1 (18.25 ounce) package yellow cake mix
4 eggs
1 (5.1 ounce) package instant vanilla pudding mix
2 tablespoons amaretto liqueur
½ cup water
½ cup vegetable oil
¼ teaspoon almond extract
½ cup amaretto liqueur
1 cup sifted confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10 inch Bundt pan.
  • In a large bowl, combine cake mix, eggs, instant vanilla pudding, water, oil, almond extract, and 2 tablespoons of the amaretto; blend together well. Pour batter into the prepared pan.
  • Bake in preheated oven for 40 to 45 minutes, or until a toothpick inserted into the center of cake comes out clean. Remove cake from oven and while it is still warm, poke holes in the surface. Drizzle with the Amaretto Glaze, insuring that some of the glaze fills the holes. Let the cake cool for at least 2 hours before removing from the pan.
  • To make Amaretto Glaze: Sift the confectioners' sugar, and combine it with the remaining 1/2 cup amaretto. Blend until smooth. You may add more amaretto as needed.

Cake Ingredients:
1 box of French or Golden Vanilla Cake Mix ((You can also you plain golden yellow cake mix, as I have done so with great results))
1 box ((3.4 ounce) French Vanilla Instant Pudding Mix)
3 eggs lightly beaten
1/2 cup whole milk
1/2 cup cooking oil
1 tablespoon cooking oil
1 and 1/2 tablespoon pure almond extract
1/2 teaspoon pure vanilla extract
1/2 cup Amaretto Liqueur
Amaretto Butter Glaze Ingredients:
1/2 cup unsalted butter
1 cup white sugar ((I used pure cane sugar))
1/4 cup water
1/2 teaspoon pure vanilla extract
1/4 cup Amaretto Liqueur

Steps:

  • How to make the cake:
  • Preheat Oven at 325 degrees.
  • Grease a bundt cake pan with baking spray (Grease generously.)
  • Add the cake mix and pudding mix to a large mixing bowl.
  • Mix the cake mix and pudding mix with a whisk until well blended to prevent the batter from clumping as you add the wet ingredients.
  • Add the eggs, milk, cooking oil, almond extract, and vanilla extract to the cake mix, and mix well until blended. (The batter will be slightly thick.)
  • Add the 1/2 cup of Amaretto to the cake batter and mix well. (This will help thin out the batter.)
  • Place in cake mix in the greased bundt cake pan. Place the cake in the center of the preheated oven.
  • Cook the cake for about 35 minutes or until a toothpick comes out clean when inserted.
  • Place the cake pan on a baker's rack to allow the cake to cool for about 10 minutes.
  • Once the cake cools, poke holes in the cake and pour half of the glaze over the cake.
  • Let the cake cool completely after this. Once the cake has cooled completely place a cake dish over the top of the bundt cake pan and flip the pan over while you hold the cake dish and cake pan together, this will allow the cake come out of the cake pan onto the cake dish.
  • Pour the other half of the glaze onto the cake after the cake has been placed onto the cake dish.
  • How to cook the Butter Amaretto Sauce:
  • Make your sauce while the cake is cooking.
  • Place the butter, water, white sugar, and vanilla extract into a medium saucepan.
  • Mix these ingredients together, and then cook the sauce for about five minutes using medium heat (be sure to frequently stir the sauce as it cooks).
  • Once the sauce is cooked, remove from heat, and mix the Amaretto into the sauce, and set aside. (The sauce will thicken after cooking.)
  • After the cake has cooked and cooled for about 10 minutes, poke holes into the cake, and then pour half of the glaze over the cake.
  • After placing the cake on a cake dish, take the other half of sauce and pour it over the cake.

One 16-ounce box chocolate cake mix
1 cup dark chocolate chips
One 14-ounce can sweetened condensed milk
1/2 cup milk
1 cup milk
One 3.4-ounce packet instant chocolate pudding
1/3 cup unsweetened cocoa powder
One 8-ounce container frozen whipped topping, thawed
Maraschino cherries, drained, for decorating (optional)

Steps:

  • For the cake: Spray a 9-by-13-inch cake pan with cooking spray.
  • Bake the cake in the prepared pan according to the package instructions. Allow to cool slightly, then, using the handle of a wooden spoon, poke holes all over the cake.
  • Melt the chocolate chips in a medium microwave-safe bowl in the microwave in 20-second increments, stirring between each, or in a double boiler on the stove, until smooth. Add the condensed milk and milk, then stir to combine. Slowly pour the mixture over the cake, ensuring you hit every last inch. Allow the mixture to soak into the holes while you make the frosting.
  • For the frosting: Combine the milk, pudding mix and cocoa powder in a bowl. Whisk the mixture until it thickens, 1 to 2 minutes. Gently fold in the whipped topping until combined well.
  • Spread the frosting over the cake, then decorate with the cherries, if using. Enjoy.

  • Preheat the oven to 325 degrees F (165 degrees C). Grease a 12-cup tube pan (such as Bundt®).
  • Beat sugar and butter together in a large bowl using an electric mixer on high speed until light and fluffy. Add eggs one at a time, beating well after each addition. Add vanilla bean paste and almond extract and mix in.
  • Whisk the sifted cake flour, baking soda, and salt together in a bowl. Add flour mixture to the bowl with the butter mixture in 3 additions, alternating with amaretto and sour cream.
  • Sprinkle sliced almonds into the bottom of the prepared tube pan. Pour batter on top.
  • Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 1 1/2 hours. Cool cake in pan for 15 minutes; turn it out onto a wire rack to cool another 15 minutes.

