ZUCCHINI AND ROASTED RED PEPPER BITES



Zucchini and Roasted Red Pepper Bites image

Tempting appetizers that are ready in 10 minutes, these bites are made with zucchini, cream cheese and roasted sweet red peppers.

1 medium zucchini
2 tablespoons lemon juice
1/2 package (8-oz size) cream cheese, softened
1 tablespoon chopped fresh chives
Dash salt
1 roasted red bell pepper, thinly sliced
2 tablespoons crumbled feta cheese

Steps:

  • Use mandoline slicer or knife to slice zucchini into 1/4-inch-thick slices. Place slices in small bowl. Add 1 tablespoon of the lemon juice; toss.
  • In another small bowl, beat remaining 1 tablespoon lemon juice, the cream cheese, chives and salt with whisk until well blended.
  • Arrange zucchini slices on large platter. Top each slice with generous teaspoon cream cheese mixture, a few red pepper slices and some crumbled feta cheese. Serve cold.

two 6-ounce zucchini
1/3 cup finely chopped drained bottled roasted red peppers
1/3 cup finely chopped drained feta
1/8 teaspoon dried oregano, crumbled
freshly ground black pepper to taste

Steps:

  • Preheat broiler.
  • Cut zucchini crosswise into 3/4-inch-thick sections, discarding ends, and with a melonballer scoop out center of each section, leaving 1/16-inch-thick shells and reserving centers for another use. In a steamer set over simmering water steam zucchini shells, covered, 4 minutes, or until barely tender but still bright green. Transfer shells to paper towels to drain upside down.
  • In a small bowl stir together roasted peppers, feta, oregano, and black pepper and mound in each shell. Arrange shells in a lightly oiled shallow flameproof baking dish and broil about 4 inches from heat until bubbling and beginning to turn golden, about 4 minutes.

1 egg beaten
1 cup crumbled feta cheese
2 tablespoons chopped parsley
1 minced Hungarian hot pepper

Steps:

  • Place peppers on grill and char. Remove from grill and place in bowl and cover with plastic wrap for 10 minutes. Cut peppers in half and remove skin and seeds. Mix eggs, feta, parsley, and chiles. Fill peppers evenly and place under broiler until golden brown.

Chicken Breasts Stuffed with Zucchini, Roasted Red Pepper, and Goat Cheese image

1/4 cup minced onion
2 tablespoons olive oil
1/2 cup firmly packed coarsely grated unpeeled scrubbed zucchini,;squeezed dry in a paper towel
2 tablespoons minced drained bottled roasted red pepper or pimiento
1 ounce of soft mild goat cheese, crumbled
1 whole boneless chicken breast (with skin), halved
1/2 cup chicken broth

Steps:

  • In a skillet cook the onion in 1 tablespoon of the oil over moderately low heat until it is softened, add the zucchini, and cook the mixture, stirring, for 1 minute, or until the zucchini is tender. Stir in the red pepper, the goat cheese, and salt and pepper to taste and cook the mixture, stirring, until cheese is melted. Transfer the mixture to a small bowl and let it cool slightly.
  • With your fingers make a pocket for the filling in each chicken breast half by separating in skin from the meat, being careful not to tear the skin and keeping the skin attached along most of the edge. Stuff each pocket with half the filling with a small spoon, packing it and pulling the skin to cover the filling completely, and secure the pockets with wooden picks if desired. In a large skillet heat the remaining 1 tablespoon oil over moderately high heat until it is hot but not smoking and in it sauté the chicken, beginning with the skin side up, for 2 minutes on each side. Reduce the heat to moderate, cook the chicken for 9 minutes on each side, or until it is cooked through, and divide it between 2 plates. Pour off the fat from the skillet, to the skillet add the broth, and boil the broth, scraping up the brown bits, for 30 seconds. Strain the sauce and pour it around the chicken.

Steps:

  • Slice the red peppers into strips.
  • Pour the oil into a skillet and heat over med-high heat.
  • Add zucchini and sauté until tender, about 4 minutes.
  • Add lemon juice and red pepper strips and sauté 1-2 more minutes.

This frittata from Canadian Living has a decidedly Greek feel about it - it is flavoured with dill, feta and kalamata olives. I love it for supper with a serving of Greek-style oven fries on the side but it would be a wonderful brunch dish also.

1 tablespoon vegetable oil
1 onion, sliced
1 zucchini, thinly sliced
2 garlic cloves, minced
8 eggs
1/4 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1 sweet red pepper, thinly sliced
1 teaspoon dried dill
3/4 cup feta cheese, crumbled
9 kalamata olives, pitted and quartered

Steps:

  • In a large non-stick ovenproof skillet, heat the oil over medium heat; cook the onion, zucchini and garlic, stirring often, for 5 to 8 minutes or until softened.
  • Meanwhile, in a large bowl, whisk together the eggs, milk, salt and pepper; stir in the red pepper and dill.
  • Pour into the skillet; reduce the heat to medium-low.
  • Sprinkle with the feta and olives; cook for 10 minutes or until the bottom and side are firm yet the top is still slightly runny.
  • Broil for 3 to 5 minutes or until golden brown and set.
  • Cut into wedges.
