TORTILLA CASSEROLE WITH TURKEY

Number Of Ingredients 24

3/4 cup plus 1 tablespoon corn oil
18 corn tortillas
3 medium zucchini, thinly sliced
2 cups chayote* or other squash, thinly sliced
1 cup fresh or thawed frozen corn kernels
2 cups green beans, steamed and cut into 1-inch pieces
2 to 3 cups leftover turkey, shredded
2 cups (8 ounces) shredded Monterrey Jack or panela cheese**
6 cups Salsa de Tomatillo***
2 cups sour cream
1 tablespoon milk
Sea salt and ground black pepper to taste
Salsa de Tomatillo
Makes 5 to 6 cups.
60 tomatillos, husked and rinsed (about 3 pounds)
8 serrano chiles (seeded and deveined for a milder dish)
4 cups water
5 garlic cloves, chopped
1 cup coarsely chopped cilantro leaves
2 tablespoons vegetable oil
Sea salt to taste
*Chayote, also known as christophene and mirliton, is a mild-tasting, pear-shaped squash. Any summer squash can be substituted.
**Panela is a salty, crumbly cow's milk cheese. Feta is a good substitute.
***Tomatillos are often referred to as "green tomatoes," but are members of the gooseberry family. To prepare tomatillos for the salsa, remove their papery husks and rinse away their sticky outer coating. Or, canned whole tomatillos are available under the San Marcos brand.

Steps:

  • Prepare the Salsa de Tomatillo. In a heavy, 6-quart, nonreactive saucepan over medium-high heat, combine tomatillos, chiles, and water; bring to a boil. Reduce heat to low and simmer until the tomatillos are tender, about 10 to 12 minutes. Drain, reserving 1/2 to 1 cup of the cooking liquid. Working in batches, combine tomatillos, chiles, reserved cooking liquid, garlic, and cilantro in a blender and blend to a smooth puree. In a heavy, 12-inch, deep-sided skillet, heat the oil over medium heat and cook the tomatillo mixture for about 10 minutes, stirring often. Add salt to taste.
  • Prepare the casserole. In a heavy, 10-inch skillet, heat 3/4 cup of the corn oil over medium heat until the oil shimmers. Using tongs, submerge the tortillas, one at a time, in the hot oil for about 10 seconds (the tortillas should remain pliable). Transfer to a baking sheet lined with paper towels to drain. Lightly oil a 13-by-9-inch baking dish and set aside. In a heavy, 12-inch, nonstick skillet, heat the remaining 1 tablespoon of oil over medium heat until shimmering. Add both kinds of squash and cook over medium heat about 5 minutes. Add the corn and green beans and cook until just tender, about 2 to 3 minutes. Add salt and pepper to taste.
  • Preheat oven to 375 degrees. Arrange 6 of the softened tortillas in the prepared baking dish, overlapping the edges. Cover with half of the shredded turkey, half of the vegetable mixture, 1 cup of the cheese, 1 cup of the Salsa de Tomatillo, and 3/4 cup of the sour cream. Repeat the layering process with 6 additional tortillas, the remaining turkey, vegetable mixture, and cheese, 1 cup of the Salsa de Tomatillo, and 3/4 cup of the sour cream. Top with the remaining 6 tortillas. Drizzle with 1 cup of the Salsa de Tomatillo, cover with foil, and bake in preheated oven for about 50 minutes, or until heated through.
  • During the last few minutes of the cooking time, heat the remaining 3 cups Salsa de Tomatillo over low heat and keep warm. In a small bowl, whisk together the remaining 1/2 cup sour cream and the milk; drizzle over the hot casserole when it comes out of the oven. Serve the hot casserole with hot Salsa de Tomatillo on the side.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a mixing bowl, combine the chicken soup, mushroom soup, chile peppers and sour cream.
  • Line the bottom of a 9x13 inch baking pan with corn tortillas. Follow with a layer of turkey. Pour soup mixture over turkey, sprinkle with 1/2 of the cheese. Repeat layers and top with cheddar cheese. Bake for 30 to 45 minutes or until cheese is browned and bubbly.

