2 cups water
4 small red bell peppers, cut into strips
4 small green bell peppers, cut into strips
6 carrots, pared, thinly sliced
2 medium onions, thinly sliced
1 cup distilled white vinegar
1/4 cup olive oil
1/4 cup chopped fresh ginger
2 bay leaves
1 tablespoon salt, plus additional to taste
1/2 teaspoon crushed red pepper flakes
1/4 cup vegetable oil
8 (6 ounce) red snapper fillets, skinless
3 tablespoons fresh lime juice
fresh ground pepper

Steps:

  • Heat the water, bell peppers, carrots, onions, vinegar, olive oil, ginger, bay leaves, 1 T. salt, and the red pepper flakes in large saucepan over high heat to boiloing. Reduce heat to medium-low and simmer covered until vegetables are crisp-tender, 7-10 minutes.
  • Meanwhile, heat vegetable oil in large skillet over medium-high heat until very hot. Brush fish with lime juice; season with salt and pepper. Brown fillets in batches in oil, about 1 minute each side. Transfer to large heatproof dish.
  • Pour hot vegetables over fish and let cool to room temperature, 1-1/2 hours. Remove bay leaves.
  • To serve, spoon some vegetables onto platter, place fish over vegetables, and top with remaining vegetables. Serve at room temperature.

1 (6 ounce) red snapper fillets
cornstarch, for dredging
olive oil, to coat pan
2 ounces sesame seed oil
1 teaspoon ground ginger
1 teaspoon fresh garlic, minced I presume
1 ounce soy sauce
1 ounce water
2 tablespoons fresh cilantro, finely chopped
2 ounces sesame seeds

Steps:

  • Dredge fish in cornstarch to coat.
  • Heat the olive oil to hot, in an appropriate sized pan, and cook (fry) the fish until just done, about 2-3 minutes.
  • Remove fish from pan and set aside.
  • Heat sesame oil in the pan until steaming.
  • Add ginger and garlic.
  • Apply this mixture over fish.
  • Combine the soy sauce and water and pour over the fish.
  • Now add the cilantro on top and then the sesame seeds (I like toast seeds for a nice flavor).

¼ cup chopped fresh parsley
3 tablespoons extra-virgin olive oil
1 tablespoon chopped fresh oregano
1 lemon, zested and sliced
3 cloves garlic, minced
2 (1 pound) whole red snappers, cleaned and scaled

Steps:

  • Mix parsley, olive oil, oregano, lemon zest, and garlic together in a small bowl.
  • Rinse red snappers and pat dry with paper towels. Cut 3 diagonal slits across the top of each fish, cutting almost to the bone. Season the cavities with salt and pepper.
  • Rub the parsley mixture on the inside and top of the fish, pushing the mixture into the slits. Place the fish in the center of the grill pan; season with salt and pepper.
  • Place the grill pan in the Panasonic Countertop Induction Oven and press "Auto Cook." Select the Fish setting, 3, and 1-pound serving. Cook until an instead-read thermometer inserted into the center reads at least 130 degrees F (54 degrees C), about 20 minutes. Adjust time as needed. Serve with lemon slices.

4 tablespoons lime juice or 4 tablespoons rice vinegar
3 tablespoons fish sauce or 3 tablespoons soy sauce

Steps:

  • The marinade- Put the ginger in a fine sieve, or a sieve lined with muslin, and press the juice into a bowl.
  • You need to extract 7 tbs ginger juice - add a little water to the ginger pulp and squeeze again if necessary. Add the remaining ingredients, except the sugar, and stir to mix.
  • Put the meat or seafood in a non-metallic shallow dish and rub the marinade all over. For meat, cover and leave in the fridge for at least 4 hours or overnight. Fish and shrimp only need marinating for up to 30 minutes in the refrigerator.
  • Remember to give the marinated food at least 20 minutes to return to room temperature before cooking.
  • To cook- While cooking the food, season and baste it with the marinade. Before brushing the final few strokes on, add the sugar and stir to dissolve; this helps glaze the food, but if the sugar is added too soon, it will burn and stick.