1 teaspoon baking powder
1/2 cup sour cream
1/2 cup 2% milk
1/2 cup amaretto

BUTTERCREAM:
1-1/3 cups butter, softened
1 teaspoon vanilla extract

  • Preheat oven to 325°. Line bottoms of 3 greased 9-in. round baking pans with parchment; grease paper., In a bowl, whisk flour and baking powder. In another bowl, whisk sour cream, milk and amaretto until blended. In a large bowl, cream butter, shortening and sugar until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Beat in extracts. Add flour mixture alternately with sour cream mixture, beating well after each addition., Transfer batter to prepared pans. Bake 30-35 minutes or until a toothpick inserted in center comes out clean. Cool in pans 10 minutes before removing to wire racks; remove paper. Frost top and sides with remaining frosting., Pipe reserved frosting around bottom edge of cake. If desired, decorate cake with flowers, using almonds for petals and M&M's for the centers. 1 cup (4 1/2 ounces) blanched slivered almonds
1/4 cup matzoh cake meal (see Cooks' notes)
1/4 cup potato starch (see Cooks' notes)
3/4 cup plus 2 tablespoons sugar, divided
1/4 teaspoon salt plus more for beating whites
5 large egg yolks
1/2 cup extra-virgin olive oil plus more for pan
3 tablespoons Amaretto liqueur
4 large egg whites at room temperature
Fresh raspberries for serving
Special Equipment
A 9-inch round cake pan (2 inches deep) or 9-inch springform pan; parchment paper

Steps:

  • Heat oven to 325°F with rack in middle. Grease pan with some oil, then line bottom with a round of parchment.
  • Toast almonds in a rimmed baking sheet until fragrantly toasty and a shade darker, 10 to 12 minutes. Cool completely.
  • Combine toasted almonds, matzoh meal, potato starch, 1/4 cup sugar, and salt in a food processor. Pulse until almonds are very finely ground.
  • Whisk together egg yolks, olive oil, Amaretto, and half of almond mixture in a large bowl until combined (mixture will be slightly grainy from almonds).
  • Beat whites with a pinch of salt in another bowl with an electric mixer at medium speed until they just hold soft peaks. Increase speed to medium high and add 1/2 cup sugar in a slow steady stream, beating, and continue to beat meringue until it holds stiff glossy peaks.
  • Fold one third of meringue into yolk mixture to lighten, then fold in remaining meringue gently but thoroughly.
  • Sprinkle remaining almond mixture evenly over the batter and fold in gently but thoroughly. Pour batter into prepared pan, and smooth the top. Sprinkle the top evenly with remaining 2 tablespoons sugar.
  • Bake until cake is golden, the top has formed a crust, and a tester comes out clean, 40 to 45 minutes. Transfer pan to a wire rack and run a sharp knife along edge of pan. Cool cake in pan 30 minutes.
  • If using a springform pan, remove sides of springform. Then, whether you are using the springform or a round cake pan, invert cake onto the rack. Remove bottom (if using springform) and parchment. Set another cooling rack over bottom of cake, then reinvert cake onto second rack, and cool completely.
  • Serve cake in wedges with berries on the side.

This recipe comes from the Diocese of Louisiana, from a cookbook entitled "A Cook's Tour of the Bayou Country". Generally, I haven't found anything from Louisiana that didn't taste good! This cake turns out really moist.

1 cup butter, softened
2 1/2 cups sugar
6 large eggs
3 cups cake flour, sifted
1/4 teaspoon baking soda
1/2 teaspoon salt
1 (8 ounce) carton sour cream
2 teaspoons almond extract
1 teaspoon lemon extract
1 teaspoon orange extract
1 teaspoon vanilla extract
3/4 cup Amaretto, divided
3/4 cup orange marmalade
1/4 cup plus 2 tbsp apricot preserves
1/2-1 cup almonds, chopped, blanched, and toasted

Steps:

  • Beat butter at the medium speed of an electric mixer about 2 minutes or until it is soft and creamy. Gradually add the sugar, beating at medium speed for 5 to 7 minutes. Add the eggs, one at a time, beating between each addition. Beat just until the yellow disappears.
  • Combine the flour, baking soda and salt; add to the butter mixture alternately with the sour cream, beginning and ending with the flour mixture. Mix at low speed just until blended after each addition. Stir in flavorings and 1/2 cup amaretto.
  • Pour the batter into a greased and floured 12-cup Bundt pan. Bake at 325 degrees for 1 hour and 15 minutes or until a wooden pick inserted into the center comes out clean. Cool in a pan on a wire rack for 10 to 15 minutes; remove from the pan, and let cool completely on the wire rack.
  • Combine the remaining 1/4 cup of amaretto, marmalade, and preserves in a small saucepan. Cook over medium heat until marmalade and preserves melt, stirring frequently. Drizzle over the cake; sprinkle with the almonds.