2 10-ounce cans medium-hot enchilada sauce
1 16-ounce can refried beans, divided
1 tablespoon chopped canned chipotle chiles*
16 5- to 6-inch-diameter corn tortillas
1 cup chopped green onions (about 4 large), divided
2 cups diced cooked turkey meat (about 10 ounces), reheated, divided
1 1/3 cups (packed) coarsely grated Monterey Jack cheese (about 5 1/2 ounces), divided
1/2 cup crumbled queso fresco or feta cheese (about 4 ounces), divided
Diced tomatoes
Diced avocado

Steps:

  • Position rack in center of oven and preheat to 200°F. Bring enchilada sauce to simmer in medium skillet over medium heat. Reduce heat to very low. Combine refried beans and chipotles in another medium skillet. Stir bean mixture over medium heat until heated through, about 5 minutes. Remove from heat.
  • Dip 1 tortilla into enchilada sauce just until softened, about 10 seconds. Using tongs, transfer tortilla to ovenproof plate. Spread 1/3 cup bean mixture over. Top with 1 tablespoon green onions. Dip second tortilla into sauce; place atop bean mixture. Top with 1/2 cup turkey meat, then 1 tablespoon green onions. Dip third tortilla into sauce. Place atop turkey; sprinkle with 1/3 cup Jack cheese, then 1 tablespoon green onions. Dip fourth tortilla into sauce; place atop Jack cheese. Sprinkle with 2 tablespoons queso fresco. Repeat procedure with remaining tortillas, bean mixture, green onions, turkey, Jack cheese, and queso fresco. Transfer to oven and cook until heated through, about 5 minutes. Drizzle remaining enchilada sauce over tortilla stacks. Sprinkle each with diced tomatoes, avocado, and remaining green onions and serve warm.
  • *Chipotle chiles are simply dried, smoked jalapeños, they're sold canned in a spicy tomato sauce, sometimes called adobo. Find them at some supermarkets, specialty foods stores, and Latin markets.

6 flour tortillas (medium)
1 lb ground turkey
1 onion
1 (16 ounce) can black beans
1 (1 1/4 ounce) packet taco seasoning
8 ounces sour cream
3/4 cup salsa
2 cups cheddar cheese (shredded)

Steps:

  • Brown turkey and small onion until meat is completely done.
  • Add taco seasoning packet and follow directions for cooking on back.
  • Spray non-stick casserole dish (9x9) with non-stick cooking spray.
  • Cut flour tortillas into bite size pieces and layer 1/2 of tortillas on bottom of casserole dish.
  • Add 1/2 of the cheese, sour cream, salsa and black beans.
  • Start with the remaining tortillas and repeat layering.
  • You may top with extra cheese or salsa if preferred. Other options include: corn, red pepper, green pepper, jalapenos, or any other ingredient.
  • ***play with ingredients, if you like more sour cream, simply add more, if you like less, add less. Don't be afraid to test different options.
  • Bake at 350 until all cheese is melted and everything is heated thoroughly (usually about 30-40 minutes). You may wish to cover the dish with foil to prevent overbaking the top -- then removing it for the last 5-10 minutes.

1/4 teaspoon salt
4 cups cooked chicken, diced (turkey or deli rotisserie chicken can be used)
6 ounces roasted red peppers, drained (or three homemade roasted red peppers)
1 bunch coriander (or parsley)
8 ounces Mexican blend cheese, shredded
10 (7 inch) flour tortillas
2 cups salsa

Steps:

  • Preheat oven to 350°F.
  • In a large bowl stir together sour cream, chilies, green onions, garlic, paprika, cumin and salt.
  • Cut or tear chicken into bite sized pieces.
  • Cut peppers into large strips.
  • Cut coriander or parsley leaves coarsely (you should have about 3 cups).
  • Stir peppers and 1 cup each of coriander and cheese into sour cream mixture.
  • Spray 9 x 13 inch pan with cooking spray.
  • Completely cover bottom of pan with a single layer of tortillas, do not overlap, use scissors to cut them to fit.
  • Spread 1/3 of sour cream mixture on tortillas.
  • Spoon 1 cup of salsa evenly on top. do not mix as the colours look nicer if they remain separate.
  • Repeat layering, cutting tortillas and not overlapping.
  • For final layer use two tortillas only, and fill in spaces if you have cut bits left.(does not have to be completely covered).
  • Spread with remaining sour cream mixture.
  • Sprinkle with 1/2 cup coriander (or parsley).
  • Then sprinkle with 1 cup cheese.
  • Bake at 350°F covered for 25 minutes.
  • Remove cover and bake until bubbly and cheese is melted (15 to 20 minutes).
  • Sprinkle with remaining coriander (or parsley).

2 cups cottage cheese, low-fat
1 tablespoon guacamole, Epicure's Dip Mix Seasoning
4 cups turkey, cooked & diced
2 teaspoons fajita seasoning mix, Epicure's
2 tomatoes, diced
1 teaspoon garlic, minced
4 tortillas, large whole wheat or 4 flavoured tortillas
1 (8 ounce) can black beans, drained and rinsed
1 cup low-fat cheese, grated
1 cup tomato sauce

Steps:

  • Preheat oven to 400°F.
  • Stir cream cheese and cottage cheese with Guacamole Dip Mix.
  • Toss turkey with Fajita Seasoning. In a separate bowl, stir tomatoes with Minced Garlic. Spray bottom and inside ring of a round spring form pan with oil.