This is such an easy dish to cook and healthy way to eat fish. It is so versatile you can eat it during the week in front of the TV or for a dinner party!

1 (3 pound) whole red snapper, cleaned and scaled
3 ½ tablespoons grated fresh ginger root
3 green onions, chopped
1 tomato, seeded and diced
1 lime
⅓ cup soy sauce
1 lemon
½ teaspoon sea salt

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Make three slashes across each side of the fish using a sharp knife. This will keep the fish from curling as it cooks. Place the fish in a shallow baking dish or roasting pan. Cover each side with fresh ginger, then green onions and tomatoes. Season with sea salt. Slice half of the lime and place the slices on top of the fish. Drizzle with the soy sauce, and squeeze the other half of the lime over the fish. Cut the lemon in half and set in the pan. Cover the whole dish with aluminum foil.
  • Bake the fish until the flesh is opaque and can be flaked with a fork, about 20 minutes. Squeeze the baked lemon halves over the fish before serving. Serve the fillet on the top side first, then gently lift out the backbone, while helping the flesh off the bones with your knife. It's much easier than trying to turn the fish over.

1 small jalapeño pepper, seeded and finely chopped
3 tablespoons rice wine vinegar or white wine vinegar (eyeball it)
Salt and freshly ground black pepper
5 tablespoons vegetable oil
10 radishes, thinly sliced
1 English (seedless) cucumber (the one wrapped in plastic), thinly sliced
1 yellow bell pepper, seeded, quartered, and cut into thin strips
4 8-ounce portions red snapper fillet, skin on
1/2 cup sesame seeds, untoasted (available on spice aisle)
1 bunch watercress, trimmed of thick stems
1 cup (about 20 leaves) fresh basil, coarsely chopped
1/4 cup toasted unsalted peanuts, coarsely chopped

Steps:

  • In a salad bowl combine the ginger, jalapeño, vinegar, salt, and pepper. In a slow steady stream, whisk in 3 tablespoons of the vegetable oil. Add the radishes, cucumber, and bell pepper and toss to coat. Let the veggies marinate at room temperature while you prepare the sesame-crusted snapper.
  • With a sharp paring knife, score the skin side of the snapper fillets: Slash 3 1/8-inch-deep cuts across the width of the fish. Season both sides of the fish with salt and pepper. Sprinkle and then gently press the sesame seeds onto both sides of the fish. Heat a large nonstick skillet over medium-high heat with the remaining 2 tablespoons of vegetable oil (twice around the pan). When the pan is hot, add the seasoned fish to the skillet skin side down. Sauté the snapper for 4 minutes, and if you find that the fillets bubble up in the center section, carefully press each fillet down with a fish spatula. Flip the fillets and continue to cook on the second side for 3 minutes, or until the fish is cooked through and opaque. While the fish is cooking on the second side, finish off the ginger-dressed snappy veggies.
  • To the marinating vegetables add the watercress, basil, and peanuts. Toss to combine.
  • To serve, distribute the snappy veggies among four plates and top with the sesame-crusted snapper.

3 tablespoons rice wine vinegar or white wine vinegar, eyeball it

6 tablespoons vegetable oil, divided, eyeball it
10 radishes, thinly sliced
1 seedless or English cucumber, thinly sliced
1 yellow pepper, seeded, quartered and cut into thin strips
1 (2-ounce) pouch sliced almonds, 1/4 cup, available on baking aisle
1 cup chicken broth
1 tablespoon curry powder
2 pinches ground cinnamon
1 cup couscous
4 (8-ounce) portions red snapper fillet, skin on
1/2 cup sesame seeds, un-toasted, available on spice aisle
1 bunch watercress, trimmed of thick stems
1 cup roughly chopped fresh basil, about 20 leaves
2 scallions, chopped

Steps:

