Steps:
- In a blender or food processor, combine tomato juice, onion, bell pepper, cucumber, tomatoes, green onions, garlic, lemon juice, red wine vinegar, tarragon, basil, parsley, sugar, salt, and pepper. Blend until well-combined but still slightly chunky. Chill at least 2 hours before serving.

GAZPACHO IN CUCUMBER CUPS

- In a medium bowl, combine 1/3 cup bell pepper, 1 teaspoon jalapeno, 1/3 cup red onion, 1/3 cup tomatoes, 1/3 cup cucumber, and 1 tablespoon of the cilantro; set aside. Set aside 1/2 cup cucumber for garnish.
- In the bowl of a food processor, combine remaining bell pepper, jalapeno, red onion, tomatoes, cucumber, and cilantro. Add tomato juice, olive oil, vinegar, lime juice, 1 teaspoon salt, and 1/4 teaspoon pepper; process until smooth. Stir into reserved mixed ingredients in medium bowl (not the 1/2 cup cucumber). Transfer gazpacho to an airtight container.
- Chill gazpacho for at least 4 hours and up to overnight. Thin soup by adding more tomato juice, if desired; season with salt and pepper. To serve, spoon about 1 tablespoon gazpacho into each cucumber cup. Top each cup with reserved cucumber.
GRILLED JUMBO SHRIMP AND PICKLED "GAZPACHO" ROLL-UPS

- Heat a grill pan or outdoor grill to high. Place shrimp in shallow dish. Sprinkle garlic over shrimp. Drizzle shrimp with extra-virgin olive oil and season with salt, pepper and crushed red pepper. Grill 2 minutes on each side, until pink and opaque and head curls towards tail. Squeeze the juice of 1/2 lemon over shrimp and remove to platter to cool.
- In food processor, coarsely chop the giardiniera vegetables. Transfer to a bowl and stir in the lemon juice, parsley, tomato, and pepper until well combined. To serve, place 2 shrimp in a bibb lettuce leaf and sprinkle some gazpacho sauce over them. Roll them up like a mini-burrito and enjoy!
PICKLED-ZUCCHINI GAZPACHO

- Place the pickles, raw zucchini, water, buttermilk, salt and 1 tablespoon of the pickling liquid in a blender and process until smooth. Scrape into a bowl and refrigerate until cold. Stir in the bell peppers, onion and almonds. Divide among 4 bowls and garnish with the lobster meat, if using. Serve immediately. (The remaining pickling liquid can be reheated and used to make more pickles, if desired.)

SPICY GAZPACHO
Steps:
- Place 1 cup cucumber, 1/2 cup celery, 1/2 cup green onions and half of chilies in small bowl and reserve.
- Working in batches, coarsely puree remaining cucumber, celery, green onions, chilies and next 7 ingredients in blender. Pour into large bowl. Mix in reserved vegetables. Season with salt and pepper. Chill at least 6 hours and up to 1 day.
PICKLED BEET GAZPACHO
Steps:
- Peel and seed the cucumber. Finely dice one-fourth of the cucumber and reserve for serving. Roughly chop the remaining cucumber and transfer to a blender.
- Add the pickled beets with their brine to the blender along with the tomatoes, shallots, garlic, ice water and a pinch each of salt and pepper. Puree until the gazpacho is very smooth. With the blender running, gradually add the olive oil until emulsified. Season the gazpacho with salt and pepper.
- Shred the egg on the large holes of a box grater or coarse grater. Pour the gazpacho into bowls, top with the shredded egg, finely diced cucumber and dill sprigs and serve.
MANGO GAZPACHO WITH PICKLED SHRIMP
Steps:
- For pickled shrimp:
- Combine first 6 ingredients in medium saucepan. Cover; bring to boil. Remove from heat. Stir in cilantro, onions, and jalapeño. Transfer to glass jar and add shrimp. Chill uncovered until cold, then cover and chill overnight.
- For gazpacho:
- Purée first 10 ingredients in blender. Chill 2 hours. do ahead Can be made 8 hours ahead. Keep refrigerated.
- Ladle soup into 4 bowls; top each with 3 shrimp. Garnish with cilantro.
PICKLED CABBAGE
This is a sort of pickled cabbage that makes a great, sharp, appetizer. Or it can also be added into other recipes. There is no need to cook the cabbage, but instead just place it in the fridge. It will keep in the fridge for a week or so.

- Place cabbage into a large bowl. Sprinkle with salt and mix to distribute. Let stand for 20 minutes, mixing with your hands every few minutes.
- Pour out excess salt water from the cabbage. Add vinegar and sugar; mix well. Cover the bowl and refrigerate for 24 hours.

PRAWN GAZPACHO
Pickled tiger prawns combined in a chunky garlic gazpacho. This is a great item for winery and concert picnics. It keeps well, travels well, and if you bring extra bowls and spoons, you'll make lots of new friends. My original recipe was published by Bon Appetit in the April 1992 issue, then again in their 20-Minute Special Edition issue, and included again in the 1992 hardbound collector's edition. The recipe was altered by the editors to be more like a traditional gazpacho, including the incorporation of four cups of tomato juice. Steps:
- Marinate the prawns and garlic in the vinegar and lemon juice for 1 to 2 hours, or overnight.
- If you feel more comfortable with cooked seafood, sauté the prawns in a spoonful of olive oil until barely bright pink, and cool.
- Combine all ingredients, including prawns and marinade.
- Season with salt and coarsely ground pepper.
- To serve, ladle the gazpacho into small cups or bowls.
- Garnish with lemon wedges and fresh cilantro.
- Wine suggestion: A crisp, slightly acidic white with lots of fruit and delicate herbal notes.
- Good selections would be sauvignon blanc, malvasia bianca, or tank-fermented chardonnay.

WHITE GAZPACHO WITH PICKLED SHRIMP RECIPE - FOOD & WINE

- In a medium saucepan, combine 2 cups of the sherry vinegar with the sugar, jalapeño, peppercorns, coriander seeds, cumin seeds and 1 cup of water and bring to a rapid boil, stirring to dissolve the sugar. Add the mint and cilantro sprigs. Remove from the heat and add the shrimp. Cover the shrimp with a lid or a heatproof plate to keep them submerged and let the shrimp stand for 1 hour.
- Meanwhile, in a small saucepan, simmer the garlic in the vegetable oil over moderate heat until very soft but not browned, about 10 minutes. Using a slotted spoon, transfer the garlic to a blender. Reserve the garlic oil for another use.
- In a small bowl, soak the bread in cold water until softened. Squeeze out the excess water and transfer the bread to the blender. Add the yogurt, almonds, grapes, cucumber, 3 tablespoons of the sherry vinegar and 2 tablespoons of water and puree until smooth. With the machine on, add 1/4 cup of the olive oil in a thin stream. Set a fine strainer over a bowl and strain the soup, pressing hard on the solids. Season the soup with the paprika, salt and white pepper and refrigerate until cold.
- Drain the shrimp and discard the liquid. Shell and devein the shrimp. In a small bowl, toss the shrimp with the remaining 1 tablespoon each of sherry vinegar and olive oil. Add the chopped mint and cilantro and season with salt and white pepper. Ladle the soup into shallow bowls and mound the shrimp in the center. Drizzle the soup with olive oil and serve.

- In a small saucepan combine the vinegar, tequila, sugar and garlic. Over medium heat, bring to a boil and simmer for a few minutes.
