1/2 cup diced jarred roasted red bell peppers
1/2 cup diced pitted green olives
1/2 cup grated pecorino Romano
2 scallions, diced
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 pound white button mushrooms, cleaned and stemmed
1/4 cup finely chopped fresh basil leaves

Steps:

  • Preheat the oven to 400 degrees F.
  • In a medium bowl mix together the roasted red bell peppers, olives, cheese, scallions, olive oil, salt, and pepper.
  • On a parchment paper-lined baking sheet place the mushrooms, cavity side up. Spoon the filling into the cavity of the mushrooms. Bake until the mushrooms are tender, about 20 minutes.
  • Transfer the mushrooms to a serving platter, sprinkle with chopped basil, and serve.

3 tablespoons yuzu juice (or a combination of fresh orange juice, grapefruit juice, and lime juice)
1 teaspoon finely chopped grapefruit zest
1 teaspoon finely chopped orange zest
1 teaspoon finely chopped lime zest
3 tablespoons unseasoned rice vinegar
2 tablespoons mirin
1/4 cup soy sauce
Pinch sugar
12 shiitake mushrooms, cleaned and stems removed
Peanut oil
Salt and freshly ground black pepper
4 cups mizuna leaves

Steps:

  • Dressing:
  • Combine all ingredients in a small saucepan and bring to a boil over high heat. Remove from heat, let cool to room temperature, then refrigerate for at least 30 minutes.
  • Salad:
  • Heat grill to high. Brush mushrooms with oil and season with salt and pepper, to taste. Grill for 3 to 4 minutes per side or until just cooked through. Remove from heat and tear into rough pieces.
  • Place mizuna in a large bowl and toss with a few tablespoons of dressing. Season with pepper, to taste. Add mushrooms to bowl, toss, and drizzle with more of the dressing.

4 to 5 large tomatoes, seeded and chopped
1 clove garlic, minced (green part removed)
1/2 cup chopped basil leaves
1/4 cup extra-virgin olive oil
Coarse salt and freshly ground pepper to taste

Steps:

  • Soak the beans in water to cover overnight.
  • Drain the beans and simmer in water to cover until tender (about 30 minutes).
  • Combine the remaining ingredients and toss with the warm beans. Correct seasoning and add more olive oil if necessary. Serve at room temperature.

Perfect for Father's Day, I can't believe this simple, yet oh so tasty recipe is not already here! Do NOT cook longer than medium, my Mom likes her steak well-done! (No wonder she says she doesn't like steak, it has been reduced to shoe leather! LOL) Time does not include marinading time. Adapted from Fine Cooking - Issue 33.

1 tablespoon fresh ground black pepper
2 shallots, sliced (about 1/2 cup)
1 sprig rosemary, leaves stripped from stem
1 teaspoon soy sauce
1 teaspoon balsamic vinegar
2 tablespoons olive oil
1 porterhouse steak, about 32 oz. (2 inches thick)
1 tablespoon coarse salt, kosher salt or 1 tablespoon sea salt

Steps:

  • In a bowl, combine the first six ingredients and rub both sides of the steak with equal amounts of the mixture.
  • Let marinade for 1 to 2 hours.
  • Set aside and prepare the grill to medium hot (you'll be able to hold your hand just above the grate for 2 seconds).
  • Drain liquid from the steak and rub both sides of the steak with salt.
  • Grill the steak on one side for 7 to 10 minutes, keeping the smaller tenderloin section over a less intense heat.
  • If there are flare-ups, move the steak to another part of the grill that is cooler.
  • Turn the steak and grill for another 6 to 7 minutes. It should be rare to medium rare at this point.
  • Medium is about 10 minutes per side.
  • Transfer the steak to a wooden carving platter and let it rest for 3 to 4 minutes so the meat relaxes and the juices redistribute.
  • Serve it whole or else carve it, slice it, and reassemble it, saving the juices to pour over it.
  • Fight over who gets which piece of the steak. LOL.

This flagship, Tuscan steak is made from the region's Chianina breed of cattle which are prized for their tenderness and flavor. In typical Italian style, simplicity rules the day; little more than olive oil, rosemary, and salt are needed to highlight the rich flavor of the grilled meat. With Italian food, freshness and quality are top priority, so I use nothing less than choice porterhouse, and much prefer prime!

