20-MINUTE SKILLET PASTA
Healthy vegetarian pasta dinner idea for busy weeknights. Packed with vegetable and delicious!

Steps:
- Cook pasta according to instructions on the box. Rinse with warm water, set aside and keep warm.
- In a measuring cup, mix together half and half, cornstarch and Italian seasoning. Set aside.
- In a large saucepan, heat up olive oil. Add garlic and sauté for 2 minutes.
- Add tomatoes and spinach and sauté, stirring often, about 3 to 4 minutes.
- Add beans, salt, pepper and half and half mixture. Stir well. Cook for 2 minutes, until the mixture thickens up.
- Add cooked pasta and stir in gently. Remove from heat.
- Serve garnished with Parmesan cheese and red pepper flakes.

PASTA WITH CREAMY WHITE BEANS

- Bring a large pot of water to a boil. Season well with salt. Add the pasta and cook for 3 minutes less than indicated in the package directions, about 7 minutes. Drain well reserving 1/2 cup pasta water.
- Heat a large skillet over medium-high heat until hot. Add the oil, carrot and onion to the skillet. Season with 1 teaspoon salt and cook, stirring often, until fragrant and beginning to soften, about 3 minutes. Add the pepper flakes and thyme and cook another minute. Stir in the drained beans and chicken broth. Reduce the heat to medium to maintain a simmer and cook for 5 minutes, stirring occasionally. Use the back of a spoon to gently mash some of the beans. Set aside.
- Add the cooked pasta to the sauce. Sprinkle the grated cheese over the pasta and toss to coat well. Stir in the remaining 1/2 teaspoon salt and add the 1/2 cup pasta water as needed to maintain a creamy, broth-like sauce. Sprinkle in the spinach and cook until wilted.

- Cook pasta according to directions - reserve about a cup of pasta water. Microwave spinach until defrosted. Using a clean dish towel, wring out water (be careful, spinach could be hot). Heat a large saute pan over medium high heat, add olive oil (or coat bottom with cooking spray). Add spinach and cook until fully heated, add garlic and saute for another minute. Add drained tomatoes, saute for another 2 minutes. Add tomato juice (from can), beans, oregano and salt and pepper to taste. Add cooked pasta to pan, toss to combine. Add reserved pasta water, if necessary. Serve, add parmesan if desired.
- *I simmer the white beans separately prior to combining with spinach and tomatoes to make them softer, but it's not required.

- Heat large deep nonstick skillet over high heat. Add spinach to dry skillet; toss until just wilted, about 3 minutes. Transfer to strainer set over bowl.
- Heat 2 tablespoons oil in same skillet over medium-high heat. Add shallots; sauté 5 minutes. Reduce heat to medium; add tomatoes and rosemary and sauté 1 minute. Add broth; cover and cook until tomatoes soften, stirring occasionally, about 4 minutes. Remove from heat. Crush tomatoes with potato masher. Stir in beans and 1 tablespoon oil. Bring to boil over medium-high heat. Reduce heat to medium-low; simmer uncovered until juices thicken, about 15 minutes. (Can be made 2 hours ahead. Let stand at room temperature. Rewarm over low heat.)
- Stir spinach into beans. Season with salt and pepper.

- Fill a large pot with lightly salted water and bring to a boil. Stir in the rotini, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through but is still slightly firm, about 8 minutes. Drain well.

- In a large pot of salted boiling water, cook pasta according to package instructions. Reserve 1 cup pasta water. Drain and return pasta to pot. Meanwhile, in a medium saucepot, heat 1 tablespoon olive oil over medium. Add onion and half the garlic and saute. Add pepper flakes and bay leaf and cook until fragrant, 1 minute. Add tomato and juices, 3/4 cup pasta water, and salt and pepper. Bring to a rapid simmer and cook until tomato pieces begin to break down and liquid thickens, about 15 minutes. Discard bay leaf and, using a hand blender or food processor, blend tomato mixture until coarsely pureed. Toss with pasta to coat.
- In a small skillet, heat remaining 2 tablespoons oil over medium. Add remaining garlic and cook until soft and fragrant, 1 minute. Add beans and remaining 1/4 cup pasta water and cook until beans are heated through. Stir in lemon zest and juice, and parsley. Season with salt and pepper. Divide pasta among bowls, top with warm bean mixture and sprinkle with Parmesan.

- Saute; a couple of cloves of chopped garlic in olive oil in a large, deep skillet over medium heat.
- Add 2 cups of chopped fresh or canned tomatoes and cook for 5 minutes, or until saucy; add 1.5 cups canned white beans (or about 1 cup of cooked beans) and heat until bubbly.
- Add a little more minced garlic, then a pound of cooked penne pasta.

- Bring a large pot of water to a boil.
- Meanwhile, heat the olive oil over medium heat in a large skillet or saucepan. Add the onion. Cook, stirring, until tender, about five minutes. Add the garlic, and stir together until fragrant, about 30 seconds. Add the tomatoes with juice and a pinch of sugar. Raise the heat slightly, and cook, stirring, until the tomatoes are bubbling vigorously. Lower the heat to medium-low, and cook gently, stirring and mashing the tomatoes often with the back of your spoon until they have cooked down into a thick, fragrant sauce, 15 to 20 minutes. Stir in the beans and the herbs, and season to taste with salt and pepper. Keep warm.
- When the pasta water comes to a boil, salt generously and add the pasta. Cook al dente, following the recommendations on the package but checking about a minute before the indicated time. When the pasta is just about done, check to see if the tomato sauce seems dry. If so, add up to 1/4 cup of the pasta water to the pan and stir. Drain the pasta, toss with the sauce and serve, passing the cheese for sprinkling.

PASTA IN TOMATO SAUCE WITH WHITE BEANS AND SPINACH
The other night I wanted pasta and beans, but not like a soup. I looked through some recipes and nothing was quite what I wanted -- so I threw this together, and it rocked! You can vary the herbs according to what you have handy, and use any type of white bean (navy, cannellini, great northern, etc). Any extra sauce can be kept in the fridge and reheated -- just be sure to add a little of the starchy pasta water if needed to thin it out, as it gets pretty thick and clumpy.

- Cook the pasta according to the package directions. When it's done, drain and reserve a little of the cooking water (1/2 cup or so). Return to the pot and keep warm while the sauce cooks.
- Meanwhile, heat the oil in a large saucepan over medium-high heat. Add the onion, garlic, carrot, and celery and cook, stirring frequently, until soft, 2 or 3 minutes. Add the tomato puree, beans, sun-dried tomatoes, and herbs to the pot and stir well. Season with salt and pepper. Simmer over medium-low heat while the pasta cooks. Toward the end of the cooking time, add the spinach to the sauce and cook just until heated through.
- Add the cooked pasta to the sauce and mix thoroughly, adding enough of the pasta water to make the sauce the consistency you like. Serve hot, garnished with the grated Parmesan.
