Bacon Wrapped Asparagus Bundles image

These bundles can be easily prepared on an outdoor grill or in a hot oven.

1 1/2 pounds asparagus spears, trimmed 4 to 5 inches long tips
Extra-virgin olive oil, for drizzling
A few grinds black pepper
4 slices center cut bacon or pancetta
Chopped chives or scallions, optional garnish

Steps:

  • Preheat oven, if using, to 400 degrees F.
  • Lightly coat asparagus spears in extra-virgin olive oil. Season the asparagus with black pepper. Take a quick count of the spear tips. Divide the total number by four. Gather that number of spears and use a slice of bacon to wrap the bundle and secure the spears together. Repeat with remaining ingredients.
  • To grill, place bundles on hot grill and cover. Cook 10 to 12 minutes until bacon is crisp and asparagus bundles are tender.
  • For oven preparation, place bundles on slotted broiler pan. Bake 12 minutes.

1 tablespoon chopped fresh parsley
1/4 cup olive oil
1 lb fresh asparagus
1/2 lb raw bacon
salt and black pepper

Steps:

  • Saute garlic and parsley over low heat, then set aside to steep.
  • Remove ends from asparagus that are tough.
  • Lay 4 stalks of asparagus in the center of each strip of bacon and sprinkle with salt and pepper.
  • Drizzle garlic oil over each bundle.
  • Wrap bacon around the stalks and secure with a toothpick.
  • Place asparagus bundles on baking sheet and bake at 400° for 20 minutes or until asparagus is tender and bacon is crisp.

Pinch gray salt
Freshly ground black pepper
1 tablespoon finely chopped fresh parsley
1 teaspoon freshly grated lemon peel

1 teaspoon salt
1 large bunch (about 1 lb) fresh asparagus, trimmed to even lengths
Unsalted butter for greasing baking dish
2 tablespoons extra-virgin olive oil
Additional gray salt and freshly ground black pepper
8 thin slices prosciutto (4 oz)

Steps:

  • Heat oven to 400°F. In small bowl, mix bread crumbs, salt and pepper. Add parsley, lemon peel and cheese; toss well.
  • In 3-quart saucepan, heat 4 cups water and 1 teaspoon salt to boiling. Add asparagus. Heat to boiling; reduce heat. Simmer about 4 minutes or until crisp-tender; drain.
  • Butter shallow baking dish. Toss cooled asparagus with 2 tablespoons olive oil; sprinkle with salt and pepper. Divide asparagus into 4 equal bundles. On work surface, arrange 2 slices of the prosciutto so they slightly overlap each other. Top with 1 asparagus bundle and roll up carefully in prosciutto. Place in baking dish. Repeat with remaining prosciutto and asparagus. Flatten tops of bundles slightly; sprinkle with topping.
  • Bake about 10 minutes or until thoroughly heated and crisp. Serve immediately.

20 fresh asparagus spears (about 1 pound), trimmed
4-1/2 teaspoons olive oil
2 teaspoons lemon juice
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon pepper
1/8 teaspoon salt
1/4 cup chopped green onions
2 teaspoons cornstarch
1 cup chicken broth

Steps:

  • Flatten chicken breasts to 1/2-inch. Wrap each around five asparagus spears; secure with toothpicks. Place in a 13-in. x 9-in. baking dish coated with cooking spray. Combine the oil, lemon juice and seasonings; pour over bundles. Cover asparagus tips with foil., Cover and bake at 350° for 15 minutes. Uncover; sprinkle with the onions. Bake 12-15 minutes longer or until chicken is no longer pink and asparagus is crisp-tender. 1/4 teaspoon Italian seasoning

1-1/2 teaspoons olive oil

  • In a skillet, bring 1/2 in. of water to a boil. Add asparagus; cover and boil for 3 minutes. Drain and immediately place asparagus in ice water. My mom gave me this recipe using green beans, but I like it much better with Asparagus. The asparagus is tender, with a slightly sweet, but tangy sauce.

