LAURIE COLWIN'S CREAMED SPINACH WITH JALAPEñO PEPPERS
This recipe is from the celebrated food writer Laurie Colwin, and in some ways it is quintessentially hers. There's the delicious richness of the dish, its unfussiness and nostalgic value. There is the constant awareness of the plight of the busy home cook, those who would just as soon use a package of frozen spinach if the results are just as good as if you washed and chopped an untold number of bunches of fresh spinach yourself. And there is a twist: the jalapeños, which are a preventative measure against the gloppy blandness of steakhouse creamed spinach, adding sharpness to the dish but not too much heat. You can use either fresh or pickled jalapeños here - the latter add nice zing - and panko bread crumbs are a good substitution for fresh if you don't have them (or a few pieces of stale bread) in the pantry. - Heat oven to 300 degrees. Meanwhile, cook spinach according to package directions. Drain, reserving 1 cup of liquid, and chop finely.
- Butter a shallow 8-inch-square casserole dish or other shallow 4- to 6-cup baking dish. Melt remaining 4 tablespoons butter in a saucepan and add flour. Blend and cook 2 to 3 minutes. Do not brown. Add onion and garlic.
- Add the spinach liquid slowly, then add evaporated milk, some black pepper, celery salt and cheese. Mix well and add jalapeño and spinach. Cook until all is blended.
- Turn into the casserole dish, top with buttered bread crumbs and bake until lightly browned, about 45 minutes.

Steps:
- Combine milk, spinach liquid and garlic in a 1-quart microwave-safe measuring cup or small bowl covered with a saucer, and microwave (or heat slowly in a medium saucepan) until very hot and steamy. Let stand for 5 to 10 minutes to soften garlic.
- Melt butter in a Dutch oven over medium-high heat. Whisk in flour. Add hot milk mixture all at once, then whisk until smooth. Stir in spinach; cook until sauce is thick and bubbly and spinach is tender but still green, about 5 minutes. Stir in cheese, nutmeg, and a generous sprinkling of salt and pepper. Serve hot.

LAWRY'S FAMOUS CREAMED SPINACH
Lawry's Prime Rib restaurant's creamy spinach recipe from the 50s!

Steps:
- Blanch spinach in batches by cooking it in salted, boiling water for a few seconds, then plunging it in ice water to stop the cooking. (To save time, use frozen, chopped spinach!)
- Squeeze out excess liquid and chop.
- In a medium-sized skillet over medium heat, saute bacon 2 or 3 minutes. Add diced onion and continue to cook until onion is translucent another 3 or 4 minutes. Add garlic, spinach and seasonings and cook another minute.
- In a medium saucepan, heat butter until melted. Add flour, stirring with a spoon until flour is incorporated and begins to turn slightly golden, about 2 minutes. Whisk in milk and bring to a boil. Reduce heat and cook until sauce begins to thicken about 3 minutes.
- Add cream sauce to the spinach mixture.
- In a food processor pulse spinach 3 or 4 times. It should retain its texture. Taste and adjust seasonings if necessary.
- Can be made a day ahead of time.

LAWRYS CREAMED SPINACH
This is supposed to be like the famous Prime Rib Houses creamed spinach. All I know is that it is very tasty.

Steps:
- In a medium skillet, cook bacon until almost crisp.
- Add onion to bacon and cook until onion is tender about 10 minutes.
- Remove from heat.
- Add flour and seasonings; blend well.
- Gradually stir in milk; cook and stir over low heat until thickened.
- Add spinach and mix well.
- If too thick add more milk.
CREAMED SPINACH (AFTER LAURIE COLWIN
Steps:
- Cook the spinach, drain, and save 1 cup of the liquid. Melt the butter in a saucepan and add the flour. Blend and cook a little. DO NOT BROWN. Add onion and garlic. Add one cup of spinach liquid slowly, then add evaporated milk, salt, pepper and cheese. Cook until cheese is mostly melted, then add jalapeno peppers and the spinach. Cook until all is blended. Turn into a buttered casserole topped with buttered bread crumbs and bake for about 45 minutes at 300.
CREAMED SPINACH A LA LAWRY'S
I worked at Lawry's the Prime Rib on restaurant row in Los Angeles for many years. This is the recipe they gave out for their famous creamed spinach. Fabulous! Even better if you use heavy cream rather than the half and half and I always add a touch of sugar too!

- Cook spinach according to package directions, squeeze thoroughly to remove all water. Fry bacon and onions together until onions are tender, about 10 minutes. Remove from heat. Add flour, seasoned salt, seasoned pepper and garlic. Blend thoroughly. Slowly add half and half or cream, return to heat and stir until thickened. Add spinach and mix thoroughly. Adjust seasonings if needed. If too salty, add some sugar. If you like nutmeg, that makes a nice addition too.
