Black Currant Cake image

Soft black currant cake, easy to make and full of flavor. This rustic looking currant cake is what you need if you happen to get your hands on some berries. Only 6 ingredients.

250-300 g/ 8.8-10.6 oz/ 2-3 cups black currants
75 g/ 2.7 oz/ 1/3 cup unsalted butter (soft)
175 g/ 6.2 oz/ ¾ cup + 2 tablespoons granulated sugar
3 large eggs
175 g/ 6.2 oz/ 1 ½ cups all-purpose flour
1 teaspoon baking powder

Steps:

  • Remove the butter from the refrigerator a few hours before baking to allow it to get soft. Preheat the oven to 180 degrees Celsius/ 350 degrees Fahrenheit. Butter and flour a springform (20 cm/ 8 inches) or line the bottom of the springform with parchment paper.
  • Clean and dry the black currants. Set aside.
  • Cream the butter and the sugar, about 3-4 minutes. Add the eggs, one by one, mixing well in between. Mix the flour and the baking powder and sieve them over the mixture. Mix shortly again.
  • Place the batter into the prepared springform. Cover with the berries. Bake for about 40 minutes or until a skewer inserted in the middle of the cake comes out clean. Leave cool in the pan for about 10 minutes, remove and let cool on a wire rack. Serve as suggested above.

Fresh Boysenberries with Black-Currant-Tea Crème Anglaise image

This delightful custard sauce-infused with black currant tea for a unique accent-is made with milk instead of cream. Begin preparing it a day ahead.

Number Of Ingredients 5

3 cups whole milk
1/2 cup plus 6 tablespoons sugar
2 black currant tea bags
6 large egg yolks
4 1/2-pint baskets fresh boysenberries or blackberries

Steps:

  • Stir milk and 1/2 cup sugar in medium saucepan over medium heat until sugar dissolves. Increase heat and bring to boil. Add tea bags. Remove from heat; cover and let steep 15 minutes. Discard tea bags.
  • Whisk egg yolks in large bowl to blend. Bring milk mixture to simmer. Gradually whisk milk mixture into yolks. Return mixture to same saucepan. Stir over medium-low heat until custard thickens slightly and coats back of spoon when finger is drawn across, about 6 minutes (do not boil). Pour crème anglaise through fine strainer set over 4-cup measuring cup. Cool. Cover with plastic wrap; refrigerate overnight.
  • Mix boysenberries with remaining 6 tablespoons sugar. Let stand at room temperature at least 2 and up to 4 hours.
  • Divide chilled crème anglaise among 6 bowls or dessert glasses. Top with berry mixture, dividing equally, and serve.

4 egg yolks
3 tablespoons sugar
2 cups heavy cream
1 1/2 tablespoons sour cream
1 vanilla bean, split lengthwise

Steps:

  • In a medium mixing bowl, using a whip, whisk together the egg yolks and sugar until they are very pale yellow and smooth.
  • In a medium saucepan, bring to a boil the heavy cream, sour cream, and vanilla bean with its scrapings. Whisk about half into the egg yolk mixture until well combined, then pour back into the saucepan. Over medium heat, stirring constantly with a wooden spoon, cook until the mixture heavily coats the back of the spoon. Don't scramble the eggs.
  • Strain into a clean bowl and set the bowl over ice cubes and cold water until chilled, stirring occasionally. Refrigerate, covered, until needed.
  • Note: To make coffee Creme Anglaise, substitute 1/4 cup crushed coffee beans (with or without caffeine) for the vanilla bean. Bring to a boil and let steep in the cream mixture, covered for about 10 minutes. When well flavored, whisk into the egg yolks. then continue with recipe
  • To crush coffee beans, place in a plastic bag, close the bag, and heavily press a rolling pin over the beans. Do not grind the beans because this will darken the Creme Anglaise.

1 large egg
2 large egg yolks
1 tablespoon cornstarch
2 teaspoons fresh lemon juice
1 1/2-pint basket fresh boysenberries or 1 1/3 cup frozen unsweetened boysenberries, thawed
1/2 cup sugar
1/4 cup (1/2 stick) unsalted butter
Crust
1 1/4 cups unbleached all purpose flour
1/4 cup sugar
Pinch of salt
7 tablespoons cold unsalted butter, cut into small pieces
1 teaspoon grated lemon peel (yellow part only)
3 tablespoons fresh lemon juice
1 1-pint basket strawberries, stemmed, halved
1 1/2-pint basket fresh raspberries
1 1/2-pint basket fresh boysenberries or blackberries
1 large peach, cut into 1/2-inch-wide slices
5 tablespoons currant jelly

Steps:

  • For filling:
  • Beat egg and yolks in small bowl to blend. Dissolve cornstarch in lemon juice in small bowl. Mix into eggs. Puree berries and sugar in blender. Strain puree through a fine sieve into medium saucepan. Add butter and bring to simmer over medium-high heat. Slowly whisk hot berry mixture into egg mixture. Return mixture to same saucepan and cook until filling is very thick and boils, whisking constantly, about 3 minutes. Transfer filling to small bowl. Press plastic wrap directly onto surface to prevent skin from forming; refrigerate at least 6 hours. (Can be prepared 1 day ahead.)
  • For crust:
  • Blend flour, sugar and salt in processor. Add butter and lemon peel and process using on/off turns until coarse meal forms. Add lemon juice and process until moist clumps form. Gather into ball; flatten into disk. Wrap dough in plastic and refrigerate 45 minutes. (Can be prepared 1 day ahead. Let soften slightly at room temperature before continuing.)
  • Position rack in center of oven and preheat to 350°F. Roll dough out on lightly floured surface to 1/8-inch-thick round. Fold dough over rolling pin and transfer to 9x1-inch tart pan with removable bottom. Gently press dough into pan. Trim and finish edges. Chill 15 minutes. Line dough with foil and fill with dry beans or pie weights. Bake 15 minutes. Remove beans and foil and bake until crust is golden, about 20 minutes longer. Transfer crust to rack and cool.
  • Spread filling evenly in crust. Arrange strawberries, cut side down, in irregular pattern on filling. Fill in with raspberries and boysenberries. Tuck peach slices between berries. Stir currant jelly in heavy small saucepan over low heat until melted. Brush jelly over fruit to glaze. (Can be prepared 3 hours ahead. Refrigerate.)
