VEGAN APPLE CINNAMON WAFFLES

Vegan Apple Cinnamon Waffles image

Cinnamon apple waffles made in 1 bowl and 30 minutes. Wholesome, simple, vegan, and perfect for both everyday and special occasions.

Provided by Minimalist Baker

Categories     Breakfast

Time 30m

Number Of Ingredients 16

3 medium apples ((2 tart, 1 sweet // peeled and cubed))
1 Tbsp vegan butter or olive oil
1-2 Tbsp brown sugar ((optional))
1/4 tsp cinnamon
1 Tbsp flaxseed meal ((to make flax egg))
2 ½ Tbsp water ((to make flax egg))
1 Tbsp vegan butter ((melted // or sub avocado or coconut oil))
1 scant cup unsweetened almond milk
1 Tbsp maple syrup or agave ((or honey if not vegan))
1/4 cup unsweetened applesauce or pumpkin puree
1/4 cup brown sugar
3/4 tsp cinnamon
1/4 tsp salt
1/2 Tbsp baking powder
1 cup whole-wheat pastry flour
1/4 cup oats

Steps:

  • Start by sautéing your apples. Heat a large skillet over medium heat. Once hot add butter, then apples and stir. After a few minutes add in brown sugar and cinnamon. Cover to let steam and soften, stirring frequently. Once softened (about 4-5 minutes) remove lid to let caramelize a bit more. Remove from heat.
  • Next, prepare your waffles. Start by preparing flax egg by combining water and flaxseed in a large bowl and letting rest for 5 minutes.
  • Add maple syrup, applesauce, melted butter or oil, brown sugar and whisk. Add almond milk and stir once more.
  • Add flour, baking powder, salt and cinnamon to a sifter and sift over wet ingredients. Stir until just combined. Gently fold in oats, then half of the apples. If batter appears too thick, add a little almond milk. Let batter rest for 5 minutes while preheating waffle iron.
  • Once preheated, generously spray the waffle iron with non-stick cooking spray and spoon about 1/2 cup of the batter onto the center of the iron, press down to spread the batter, and cook according to your machine's instructions. I like to set mine to the darkest setting so it gets extra crispy.
  • Once done, remove and place on cooling rack to let steam roll off and crisp up a bit. Serve warm with vegan butter (such as Earth Balance) and maple syrup, and the leftover apples. Store in an airtight container in the freezer and warm in the toaster or oven.

HEALTHY CARAMEL APPLE CINNAMON WAFFLES

Healthy Caramel Apple Cinnamon Waffles image

'Tis the season of apples and cinnamon! You're going to love these HEALTHY caramel apple cinnamon waffles made with 100% whole wheat flour, apple chunks, tons of cinnamon, and a homemade caramel sauce made from full-fat coconut oil!

Provided by Lee Funke

Categories     Breakfast

Time 13m

Number Of Ingredients 17

1.5 cup white whole wheat pastry flour
1 cup apples (diced)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 tablespoons cinnamon
⅛ teaspoon salt
2 eggs (large)
1 teaspoon vanilla extract
1/4 cup maple syrup
2 tablespoons coconut oil (room temperature)
1 cup unsweetened almond milk**
1 cup full-fat coconut milk
1/2 cup maple syrup
1 tablespoon unsalted butter
1/2 teaspoon vanilla extract
seeds scraped from 1/2 a vanilla bean
pinch of fine sea salt

Steps:

  • First, preheat your waffle iron to medium heat.
  • In a large bowl, mix together all dry ingredients. Then add wet ingredients, minus the coconut oil.
  • Partially melt the coconut oil and add that to the batter. I microwave my coconut oil for about 20 seconds. Mix until smooth.
  • Spray waffle iron with coconut oil cooking spray on both sides. Then, scoop in about ⅔ cup of batter. Close the waffle iron, flip, and let cook for about 1 minute and 30 seconds to 2 minutes and 30 seconds (depending on how hot your iron is).
  • Combine the ingredients in sauce pan and bring to a boil over medium heat. If it begins to boil over, quickly stir down and momentarily slide it off the heat. Reduce heat to low and let simmer for 30 minutes or until the caramel begins to thicken and can coat the back of a spoon. For thicker caramel, let simmer longer.
  • Remove from heat and let cool for 5 minutes. The longer it cools, the thicker it will be.
  • Store the cooled caramel sauce in an air-tight container for up to 2 weeks.

CARMEL BIG APPLE WAFFLE WITH SALTED CARAMEL SAUCE

Carmel Big Apple Waffle with Salted Caramel Sauce image

Provided by Amanda Freitag

Categories     main-dish

Time 1h15m

Yield 4 to 6 servings

Number Of Ingredients 12

4 Fuji or local apples, cored and quartered
1 cinnamon stick
1 lemon, juiced
2 tablespoons sugar
Pinch salt
1 cup sugar
3/4 cup heavy cream
3 1/2 tablespoons butter
1 teaspoon sea salt
4 to 6 waffles (use your favorite waffle mix)
Whipped cream, for serving
Apple chips, for garnish

Steps:

  • For the apple compote: Combine the apples, cinnamon, lemon juice, sugar, salt and 1/2 cup water in a medium saucepan over medium heat. Cook until the apples start to break down, 30 to 45 minutes. Set aside.
  • For the salted caramel sauce: Combine the sugar and 1/4 cup water in a small saucepan over medium-high heat. Cook without stirring, brushing down any sugar crystals from the sides of the pan with a wet pastry brush. Watch carefully, when the sugar turns a dark amber color, remove the saucepan from the heat and stir in cream and butter (it will bubble, so be careful) and then the salt.
  • Serve the waffles topped with some apple compote, a drizzle of caramel sauce and a dollop of whipped cream. Garnish with an apple chip.

CAROL'S CINNAMON WAFFLES

Carol's Cinnamon Waffles image

If you like those cinnamon waffles from the frozen food department of the grocery store, you'll love these! I developed this recipe because I don't care for syrup. Most waffles need the sweetness of syrup to make them special. These waffles are yummy just as they are; no syrup necessary! Whipped cream and fruit are a great addition if you want to go all out or just add butter and powder sugar to the top. These may brown quicker than standard waffles because of the sugar in them, so test the first one and adjust the time. I have also added 2 tablespoons ground flaxseed; you can't taste a difference. Enjoy!
