VEGAN APPLE CINNAMON WAFFLES
Cinnamon apple waffles made in 1 bowl and 30 minutes. Wholesome, simple, vegan, and perfect for both everyday and special occasions.

- Start by sautéing your apples. Heat a large skillet over medium heat. Once hot add butter, then apples and stir. After a few minutes add in brown sugar and cinnamon. Cover to let steam and soften, stirring frequently. Once softened (about 4-5 minutes) remove lid to let caramelize a bit more. Remove from heat.
- Next, prepare your waffles. Start by preparing flax egg by combining water and flaxseed in a large bowl and letting rest for 5 minutes.
- Add maple syrup, applesauce, melted butter or oil, brown sugar and whisk. Add almond milk and stir once more.
- Add flour, baking powder, salt and cinnamon to a sifter and sift over wet ingredients. Stir until just combined. Gently fold in oats, then half of the apples. If batter appears too thick, add a little almond milk. Let batter rest for 5 minutes while preheating waffle iron.
- Once preheated, generously spray the waffle iron with non-stick cooking spray and spoon about 1/2 cup of the batter onto the center of the iron, press down to spread the batter, and cook according to your machine's instructions. I like to set mine to the darkest setting so it gets extra crispy.
- Once done, remove and place on cooling rack to let steam roll off and crisp up a bit. Serve warm with vegan butter (such as Earth Balance) and maple syrup, and the leftover apples. Store in an airtight container in the freezer and warm in the toaster or oven.

- Combine all cinnamon apples ingredients in saucepan. Cook 15-20 minutes over medium heat, stirring occasionally, until apples are tender.
- Combine baking mix, milk, egg and oil in bowl; mix well. Carefully stir in 2 1/2 cups whipped cream until just mixed. Let mixture rest 5 minutes.
- Heat waffle iron. Cook waffles according to manufacturer's directions.

- First, preheat your waffle iron to medium heat.
- In a large bowl, mix together all dry ingredients.Then add wet ingredients, minus the coconut oil.
- Partially melt the coconut oil and add that to the batter. I microwave my coconut oil for about 20 seconds. Mix until smooth.
- Spray waffle iron with coconut oil cooking spray on both sides. Then, scoop in about ⅔ cup of batter. Close the waffle iron, flip, and let cook for about 1 minute and 30 seconds to 2 minutes and 30 seconds (depending on how hot your iron is).
- Combine the ingredients in sauce pan and bring to a boil over medium heat. If it begins to boil over, quickly stir down and momentarily slide it off the heat. Reduce heat to low and let simmer for 30 minutes or until the caramel begins to thicken and can coat the back of a spoon. For thicker caramel, let simmer longer.
- Remove from heat and let cool for 5 minutes. The longer it cools, the thicker it will be.
- Store the cooled caramel sauce in an air-tight container for up to 2 weeks.

CARMEL BIG APPLE WAFFLE WITH SALTED CARAMEL SAUCE

- For the apple compote: Combine the apples, cinnamon, lemon juice, sugar, salt and 1/2 cup water in a medium saucepan over medium heat. Cook until the apples start to break down, 30 to 45 minutes. Set aside.
- For the salted caramel sauce: Combine the sugar and 1/4 cup water in a small saucepan over medium-high heat. Cook without stirring, brushing down any sugar crystals from the sides of the pan with a wet pastry brush. Watch carefully, when the sugar turns a dark amber color, remove the saucepan from the heat and stir in cream and butter (it will bubble, so be careful) and then the salt.
- Serve the waffles topped with some apple compote, a drizzle of caramel sauce and a dollop of whipped cream. Garnish with an apple chip.
BELGIAN WAFFLES WITH HOMEMADE CINNAMON SUGAR BUTTER AND SAUTEED CIDER APPLES

- For the waffles: Preheat your waffle iron and brush the grate with butter. Whisk together the flour, baking powder, baking soda, sugar and salt in a medium bowl.
- Whisk together the eggs, melted butter and buttermilk in a small bowl. Add the wet ingredients to the dry ingredients and mix until just combined. Do not overmix. Set the batter aside at room temperature for 20 minutes. Cook the waffles according the manufacturer's directions until golden brown. Remove to a baking rack. Cut or tear each waffle into quarters. Top each quarter with some of the cinnamon sugar butter and sauteed apples.
- For the sauteed apples: Combine the apple cider, light brown sugar, and cinnamon sticks in a large saute pan over high heat and boil until reduced by half and thickened to a syrup.
- Remove the cinnamon stick, whisk in the butter and add the apples and cook until soft and caramelized. Set aside.
- For the homemade cinnamon sugar butter: Combine the heavy cream and salt in a stand mixer fitted with the whisk attachment and beat until it becomes butter. Combine the sugar and cinnamon in a small bowl and fold into the butter. Scrape into a bowl. (Yield: 1 cup)

CAROL'S CINNAMON WAFFLES
If you like those cinnamon waffles from the frozen food department of the grocery store, you'll love these! I developed this recipe because I don't care for syrup. Most waffles need the sweetness of syrup to make them special. These waffles are yummy just as they are; no syrup necessary! Whipped cream and fruit are a great addition if you want to go all out or just add butter and powder sugar to the top. These may brown quicker than standard waffles because of the sugar in them, so test the first one and adjust the time. I have also added 2 tablespoons ground flaxseed; you can't taste a difference. Enjoy!

- Make the apple topping before making the waffles because they cook up so fast and the apple topping will stay warm while the waffles are cooking.
- For the caramel apple topping combine diced apples, butter, brown sugar, cinnamon, syrup, and chopped pecans in a small saucepan and cook over medium heat for about 5 to 6 minutes or until the apples are very tender. Leave in the saucepan to stay warm while the waffles cook.
- Heat waffle iron and spray with non stick cookie spray. Place 4 cinnamon rolls in the waffle iron and cook for about 1 1/2 minutes or until done. (You may need to open slightly and peek inside)
- When done remove to a plate and frost immediately.
