ROSé STRAWBERRY SYLLABUB
This twist on strawberries and cream transforms the fruit into a grown-up treat

- Halve the strawberries and put them in a bowl with the sugar and wine. Mix well, then set aside at room temperature for about 40 mins - this will make the strawberries really juicy.
- Use a slotted spoon to put the fruit into 4 large wine glasses, then pour the cream into the juices left in the bowl.
- Whip the cream and juice until it holds its shape, then spoon on top of the fruit. Decorate with a strawberry leaf if you like. Don't make these too far ahead as chilling spoils the flavour. Keep in a cool place for up to 1 hr until ready to serve.

Yet another recipe from Southern Living 1981, Syllabub, depending on how it's made, can be a custard type dessert or a beverage. It's made with cream (or milk) and wine or other spirits. - Heat the sugar and wine on low heat in a 1 1/2 quart saucepan until the sugar dissolves; stirring constantly.
- Remove from heat and slowly add in the half-and-half.

ROSé SYLLABUB & SUGARED STRAWBERRIES

- For the syllabub, put the wine, sugar, lime zest and juice in a bowl and chill for 1 hr.
- About 45 mins before serving, halve any big strawberries and keep the smaller ones whole. Scatter them in a bowl and sprinkle over the sugar. Let them sit for 30 mins to release their flavoursome juices. Pour over the wine and leave for 10-15 mins.
- Half-whip the cream for the syllabub, then gradually pour in the chilled wine mix, continuing to beat as you go, until you have a softly whipped creamy mixture that holds its shape enough to be spoonable. Serve the strawberries and their boozy juice in bowls topped with a spoonful of syllabub, and scatter over a little lime zest.
STRAWBERRY SYLLABUB
This recipe intrigued me as I had no idea what a syllabub was! They define it as an old-fashioned dessert made of a frothy wine and cream sauce poured over fresh fruit or berries. - In another bowl, beat egg whites and 1/4 cup sugar until stiff.
- Fold egg whites into the cream mixture.
- Add sherry.
- PLace berries in serving bowl.

I first tasted it at a supper given by a lecturer in seventeenth-century literature when I was at college, and it took our tastebuds right back to the Restoration. It can be prepared as either a parfait or a punch--please note that either version contains alcohol, so you may not want to serve this to younger family members.

- Whip the cream and sugar in a chilled bowl, until the cream begins to thicken. Gradually whip in the white wine, lemon juice, and lemon zest. Continue to whip until light and fluffy, but not grainy. Cover the mixture and chill until serving time.
- Serve in chilled parfait glasses, garnished with a dash of nutmeg, a sprig of mint, and a slice of lemon. Syllabub should be eaten with a small spoon, and savored.

- Put the strawberries in a non-reactive bowl and pour over the wine. Leave to soak for 1-2 hours at room temperature.
- Put the flour in a large mixing bowl and make a well in the centre. Add the sugar, baking powder, zests, melted butter, orange blossom water, milk, eggs and a pinch of salt. Use a wooden spoon to mix into a dough, then knead on a lightly floured surface until smooth. Chill in the fridge for 30 minutes.
- Roll out half the dough on a lightly floured surface to a large 1mm thick square. Cut with a sharp knife into 15 rough squares. Repeat with the rest of the dough.
- Heat 4-5cm oil in a large sauté pan or wok over a low-medium heat until it reads 160°C on a digital probe thermometer (or a cube of bread turns golden in 30-40 seconds). Fry the squares in batches for 2-3 minutes on each side until golden. Drain on a plate lined with kitchen paper.
