3 pears, peeled, quartered and cored
3 apples, peeled, quartered and cored
1/4 cup sugar
1 teaspoon vanilla extract
3 small cinnamon sticks
400 ml red wine
200 ml port wine or 200 ml sweet wine
700 g red plums, halved

Steps:

  • Put the pears and apples in a saucepan. Add the sugar, vanilla, cinnamon, red wine and dessert wine and bring to boil.
  • Simmer for 10 minute.
  • Add the plums and cook for another 5 minute or until the plums are soft.
  • remove the sucepan from the heat, cover with a lid and leave to marinate at least 6 hours.
  • serve at room temperature with ice-cream.

4 firm pears, Bosc preferred, or Comice
1 bottle of Zinfandel
1 cup of sugar
1 1/2 cups of water
6 peppercorns
1 vanilla bean
1/3 pound Gorgonzola dolce
1/4 cup toasted pecans, coarsely chopped

Steps:

  • Peel the pears, core them from the bottom, leaving the stems on. In a large saucepan, add all of the ingredients except the pears and bring to a boil. Reduce the heat and add the pears, and simmer until the pears are tender, yet slightly firm in the center, about 30 minutes. Remove the pears, peppercorns and vanilla bean, and bring the mixture to a boil and cook over medium heat until the liquid is reduced to a syrup.
  • To serve
  • When the pears are cool, fill the cores with the cheese, place on the serving plate and drizzle with sauce. Top with toasted pecans.

  • ASIAN PEAR SALSA

2 firm but ripe pears, peeled, seeded and quartered
1 cup fresh pitted tart cherries
1/2 cup granulated sugar
1 tablespoon cornstarch
1 cup red wine
2 whole star anise
Pinch of kosher salt
1 teaspoon red wine vinegar
Vanilla bean ice cream, for serving

Steps:

  • Prepare a grill for indirect heat. If using a charcoal grill, build the hot coals on one side only. If using a gas grill, heat one side only to medium-high heat.
  • Add the pears, cherries, sugar and cornstarch to a large saucepot and mix to coat the fruit. Add the red wine, star anise and salt. Place the saucepot over direct heat, bring the mixture to a boil and cook, simmering, until the wine is reduced and slightly thickened, about 5 minutes.
  • Remove the saucepot from the heat and add the red wine vinegar. Discard the star anise. Let cool slightly.
  • Serve by spooning over some vanilla bean ice cream.
  • (Alternatively, you can poach the fruit over medium-high heat on a stovetop.)

1 750-ml bottle dry red wine
2 1/4 cups sugar
2 cups water
1/2 cup orange juice
2 teaspoons grated orange peel
1 teaspoon ground cardamom
1 cinnamon stick
4 firm but ripe pears, peeled, stems left intact
1 pint vanilla ice cream
1 plain or almond biscotti, crumbled
Orange peel strips (optional)

Steps:

  • Combine first 7 ingredients in heavy large saucepan. Stir over medium heat until sugar dissolves and mixture comes to simmer. Add pears and return mixture to simmer. Reduce heat and simmer slowly until pears are tender when pierced with knife, about 25 minutes. Transfer pears to plate. Boil liquid in saucepan until reduced to 3 cups, about 20 minutes. (Can be made 1 day ahead. Cover and chill pears in poaching liquid. Before serving, rewarm over medium-low heat until pears are heated through.)
  • Arrange 1 warm pear and 1 scoop of ice cream on each of 4 plates. Drizzle some poaching liquid over. Sprinkle with biscotti crumbs. Garnish with orange peel strips, if desired, and serve.

1/3 cup sugar
3 cups water
Zest and juice of 1/2 orange, zest removed with a vegetable peeler cut in wide strips
Zest and juice of 1/2 lemon, zest removed with a vegetable peeler cut in wide strips
2 pieces star anise
1 piece thin cinnamon stick (about 1½ inches long)
1 piece vanilla bean (about 2 inches long), split, seeds removed with a paring knife, seeds and bean reserved and scraped
3 medium apples or pears, peeled, halved, and cored

Steps:

  • Put all the ingredients except the fruit in a large saucepan, turn the heat to medium-high, and bring to a boil. As soon as the liquid boils, reduce the heat to medium-low and simmer the syrup for 5 minutes.
  • Carefully drop the apples or pears into the pan and bring the syrup back to a simmer. Cover the pan and cook until the fruit can be pierced easily with a thin knife, 10 to 15 minutes, depending on the fruit; check early and often. Using a slotted spoon, transfer the apples or pears to a bowl.
  • Turn up the heat and boil the syrup for another 10 minutes, at which point you'll have about 1¼ cups. Pour the syrup over the fruit, cover, and let cool until slightly warm or at room temperature.
