CUCUMBER-ELDERFLOWER SPARKLERS



Cucumber-Elderflower Sparklers image

Number Of Ingredients 6

2 Persian cucumbers
Finely grated zest and juice of 1 lime
3/4 cup elderflower liqueur (such as St-Germain)
Orange bitters
6 to 8 sugar cubes
1 750-ml bottle champagne or other sparkling white wine, chilled

Steps:

  • Grate the cucumbers on the large holes of a box grater into a medium bowl. Wrap the grated cucumber in a piece of cheesecloth or a clean kitchen towel and squeeze the cucumber juice into a pitcher; discard the grated cucumber. Stir the lime zest and juice, elderflower liqueur and 5 or 6 dashes orange bitters into the cucumber juice. Refrigerate until ready to serve, at least 30 minutes.
  • Drop a sugar cube into each flute and add a few dashes of orange bitters to each. Pour the champagne into the pitcher and stir. Pour into the flutes.

10 cm piece of cucumber
100ml elderflower cordial
100ml gin
1l bottle tonic water , to serve

Steps:

  • Peel 2 long strips from the piece of cucumber and put in a small tupperware for transporting. Grate the remaining cucumber into a sieve set over a bowl and press down on it with the back of a spoon to extract as much juice as possible. Add the elderflower cordial and gin to the cucumber juice and put in a bottle ready for travelling. At your picnic, wind the strips of cucumber around inside 2 glasses, pour in a quarter of the cucumber gin mixture, and top up with with a quarter of the bottle of tonic water to serve.

8 ounces elderflower liqueur, such as St. Germain
1 cup limeade, store-bought or homemade
1 medium English cucumber, cut into round slices (about 3 cups)
One 750-milliliter bottle dry white wine, such as Pinot Grigio
Fresh mint sprigs, for garnish
Ice, for serving

Steps:

  • Stir together the gin, elderflower liqueur, limeade, cucumber slices and wine in a carafe or pitcher. Wrap and refrigerate until chilled and the cucumbers infuse the mixture, about 3 hours. Serve over ice in small rocks glasses. Garnish each drink with a mint sprig.

12 strawberries, hulled and sliced (1 1/4 cups), plus whole berries for serving
12 thin cucumber slices, halved (3/4 cup), plus whole rounds for serving
2 tablespoons superfine sugar
3 ounces fresh lemon juice
9 ounces gin, such as Citadelle, chilled
6 ounces St-Germain, chilled
Club soda, chilled; and Peychaud's bitters, for serving

Steps:

  • Muddle sliced strawberries, halved cucumber slices, sugar, and lemon juice in the bottom of a pitcher until fruits break down and release most of their juices and sugar has dissolved. Stir in gin and St-Germain to combine. Fill 6 glasses halfway with ice. Divide fruit-and-gin mixture evenly among glasses. Top each with 1 to 2 ounces club soda; stir once. Top each with a few dashes of bitters, whole strawberries, and cucumber rounds; serve immediately.
