TORTILLA CASSEROLE WITH TURKEY
Steps:
- Prepare the Salsa de Tomatillo. In a heavy, 6-quart, nonreactive saucepan over medium-high heat, combine tomatillos, chiles, and water; bring to a boil. Reduce heat to low and simmer until the tomatillos are tender, about 10 to 12 minutes. Drain, reserving 1/2 to 1 cup of the cooking liquid. Working in batches, combine tomatillos, chiles, reserved cooking liquid, garlic, and cilantro in a blender and blend to a smooth puree. In a heavy, 12-inch, deep-sided skillet, heat the oil over medium heat and cook the tomatillo mixture for about 10 minutes, stirring often. Add salt to taste.
- Prepare the casserole. In a heavy, 10-inch skillet, heat 3/4 cup of the corn oil over medium heat until the oil shimmers. Using tongs, submerge the tortillas, one at a time, in the hot oil for about 10 seconds (the tortillas should remain pliable). Transfer to a baking sheet lined with paper towels to drain. Lightly oil a 13-by-9-inch baking dish and set aside. In a heavy, 12-inch, nonstick skillet, heat the remaining 1 tablespoon of oil over medium heat until shimmering. Add both kinds of squash and cook over medium heat about 5 minutes. Add the corn and green beans and cook until just tender, about 2 to 3 minutes. Add salt and pepper to taste.
- Preheat oven to 375 degrees. Arrange 6 of the softened tortillas in the prepared baking dish, overlapping the edges. Cover with half of the shredded turkey, half of the vegetable mixture, 1 cup of the cheese, 1 cup of the Salsa de Tomatillo, and 3/4 cup of the sour cream. Repeat the layering process with 6 additional tortillas, the remaining turkey, vegetable mixture, and cheese, 1 cup of the Salsa de Tomatillo, and 3/4 cup of the sour cream. Top with the remaining 6 tortillas. Drizzle with 1 cup of the Salsa de Tomatillo, cover with foil, and bake in preheated oven for about 50 minutes, or until heated through.
- During the last few minutes of the cooking time, heat the remaining 3 cups Salsa de Tomatillo over low heat and keep warm. In a small bowl, whisk together the remaining 1/2 cup sour cream and the milk; drizzle over the hot casserole when it comes out of the oven. Serve the hot casserole with hot Salsa de Tomatillo on the side.

- In a mixing bowl, combine the chicken soup, mushroom soup, chile peppers and sour cream.

STACKED ENCHILADAS WITH TURKEY AND CHIPOTLE BEANS

- Position rack in center of oven and preheat to 200°F. Bring enchilada sauce to simmer in medium skillet over medium heat. Reduce heat to very low. Combine refried beans and chipotles in another medium skillet. Stir bean mixture over medium heat until heated through, about 5 minutes. Remove from heat.
- Dip 1 tortilla into enchilada sauce just until softened, about 10 seconds. Using tongs, transfer tortilla to ovenproof plate. Spread 1/3 cup bean mixture over. Top with 1 tablespoon green onions. Dip second tortilla into sauce; place atop bean mixture. Top with 1/2 cup turkey meat, then 1 tablespoon green onions. Dip third tortilla into sauce. Place atop turkey; sprinkle with 1/3 cup Jack cheese, then 1 tablespoon green onions. Dip fourth tortilla into sauce; place atop Jack cheese. Sprinkle with 2 tablespoons queso fresco. Repeat procedure with remaining tortillas, bean mixture, green onions, turkey, Jack cheese, and queso fresco. Transfer to oven and cook until heated through, about 5 minutes. Drizzle remaining enchilada sauce over tortilla stacks. Sprinkle each with diced tomatoes, avocado, and remaining green onions and serve warm.
- *Chipotle chiles are simply dried, smoked jalapeños, they're sold canned in a spicy tomato sauce, sometimes called adobo. Find them at some supermarkets, specialty foods stores, and Latin markets.
GROUND TURKEY TORTILLA CASSEROLE
This is a recipe that I adapted from a few other tortilla casseroles and it is a quick & easy tummy satisfier!

- Brown turkey and small onion until meat is completely done.
- Add taco seasoning packet and follow directions for cooking on back.
- Spray non-stick casserole dish (9x9) with non-stick cooking spray.
- Cut flour tortillas into bite size pieces and layer 1/2 of tortillas on bottom of casserole dish.
- Add 1/2 of the cheese, sour cream, salsa and black beans.
- Start with the remaining tortillas and repeat layering.
- You may top with extra cheese or salsa if preferred. Other options include: corn, red pepper, green pepper, jalapenos, or any other ingredient.

- Preheat oven to 350°F.
- In a large bowl stir together sour cream, chilies, green onions, garlic, paprika, cumin and salt.
- Cut or tear chicken into bite sized pieces.
- Cut peppers into large strips.
- Cut coriander or parsley leaves coarsely (you should have about 3 cups).
- Stir peppers and 1 cup each of coriander and cheese into sour cream mixture.
- Spray 9 x 13 inch pan with cooking spray.
- Completely cover bottom of pan with a single layer of tortillas, do not overlap, use scissors to cut them to fit.
- Spread 1/3 of sour cream mixture on tortillas.
- Spoon 1 cup of salsa evenly on top. do not mix as the colours look nicer if they remain separate.
- Repeat layering, cutting tortillas and not overlapping.
- For final layer use two tortillas only, and fill in spaces if you have cut bits left.(does not have to be completely covered).
- Spread with remaining sour cream mixture.
- Sprinkle with 1/2 cup coriander (or parsley).
- Then sprinkle with 1 cup cheese.
- Bake at 350°F covered for 25 minutes.
- Remove cover and bake until bubbly and cheese is melted (15 to 20 minutes).
- Sprinkle with remaining coriander (or parsley).
- Let stand 10 minutes before serving.

TORTILLA CASSEROLE
Steps:
- Preheat the oven to 400°F.
- Combine the beans, tomatoes, chiles, corn, scallions, cumin, and oregano in a mixing bowl. Mix thoroughly.
- Lightly oil a wide, shallow 2-quart rectangular or round casserole and layer as follows: 5 tortillas, overlapping one another; half of the bean mixture; half of the cheese; and the optional vegetable layer. Repeat the tortilla, bean, and cheese layers.
- Bake the casserole for 12 to 15 minutes, or until the cheese is bubbly. Let stand for a minute or two, then cut into squares or wedges to serve. Pass the salsa and optional sour cream for topping.

- For the optional vegetable layer, use either 10 to 12 ounces lightly steamed and well-drained baby spinach or lightly sautéed thin slices of zucchini and/or yellow summer squash; you'll need two medium squashes for this.

- Preheat oven to 400°F.
- Stir cream cheese and cottage cheese with Guacamole Dip Mix.
- Toss turkey with Fajita Seasoning. In a separate bowl, stir tomatoes with Minced Garlic. Spray bottom and inside ring of a round spring form pan with oil.
- Spread 1 tortilla with 1/3 cheese mixture, then place into the spring form pan. Layer with 1/3 tomato mixture, 1/3 turkey mixture and 1/3 beans. Sprinkle with 1/4 cup cheese. Top with another tortilla and repeat layering. Last layer should be tortilla topped with remaining cheese.