  • In a salad bowl, combine the ginger, jalapeno, vinegar, salt and pepper. In a slow steady steam, whisk in 3 tablespoons of vegetable oil. Add the radish, cucumber, yellow pepper and toss to coat. Let the veggies sit and marinate at room temperature while you prepare the sesame crusted snapper.
  • Place a medium saucepan on the stove. Add the sliced almonds and toast over moderate heat then remove from pan and reserve. Return pan to stove top and add the chicken broth, 1 tablespoon of vegetable oil -- just eyeball it, curry powder and cinnamon. Raise heat and bring broth up to a boil. When it boils, add couscous to the pot and stir to combine. Cover the pot and turn off the heat and let the couscous stand until ready to serve.
  • With a sharp paring knife, score the skin side of the snapper fillets by slashing 3, 1/8- inch thick cuts across the width of the fish. Season both sides of the fish with salt and pepper. Sprinkle and then gently press the sesame seeds onto both sides of the fish. Heat a nonstick large skillet over medium-high heat with 2 tablespoons of vegetable oil, 2 turns of the pan. Once the pan is hot, add the seasoned fish to the skillet skin side down. Saute the snapper for 4 minutes and if you find that the fillets bubble up in the center section, carefully press each fillet down with a fish spatula. Flip the fillets and continue to cook on the second side for 3 minutes or until the fish is cooked through and opaque. While the fish is cooking on the second side, finish off the ginger dressed snappy veggies and prepare the couscous.
  • To the marinating vegetables, add the watercress and basil. Toss to combine.
  • Remove the lid on the couscous. Add scallions and toasted almonds and fluff couscous with a fork.
  • To serve, distribute the snappy veggies between 4 plates and top with the sesame crusted snapper; serve the couscous alongside.

1 (2 pound) whole red snapper, cleaned and scaled
5 lemons, juiced, divided
¼ cup sweet soy sauce
2 tablespoons butter
1 tablespoon finely minced fresh ginger
3 tomatoes, chopped
1 bunch chives, chopped
½ red chile pepper, sliced
1 pinch white sugar, or to taste
1 pinch salt to taste

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Place snapper on a large plate; squeeze juice of 1 lemon onto each side and inside cavity. Set snapper aside to marinate, about 10 minutes. Combine soy sauce, butter, and ginger in a small bowl. 1/2 medium bok choy (about 1/4 pound)
2 teaspoons vegetable oil
2 teaspoons Asian sesame oil
1 carrot, scored lengthwise and sliced thin crosswise
a 1 1/2-inch piece peeled fresh gingerroot, cut into fine julienne strips (about 1/4 cup)
2 tablespoons Scotch
2 cups low-salt chicken broth
1 teaspoon sugar
2 scallions, cut into 2-inch julienne strips
2 small (4 to 5 ounces each) red snapper or other white fish fillets with skin
1/2 teaspoon cornstarch
1/2 teaspoon curry powder
Garnish: fresh coriander sprigs

Steps:

  • Cut leaves from bok choy stalks, keeping leaves and stalks separate. Slice leaves thin and cut stalks diagonally into 1/2-inch-thick slices.
  • In a large heavy saucepan heat 1 teaspoon of each oil together over moderately high heat until hot but not smoking and stir-fry bok choy stalks, carrot, and gingerroot 1 minute.
  • Add Scotch, broth, and sugar and simmer, covered, 5 minutes. Add bok choy leaves and scallions and simmer, covered, 3 to 5 minutes, or until tender. Season broth with salt and pepper and keep warm, uncovered.
  • Pat fish dry and rub cornstarch and curry powder into skin of each fish fillet. Halve each fish fillet on the diagonal.
  • In a 9-inch non-stick skillet heat remaining 2 teaspoons oil together over moderately high heat until hot but not smoking and sauté fish, skin sides down and pressing flat occasionally with a metal spatula, until golden, about 2 minutes. Turn fish and sauté until just cooked through, about 2 minutes more.
  • Divide broth between 2 bowls and top with fish, skin sides up. Garnish each serving with coriander sprigs.
