Provided by Boomette

Categories     Vegetable

Time 22m

Yield 4 serving(s)

Number Of Ingredients 11

3 lbs ripe tomatoes
1 sweet onion, such as Vidalia, cut into 1-inch pieces (about 4 oz)
2 large garlic cloves
1/4 jalapeno pepper, seeded & cut into 1/2-inch pieces (or less depending on your tolerance)
3/4 teaspoon salt
2 tablespoons olive oil
1/4 teaspoon Tabasco sauce (or less if desired)
3 cups loosely packed spinach leaves
1/4 cup oil (a mixture of canola & olive oil)
1/4 teaspoon salt
1/4 cup water

Steps:

  • For the tomato soup:.
  • Cut the tomatoes into 2- to 3-inch chunks. Finely puree the tomatoes, onion, garlic, jalapeno, salt, and olive oil in a blender or food processor. Push the puree through a food mill fitted with the fine screen, then add enough Tabasco to the soup to suit your taste. (You should have about 6 cups of soup.) Refrigerate until cool.
  • For the spinach coulis:.
  • Pick out and discard any damaged leaves and seal the leaves in a plastic bag. Place the bag in a microwave onion and microwave the spinach on high for 1 1/2 minutes.
  • Transfer the spinach to a blender. Add the oil, salt, and water and process for about 1 minute, stopping the machine once or twice to push any pieces of spinach clinging to the sides down into the mixture. When it's smooth, transfer the spinach puree to a bottle or jar, cover tightly, and refrigerate.
  • To serve, ladle out about 1 1/2 cups soup per person. Garnish each bowl with 1 to 2 tablespoons of spinach coulis.
  • Note: The spinach coulis can be made up to a week ahead and refrigerated.

CHILLED TOMATO BASIL SOUP

Chilled Tomato Basil Soup image

Categories     Soup/Stew     Food Processor     Tomato     Bake     Lunch     Basil     Summer     Chill     Gourmet

Yield Makes about 6 cups, serving 6

Number Of Ingredients 14

2 1/2 pounds (about 6) tomatoes, cored and cut into chunks
1 tablespoon cornstarch
1/2 cup beef broth
1 tablespoon fresh lemon juice
1/2 teaspoon sugar
10 whole fresh basil leaves plus 1/3 cup chopped fresh basil leaves for garnish
sour cream for garnish
extra-virgin olive oil for drizzling the soup
as an accompaniment
garlic baguette toasts:
1 large garlic clove, minced or forced through a garlic press
1/4 cup olive oil
a French baguette, cut lengthwise into 6 long wedges
coarse salt to taste

Steps:

  • To make the soup:
  • In a food processor purée the tomatoes and force the purée through a fine sieve into a saucepan, pressing hard on the solids. In a small bowl stir together the cornstarch and the broth and stir the mixture into the tomato purée. Bring the mixture to a boil, stirring, remove the pan from the heat, and stir in the lemon juice, the sugar, the whole basil leaves, and salt and pepper to taste. Let the soup cool and chill it, covered, for at least 8 hours. The soup may be made 2 days in advance and kept covered and chilled.
  • Discard the whole basil leaves, ladle the soup into 6 bowls, and garnish each serving with a dollop of the sour cream and some of the chopped basil. Drizzle the soup with the oil and serve it with the toasts.
  • To make the garlic baguette toasts:
  • In a small skillet cook the garlic in the oil over moderate heat, stirring, until it begins to turn golden, brush the bread wedges with the oil, and on a baking sheet bake them in the middle of a preheated 375°F. oven for 10 minutes, or until they are golden. Sprinkle the toasts with the salt and break them in half. Makes 12 toasts.

Categories     project, soups and stews, appetizer

Time 40m

Yield 4 to 6 servings

Number Of Ingredients 15

2 tablespoons extra-virgin olive oil
1 large leek, white part only, split, rinsed well, coarsely chopped
1 stalk celery, coarsely chopped
1 small bulb fennel, coarsely chopped
1 medium red bell pepper, stemmed, ribs removed, seeded and coarsely chopped
1/2 medium Spanish onion, coarsely chopped
1/2 bulb garlic, unpeeled, cut crosswise in half and crushed gently
1 sprig thyme, 1 sprig rosemary, 1/4 bunch parsley, 3 sprigs basil, 3/4-inch-diameter bundle of dry fennel sticks, all tied together with kitchen string
3/4-inch-diameter of dry fennel sticks, all tied together with kitchen string
1 tablespoon anise seeds, 1 tablespoon fennel seeds, 1 teaspoon coriander seeds, all placed on a thick square of cheesecloth, gathered into a bundle and tied with kitchen string
15 large, ripe Carmello or beefsteak tomatoes, each cut into 8 pieces
Salt and freshly ground white pepper to taste
Tabasco sauce to taste
Celery salt to taste
6 ounces guacamole

Steps:

  • Heat the oil in a large saucepan over medium heat, add the vegetables (but not the tomatoes). Cover and sweat for 10 minutes, until soft but not brown. Add the bouquets garnis and tomatoes to 3 cups water. Bring to a boil and cook for 15 minutes, until the tomatoes are softened but not overcooked, then season with salt and pepper.
  • Transfer the mixture to a large heatproof bowl and cool in a container of ice and water. (This will allow the tomatoes to retain their color.)
  • Remove the bouquets garnis and, in batches, puree the mixture in a blender. Pass through a food mill into a large bowl and season to taste with salt, white pepper, Tabasco and celery salt. Refrigerate until cold (but not freezing) to taste the full flavor of the tomatoes.
  • Ladle the cold tomato soup into soup bowls and place a spoonful of the guacamole in the center and then garnish with a basil flower.
