By simply toasting the milk powder before adding it to the hot cocoa mix, we can capture a wide array of flavors, including caramel, toffee, and malt. Basically, one extra step creates the best cup of hot chocolate ever. Just trust me. And don't forget the homemade marshmallows...Note: If, like me, you only have kosher salt, simply blend a few tablespoons to a fine dust in a spice grinder. This recipe first appeared in Season 1 of Good Eats: Reloaded.

2 1/2 cups nonfat dry milk powder
2 cups powdered sugar
1 cup Dutch-process cocoa powder
2 teaspoons cornstarch
1 teaspoon fine salt (see note)
Pinch ground cayenne pepper, optional, plus more to taste
Hot water, for serving

Steps:

  • Heat oven to 300ºF. Line a half sheet pan with parchment paper.
  • Spread milk powder in a thin, even layer the prepared sheet pan and bake until golden brown and crumbly, about 20 minutes. Remove from oven and cool. Odds are good the milk powder will be stuck together in lumps and if that's the case, simply pulse it in a food processor a few times. (Toasting the milk powder is technically optional but personally, I think the flavor is worth it.)
  • Transfer the toasted and cooled milk powder to an airtight plastic container and add the sugar, cocoa powder, cornstarch, fine salt, and cayenne, if using. Cover and shake to thoroughly combine. Tightly sealed, the powder will keep nearly indefinitely in the pantry.
  • For one serving, heat 3/4 cup (6 fluid ounces or 175 ml) of water to a boil, then remove from the heat. Spoon 1/4 cup of the cocoa mix into a heavy mug and whisk in 1/4 cup (2 ounces or 60 ml) of the water to create a paste. Slowly whisk in the remaining hot water. Let sit about 30 seconds because otherwise you'll scald your face while attempting to chug the deliciousness.

1 cup heavy cream
1/2 cup sugar
1/4 cup unsweetened cocoa powder
Kosher salt
6 ounces milk chocolate, chopped
1 teaspoon pure vanilla extract
Marshmallows or whipped cream, for topping

Steps:

  • Combine the milk, heavy cream, sugar, cocoa powder and a pinch of salt in a medium saucepan. Cook over medium heat, whisking occasionally, until the sugar and cocoa powder dissolve and the milk is steaming; do not boil.
  • Whisk in half of the chopped chocolate until melted, then whisk in the remaining chocolate until smooth. Remove from the heat and whisk in the vanilla. Pour into mugs and top with marshmallows or whipped cream.

⅓ cup unsweetened cocoa powder
⅛ teaspoon ground cinnamon
1 pinch salt
⅓ cup boiling water
3 cups milk
1 cup half-and-half, divided
¾ teaspoon vanilla extract
8 large marshmallows

Steps:

  • Whisk together sugar, cocoa powder, cinnamon, and salt in a saucepan; stir in boiling water. Whisk until sugar is dissolved.
  • Bring cocoa mixture to a simmer over medium-high heat, stirring constantly, about 2 minutes; stir milk and 1/2 cup half-and-half into water mixture. Cook and stir just until hot, about 2 minutes. Remove saucepan from heat; stir in remaining half-and-half and vanilla extract.
  • Divide cocoa into mugs, top with marshmallows, and serve.

⅓ cup unsweetened cocoa powder
¾ cup white sugar
1 pinch salt
⅓ cup boiling water
3 ½ cups milk
¾ teaspoon vanilla extract
½ cup half-and-half cream

Steps:

  • Combine the cocoa, sugar and pinch of salt in a saucepan. Blend in the boiling water. Bring this mixture to an easy boil while you stir. Simmer and stir for about 2 minutes. Watch that it doesn't scorch. Stir in 3 1/2 cups of milk and heat until very hot, but do not boil! Remove from heat and add vanilla. Divide between 4 mugs. Add the cream to the mugs of cocoa to cool it to drinking temperature.

My signature instant cocoa blend will fortify you through winter's worst. My homemade marshmallows go pretty good with this mix too. Just sayin'. This recipe first appeared in Season 5 of Good Eats.

1 cup cocoa, Dutch-process preferred
2 1/2 cups powdered milk
1 teaspoon salt
2 teaspoons cornstarch

Steps:

  • In a large airtight container, combine the powdered sugar, cocoa, powdered milk, salt, cornstarch, and cayenne. Place the lid on the container and shake vigorously to combine. Sealed in an airtight container, this mix keeps indefinitely in the pantry.
  • To serve: Place two tablespoons of the mix in a mug and add about 2 fluid ounces hot water or milk. Stir to combine. Fill the rest of the mug with hot water or milk and enjoy.
