to 4 minutes. Remove vanilla bean and spices from butter; discard. Whisk sugar, egg, and coarse salt in medium bowl. Whisk in flour. Gradually whisk browned butter into egg mixture. DO AHEAD: Pears and filling can be made 6 hours ahead. Cover separately; let stand at room temperature. Whisk filling before using.
- Position rack in center of oven; preheat to 400°F. Brush frozen crust with beaten egg white. Pour filling into crust; spread evenly over bottom of crust (filling will be very thin). Using slotted spatula, remove pears from skillet, allowing excess syrup to drain back into skillet; reserve syrup. Arrange pears, rounded side up, atop filling (about 9 around edge and 3 in center of pan).
- Bake tart until crust is deep golden and filling is set and brown at edges, about 1 hour. Run small knife around sides of pan to loosen tart. Release pan sides. Transfer tart to platter. Let stand, uncovered, at room temperature to cool slightly until just warm.
- Just before serving, boil syrup in skillet until reduced to generous 1/3 cup, 1 to 2 minutes. Discard spices. Drizzle syrup over pears. Serve tart slightly warm.

- Preheat oven to 350 degrees. Spread almonds in a single layer on a rimmed baking sheet; toast in oven until light golden and fragrant, 7 to 10 minutes. Let cool completely, then finely grind in a food processor. Set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, cream butter and sugar on medium speed until light and fluffy, about 1 minute. Add almonds, egg, cream, and extract; beat until well combined, about 2 minutes.
- Using a small offset spatula, spread filling in cooled tart shell. Arrange pear slices, overlapping them slightly, on top of filling. Generously sprinkle with sugar; place tart on a baking sheet. Bake until filling is slightly puffed and golden brown, about 35 minutes. Transfer to a wire rack to cool. Serve warm or at room temperature with creme anglaise on the side.
PEAR-HAZELNUT TART
The topping for this yummy pear tart is quite sweet so I only add very little sugar to the pastry but you can make the tart with regular sweet shortcrust pastry if you like.

- Grease an 8-inch tart pan.
- Combine 1 1/2 cups plus 2 tablespoons flour, butter, egg, sugar, water, and salt in a large bowl. Quickly knead into a smooth dough. Place in a container with a lid and refrigerate for 30 to 60 minutes. The pastry needs to be firm enough to be rolled out.
- Roll out chilled pastry on a floured work surface and fit into the prepared tart pan. Shape an edge and prick the pastry several times with a fork. Chill in the refrigerator for 30 minutes.
- Preheat the oven to 350 degrees F (180 degrees C).
- Cover the pastry with parchment paper and fill with dry beans or pastry weights. Bake in the preheated oven for 20 minutes. Remove from the oven and let cool completely, about 30 minutes. Leave the oven on.
- Meanwhile, roast hazelnuts in a dry skillet over low heat until fragrant, about 2 minutes. Remove from heat, allow to cool, and chop coarsely.
- Beat butter, sugar, and vanilla sugar in a bowl with an electric mixer until creamy. Add cream and beat until well combined. Mix in egg and beat until batter is smooth. Spread onto the pastry. Arrange pear slices in an overlapping pattern on top of the cream and scatter hazelnuts on top.

- Roll out pastry on lightly floured surface to 10-inch square. Trim edges, making 10-inch-diameter round; pierce round all over with fork. Slide onto rimless baking sheet. Cover and chill pastry while preparing pears or up to 1 day.
- Fill large skillet with ice and water; set aside. Stir sugar, 1/4 cup water, and corn syrup in heavy 10-inch-diameter nonstick ovenproof skillet over low heat until sugar dissolves. Increase heat and boil until syrup is dark amber color, occasionally swirling and brushing down sides of skillet with wet pastry brush, about 5 minutes. Remove from heat; whisk in butter, then vanilla-bean seeds and ginger (caramel will bubble up). Arrange pears, cut side down and overlapping, in circle in skillet, placing a few around edge, if necessary. Place skillet over medium heat. Cook until pears are tender and syrup thickens enough to coat spoon, about 23 minutes. Place hot skillet atop ice in large skillet to cool pear mixture quickly. (Can be made 4 hours ahead. Let stand at room temperature.)
- Preheat oven to 375°F. Place puff pastry round atop pear mixture in skillet; tuck in edges around pears. Bake tart until pastry is puffed and golden, about 35 minutes. Cool tart completely in pan at least 1 hour and up to 6 hours.
- Preheat oven to 375°F. Rewarm tart in oven 8 minutes. Place platter atop skillet. Using oven mitts, hold skillet and platter together and turn over, releasing tart. Serve tart with whipped cream.
HASSELBACK PEAR TART

- Preheat oven to 400 degrees F (200 degrees C). Fit puff pastry into a 10-inch square tart pan with removable sides.
- Place a pear half, cut-side down, onto a work surface. Place a chopstick above and below the pear half, so the pear is framed on the top and bottom. Thinly slice the pear half lengthwise, stopping when the knife hits the chopstick and leaving the bottom 1/4 inch of the pear intact. Repeat with the remaining pear halves.
- Place hasselbacked pears in a bowl; add white sugar and lemon juice and gently toss to coat. Let hasselbacked pears stand for 5 minutes.
- Mix cream cheese, confectioners' sugar, and vanilla extract together in a bowl; spread over puff pastry. - Cream butter and sugar, add egg and salt. When the mixture is reasonably amalgamated add the flour. The dough should need no water. The pastry can be mixed in a food processor, but you may have to add up to 1/4 cup additional flour.
- Chill in the refrigerator at least 30 minutes.
- Preheat the oven to 425 degrees.
- Roll out the pastry and line a tart pan at least 10 inches in diameter. Line with foil and weight with dried beans or pastry weights. Bake for 6 to 8 minutes. Remove the foil and continue baking until the pastry is lightly colored, about 5 minutes longer.
- Meanwhile, peel, core and halve the pears, then slice them. This can be done longways or across, keeping the halves in shape. Sprinkle with lemon juice to prevent discoloring.
- Beat together the cream, egg yolks and sugar.
- Arrange the pear slices on the pastry. Long slices go in concentric circles; the sliced halves should be put on the pastry and spread out slightly so they are flattened but still the shape of the halves, with the pointed ends toward the center. Pour over the cream mixture and return to the oven. Close the door and turn the heat down to 375 degrees and bake until the cream is nearly firm, about 30 minutes. It tastes best when not quite set in the center. Serve warm.
