2 untreated cedar planks (14x7x1 each)
1/4 cup oil, divided
1 tsp. garlic powder
6 bone-in chicken thighs (2.25 lb.)
2/3 cup HEINZ BBQ Sauce Kansas City Sweet & Smoky
6 ears corn on the cob, husks and silk removed
2 Tbsp. KRAFT Real Mayo
2 Tbsp. KRAFT Grated Parmesan Cheese
1/2 tsp. chili powder

Steps:

  • Immerse planks in water, placing weight on top of each plank to keep it submerged. Soak 4 hours.
  • Heat grill to medium heat. Reserve 2 Tbsp. oil for later use; rub remaining oil, then garlic powder evenly onto chicken. Remove planks from water. Place 3 chicken thighs on each plank. Place on grill grate.
  • Grill 28 to 30 min. or until chicken is done (165°F), turning occasionally and brushing with barbecue sauce for the last 10 min. Remove chicken from grill.
  • Brush reserved oil onto corn; grill 4 min. on each side or until tender and well charred. Remove from grill; brush with mayo. Sprinkle with cheese and chili powder. Serve with chicken.

2 cups plus 2 tablespoons lowfat plain yogurt
2 cups frozen mango chunks
3 tablespoons honey
1/4 cup plus 1 tablespoon apple cider vinegar
1/4 cup golden raisins
2 tablespoons olive oil, plus more for brushing
1/4 teaspoon cayenne pepper
5 sun-dried tomatoes (not packed in oil)
2 small cloves garlic, finely chopped
4 ears corn, shucked
8 boneless, skinless chicken thighs, trimmed (about 1 1/2 pounds)
Kosher salt
6 cups mixed salad greens
2 medium carrots, thinly sliced

Steps:

  • To make the smoothies, combine 2 cups of the yogurt, 2 cups ice, 1 cup of the mango and all of the honey in a blender, and blend until very smooth. Divide among four glasses and refrigerate until ready to serve. Rinse out the blender.
  • Preheat the grill to medium-high heat. Combine the remaining 1 cup mango, 1/4 cup water, 1/4 cup of the vinegar, the raisins, olive oil, cayenne, tomatoes and garlic in a microwave-safe bowl. Cover with a piece of plastic wrap and microwave until the tomatoes are soft, about 3 minutes. Let cool slightly and puree in a blender. Transfer to a small bowl. Set aside 2 tablespoons for the dressing, the rest will be used for tossing with the chicken.
  • Place the corn on the grill, cover and cook, turning as needed, until nicely charred, about 10 minutes. Remove and keep warm.
  • Turn the grill down to medium and brush the grates with some of the oil. Toss the chicken thighs with half of the remaining sauce and 1/2 teaspoon salt. Arrange on the grill and cook until nicely marked and the internal temperature registers 170 degrees F on an instant-read thermometer, 8 to10 minutes per side. Baste a few times with the remaining sauce while grilling.
  • While the chicken cooks, whisk together the remaining 2 tablespoons yogurt, the reserved 2 tablespoons sauce, the remaining 1 tablespoon vinegar, 1 tablespoon water and 1/4 teaspoon salt in a large bowl. Toss the mixed greens and carrots together. Divide the chicken, corn and salad among four dinner plates. Drizzle the greens with the reserved dressing. Serve each plate with a mango smoothie.

These chicken thighs are roasted in the heat of a covered grill, smoke commingling with the tint and flavor of paprika to create, thanks to caramelized honey, a sort of crust that makes it very difficult to stop eating. You start by making a paste of sweet and hot paprikas, honey, lemon juice, garlic and butter. Rub that all over the meat, then cook the chicken on a charcoal grill over indirect heat until done. If using a gas grill, make sure one side of the grill is unheated, and either swap out the paprika for the smoked version known as pimenton de la vera or wrap two small mounds of moistened wood chips in heavy aluminum foil and pierce the tops of the packets with the tines of a fork. Place those on the hotter side of the grill before roasting the chicken.

Steps:

  • Heat grill to high. In a shallow baking dish, whisk together lemon zest and juice, garlic, shallot, and olive oil. Season with salt and pepper. Stir in chopped herbs.

2 cups extra-virgin olive oil
3 lemons, juiced
12 cloves garlic, minced
3 jalapeno peppers, finely chopped
30 skin-on, bone-in chicken thighs
2 cups ketchup
1 cup water
½ cup apple cider vinegar
¼ cup white wine vinegar
¼ cup Sriracha sauce
5 tablespoons light brown sugar
3 tablespoons lemon juice
2 tablespoons prepared yellow mustard
1 tablespoon Worcestershire sauce
½ tablespoon freshly ground black pepper
½ tablespoon onion powder
1 pinch sea salt and freshly ground black pepper to taste

Steps:

  • Combine olive oil, lemon juice, garlic, and jalapeno peppers in a bowl for a marinade. Allow to rest for at least 1 hour.
  • Place the chicken thighs in a large, shallow container and cover with the marinade. Chill and marinate for at least 6 hours, or up to overnight.
  • Combine ketchup, water, cider vinegar, white wine vinegar, Sriracha, brown sugar, lemon juice, mustard, Worcestershire, 1/2 tablespoon black pepper, and onion powder in a medium saucepan. Simmer for 25 minutes.
  • Remove the skin from each chicken thigh, one at a time. Trim excess fat from the edges of each thigh; if there are any veins on the bottom of the thigh, trim away as well. Scrape the fat off from the bottom side of the chicken's skin using a sharp knife until the skin is essentially transparent.
  • Re-wrap the trimmed thighs with the skin. Liberally coat with sea salt and pepper.
  • Place chicken thighs, unstacked, onto wire racks. Place the racks into the smoker. Add pecan wood chips according to manufacturer's directions and heat to 265 to 285 degrees F (129 to 140 degrees C).
  • Smoke until chicken thighs are no longer pink in the centers, about 2 hours. During the final 45 minutes of cooking, liberally apply the BBQ sauce 2 to 3 times. An instant-read thermometer inserted near the bone of a thigh should read 165 degrees F (74 degrees C).

Cover and smoke until chicken is deep mahogany in color and a thermometer inserted into thickest portion registers 165 degrees F (74 degrees C), about 2 hours. Remove chicken thighs from grill and transfer to a large platter.
  • Let rest for 10 minutes before serving.