4 sprigs fresh rosemary, chopped
1 (2 1/2 pound) choice or prime porterhouse steak
3 tablespoons Tuscan olive oil
Moist, grey sea salt and freshly cracked pepper to taste
6 lemon wedges

Steps:

  • Press chopped rosemary onto both sides of porterhouse steak; set onto a plate and allow to marinate at room temperature for 1 hour.
  • Start an outdoor grill using hardwood charcoal, such as hickory. When coals are white and glowing, arrange for high heat.
  • Gently brush or rub olive oil onto steak, then season to taste with sea salt and pepper.
  • Place steak onto grill, and cook until a dark, golden brown (not burnt) crust forms, 5 to 10 minutes depending on thickness of meat. Turn over, and continue cooking until golden on the other side, 5 to 10 minutes more. When finished, place steak onto a platter, and allow to rest for 10 minutes.
  • To serve, remove the two pieces of meat from the bone, and replace the bone onto the serving platter. Trim any unwanted fat from the round (tenderloin) steak, slice into 6 equal pieces at an angle to the grain, and fan out on one side of the bone. Slice the rectangular (loin) steak into 1/4-inch slices at an angle to the grain. Fan out on the other side of the bone. Finish by garnishing the platter with lemon wedges and a sprinkle of additional sea salt.

6 tablespoons bottled olive oil vinaigrette
1 15-ounce can cannellini (white kidney beans), rinsed, drained
1/4 cup thinly sliced fresh basil
Fresh basil sprigs (optional)

Steps:

  • Prepare barbecue (medium-high heat). Arrange bread and vegetables on baking sheet. Brush bread and vegetables lightly with 3 tablespoons vinaigrette.
  • Grill pepper and onion 6 minutes, turning occasionally. Place bread and tomato slices on barbecue. Continue to grill until pepper and onion are slightly charred, bread is toasted and tomatoes are heated-through, turning occasionally, about 3 minutes longer. Transfer vegetables and bread to work surface; cut into bite-size pieces.

1 porterhouse steak (1 1/2 to 2 inches thick and 1 3/4 to 2 pounds)
1 teaspoon coarse salt
1 teaspoon cracked black peppercorns
1 teaspoon pure chile powder
1 teaspoon dry mustard
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/4 teaspoon ground cinnamon
5 tablespoons extra virgin olive oil
3 tablespoons chopped fresh cilantro
1 -2 serrano pepper, thinly sliced (or jalapeno)
1 -2 garlic clove, thinly sliced
1 cup wood chips, preferably mesquite, soaked for 1 hour in water to cover, then drained

Steps:

  • Place steak in an oval baking dish.
  • Make the rub: combine the salt, pepper, chili powder, mustard, oregano, garlic powder, cumin, and cinnamon in a small bowl; stir to mix or use your fingers to mix.
  • Sprinkle rub all over the steak on both sides, patting it onto the meat with your fingertips.
  • Make the cilantro-serrano oil: heat olive oil in a small pan over medium heat; add in the cilantro, serranos, and garlic; cook until fragrant, about 2 minutes; do not let garlic brown; remove pan from heat.
  • Set up grill for direct grilling using a two-zone fire (for gas grill-preheat half or two out of three of the burners to desired temperature; leave the rest turned off, this gives you a hot zone for grilling and a cooler zone for dodging the flames or resting the meat).
  • For gas grill-place all the wood chips in the smoker box and run the grill on high until you see smoke, then lower one burner to medium.
  • When ready to cook, brush and oil the grill grate; arrange steak on the grate over the hot zone, placing it on a diagonal to the bars.
  • Grill for about 2 minutes, then move the steak to the medium zone, rotating it a quarter turn to create crosshatch grill marks; let grill for 6-8 minutes longer.
  • Turn the steak over, placing it over the hot zone of the grill and on a diagonal to the bars.
  • Let this side sear for 2 minutes, then move the steak to the medium zone, rotating it a quarter turn; let steak continue to grill until cooked to taste, 6-8 minutes for medium-rare.
  • Brush the top of the steak with some of the cilantro-serrano oil as it cooks.
  • Transfer the grilled steak to a deep platter and pour the remaining cilantro-serrano oil over it.
  • Let steak rest for about 3 minutes, turning it several times in the oil to baste both sides.
  • To carve and serve-cut the two steaks off either side of the T-bone; cut each crosswise into ¼ inch thick slices; pour the juices in the platter over the slices and serve at once.
