A great recipe I came up with in my head after making a red wine velvet cake for my dad on Father's Day. Drizzle the cooled cookies with a white chocolate ganache.

½ cup butter
½ cup white sugar
½ cup brown sugar
1 egg
1 teaspoon vanilla extract
¼ cup red Zinfandel wine, or more as needed
1 ½ cups all-purpose flour
⅓ cup cocoa powder
1 teaspoon baking soda
¼ teaspoon salt

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Beat butter, white sugar, and brown sugar together in a bowl with an electric mixer until smooth, 2 to 3 minutes. Add egg and vanilla extract; beat until combined. Add red wine; beat until fully incorporated. Stir flour, cocoa powder, baking soda, and salt into butter mixture until moistened. Scoop into small mounds on a baking sheet.
  • Bake in the preheated oven until edges are crisp, 10 to 12 minutes. Let cool on baking sheet for 10 minutes before transferring to a wire rack.

Wine Cookies Ciambelle al Vino, a delicious crunchy not too sweet Italian fall cookie, made with white wine. Fast and easy.

1/2 cup white wine (dry)
1/2 cup sugar
1/3 cup oil ((I used corn oil))
1/4 teaspoon salt
1/2 teaspoon baking powder
2 1/4 cups all purpose flour
sugar for coating
1/2 - 1 teaspoon anise seeds ((if desired))

Steps:

  • Pre-heat oven to 350° (180° celsius)
  • In a medium mixing bowl add wine, oil, sugar, salt and baking powder (add anise seeds if using) mix well, gradually add flour, a little at a time, until it all comes together.
  • Transfer to a slightly floured flat surface and knead lightly approximately 10 times. Dough will be soft, so don't work it too much.
  • Cut off a little dough at a time, roll into a small chubby rope (about 5 inches (13 centimeters long) and bring ends together to form a circle. Dip in sugar and and place on parchment covered cookie sheets, bake for approximately 25-30 minutes, or golden in colour. Enjoy!

This Italian Wine Cookie recipe was handed down through many generations. Thay are a crisp, not-too-sweet, EASY TO MAKE cookie that are great with coffee or tea.

3 cups all-purpose flour
1 teaspoon baking powder
3 tablespoons white sugar
1 cup dry red wine
½ cup vegetable oil
⅓ cup granulated sugar for decoration

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl combine the flour, baking powder and sugar. Add the wine and oil. Mix with a large fork and then with your hands.
  • Roll small pieces of dough between hands to make "logs" then shape into circles. The circles should be no bigger than the 2 inches in diameter. Roll cookies in extra sugar and place on cookie sheet.
  • Bake at 350 degrees F (175 degrees C) for 25 minutes or until slightly brown. After cookies cool they should be hard and crisp.

1 stick (8 tablespoons) unsalted butter, at room temperature
1/2 cup granulated sugar
1/4 cup packed light brown sugar
1/3 cup dry red wine
2 tablespoons cranberry juice
1 navel orange, zested
2 cups all-purpose flour (see Cook's Note)
2 teaspoons baking powder
1 teaspoon Chinese five-spice powder
1 teaspoon kosher salt
4 drops super red gel food coloring
1 drop super black gel food coloring
1/4 cup freeze-dried cranberries, crushed

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Place the butter and sugars in a stand mixer fitted with a paddle attachment. Beat until fluffy, about 2 minutes. Add the wine, cranberry juice and orange zest. Beat until combined; it's okay if the mixture looks slightly curdled.
  • Whisk together the flour, baking powder, Chinese five-spice and salt in a large bowl. Pour half of the dry ingredients into the butter mixture and beat on low speed until combined. Repeat with the remaining dry ingredients until a loose dough comes together. Add in the food coloring and beat just until homogenous, scraping down the sides of the bowl as needed.
  • Using a 3/4-ounce scoop, make small mounds of dough on the prepared baking sheets, leaving about 2 inches of space between each cookie. Sprinkle the tops of the cookies with the crushed cranberries. Bake until the cookie tops are dry and slightly wrinkled, 12 to 14 minutes.

3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon coarse salt
1/2 cup sugar
1 large egg
1/2 cup extra-virgin olive oil
1/2 cup Marsala wine
2 tablespoons milk
1 tablespoon lemon juice
1 cup confectioners' sugar

Steps:

  • Preheat the oven to 375 degrees.
  • In a mixing bowl, whisk together the flour, baking powder, and salt.
  • In a separate larger bowl, whisk together the sugar and egg until well combined. Stir in the olive oil and wine. Slowly add the flour mixture until well combined, kneading slightly until the dough is easy to handle and medium-soft.
  • On a clean surface, use your hands and roll the dough into 1/2-inch-thick, cigarlike rolls. Cut each cigar into 6-inch pieces, folding each piece into a loop-shape. Press the dough with fingers to seal together. Place on a parchment-lined rimmed baking sheet.
  • Bake for 15 to 20 minutes or until slightly golden. Remove to a cooling rack and cool completely.
  • If you wish to ice them, whisk 2 tablespoons of milk and 1 tablespoon of lemon juice into 1 cup confectioners' sugar. It should be the consistency of thick whipping cream. Dip one side of the cookie in the glaze and let dry.

From Jo Ann Shirley's 1978 Cakes and Cookies cookbook. These use sweet wine to flavor the dough and are cut into little rounds. You could leave the nuts off the top if you want to cut down the preparation time or if you just don't like nuts.

2 egg yolks
5 cups sifted all-purpose flour
1 pinch salt
2/3 cup sweet wine
1 egg white, beaten

  • Mix together butter, sugar and egg yolks. Beat until light and fluffy.
  • Sift together flour and salt. Add alternately with wine. Mix well. Chill.
  • Roll out on a floured board and cut into 2" rounds. Brush with egg white and sprinkle with nuts. Bake at 325°F for about 10 minutes.

1 cup flour (I used a Gluten Free flour blend with no change to the recipe)
1 cup grated cheese (appenzeller, machego, old cheddar, aged gouda, jarlsberg, gruyere, beaufort, emmenhal etc)
1/4 cup unsalted butter
1 teaspoon fresh rosemary (I used 1/4 to 1/2 tsp dry thyme) or 1 teaspoon thyme, minced (I used 1/4 to 1/2 tsp dry thyme)
1/4 teaspoon smoked paprika
1/2 teaspoon sweet paprika
1 dash cayenne
salt
3 sun-dried tomatoes packed in oil, minced

Steps:

  • use hands, mixer or food processor to combine all ingredients except the tomatoes.
  • Mix to blend and form into a supple dough.
  • Remove the dough to counter and knead in tomatoes.
  • Shape into a log and wrap tightly in foil or plastic wrap and chill at least 30 minutes.
  • Preheat oven to 400°F
  • Use a sharp, thin knife to slice the dough into 1/4' rounds.
  • Arrange on greased cookie sheet and bake 10-15 minutes or until golden.
  • Cool and store in an airtight container.