1 bunch fresh asparagus
8 slices bacon
1 tablespoon Worcestershire sauce
1/4 cup brown sugar
1/4 cup butter or 1/4 cup margarine
1 tablespoon fresh garlic, minced (optional)

Steps:

  • Cook the asparagus in boiling water for 2 minutes; drain and set aside.
  • Melt butter or margarine.
  • Mix Worcestershire sauce, brown sugar, butter and garlic in a bowl.
  • Wrap the asparagus in bundles of 4-5 stalks with a piece of bacon. Place bundles in the bottom of a baking dish.
  • Pour sauce over the bundles and bake at 325°F until bacon is crispy.
  • Remove and serve warm.

1 tablespoon Montreal steak seasoning
½ pound thin asparagus spears, trimmed
1 teaspoon olive oil

⅓ cup grated Parmesan cheese
½ jarred roasted red pepper, cut into six 1/2-inch strips
6 toothpicks
1 tablespoon grated Parmesan cheese, or to taste

Steps:

  • Butterfly or pound steak with a meat mallet to 1/4-inch thickness. Cut into 6 strips, approximately 2 inches wide by 5 inches long. Season both sides with Montreal steak seasoning and place in the refrigerator.
  • Preheat Panasonic Countertop Induction Oven to Medium-High on the "Grill" setting.

¾ cup cream cheese
1 ½ tablespoons prepared horseradish

Steps:

  • Bring a pot of water to a boil. Drop asparagus into boiling water and cook for 2 minutes; drain. Immediately plunge asparagus into a bowl of iced water.
  • Mix cream cheese, horseradish, parsley, and chopped chives in a bowl. Lay thinly sliced beef onto a large sheet of waxed paper. Spread cream cheese mixture over each roast beef slice.   • Preheat the oven to 400 degrees F. Divide the asparagus spears into 12 bundles. Carefully wrap 1 piece of bacon around each bundle, starting about 1/2 inch from the bottom of the tips. 1 teaspoon minced garlic
1/4 cup fine dried bread crumbs
Pinch gray salt
Freshly ground pepper
1 tablespoon finely chopped fresh parsley
1 teaspoon freshly grated lemon zest
1 tablespoon freshly grated Parmesan cheese
Unsalted butter for baking dish
1 large bunch asparagus, about 1 pound, trimmed to even lengths and cooked for 4 minutes in boiling, salted water
2 tablespoons extra-virgin olive oil
Gray salt and freshly ground pepper
8 thin slices prosciutto

Steps:

  • To make the seasoned bread crumbs, heat the olive oil in a small skillet over medium-high heat until hot. Add the garlic and sauté briefly until pale gold. Add the bread crumbs, season with salt and pepper, and lower the heat to medium. Cook, stirring occasionally, until the bread crumbs are toasted, about 3 minutes. Pour into a small bowl and add the parsley, lemon zest, and Parmesan. Toss well. (The crumbs keep, tightly sealed and refrigerated, for several days.)
  • Preheat the oven to 400°F. Butter a shallow baking dish that is long enough to hold the asparagus. Toss the cooled asparagus with the olive oil and season with salt and pepper.
  • Divide the asparagus into 4 equal bundles. Arrange 2 slices of the prosciutto on a work surface so they slightly overlap each other. Place an asparagus bundle on top and roll up carefully in the prosciutto. Arrange in the prepared baking dish. Flatten the top of each bundle slightly and sprinkle with one-fourth of the seasoned bread crumbs.
  • Roast in the oven until heated through and crisp, about 10 minutes. Serve at once.

Cook the asparagus in boiling water for 2 minutes; drain and set aside. Melt butter or margarine. Mix Worcestershire sauce, brown sugar, butter and garlic in a bowl. Wrap the asparagus in bundles of 4-5 stalks with a piece of bacon. Place bundles in the bottom of a baking dish.
