SAFFRON RICE SALAD



Saffron Rice Salad image

3 tablespoons olive oil, plus more for dressing
1 Spanish onion, finely chopped
2 cloves garlic, finely chopped
2 cups long grain white rice
4 cups water
1 large pinch saffron threads
Salt and freshly ground pepper
8 spears asparagus, grilled and cut into 1/2-inch pieces
1 red pepper, fire roasted and diced
1 yellow pepper, fire roasted and diced
3/4 cup salt cured olives, pitted and chopped
1/4 cup chopped fresh herbs, ie: parsley or cilantro leaves
Extra-virgin olive oil, for drizzling
2 tablespoons aged Sherry vinegar

Steps:

  • Heat oil in medium pot on grates of grill or side burners. Add onions and garlic and cook until soft. Add the rice and stir to coat the grains of rice with the oil.
  • Place the water in a small pot and bring to a boil. Add the saffron to the onion mixture and let boil 1 minute. Add the boiling water to the rice, stir, add salt and pepper and bring to a boil. Reduce the heat to medium-low, cover the pot and let cook 12 to 14 minutes or until the rice is just cooked. Let the rice sit, covered for 5 minutes then fluff with fork.
  • Transfer the rice to a large bowl and add the asparagus, peppers, olives and herbs. Drizzle with extra-virgin olive oil and a few tablespoons of aged sherry vinegar. Serve warm or at room temperature.

2 tomatoes, chopped
1 large red bell pepper, chopped
2 jalapeno peppers, minced
¾ cup lemon juice
1 ¼ teaspoons dried cilantro
¼ teaspoon dried basil
⅛ teaspoon red pepper flakes
1 (15 ounce) can whole kernel corn; drain and reserve liquid
1 (15 ounce) can black beans; drain and reserve liquid
1 tablespoon olive oil
½ cup chopped onion
½ teaspoon minced garlic
1 ½ cups instant brown rice
salt and pepper to taste

Steps:

  • In a large bowl, combine tomatoes, red bell pepper, jalapeno pepper, lemon juice, cilantro, basil, red pepper flakes, corn, and beans. Stir to combine the vegetables, then set aside.
  • In a medium saucepan, heat olive oil at a medium-low heat. Add onions and saute until they are translucent. Add garlic and saute for another minute. Pour in rice and toss to coat. Add reserved liquid from the corn and beans, along with any additional liquid as directed on the rice box. Cook the rice to package specifications. Let the rice cool slightly.
  • Combine the rice and vegetable mixture. Salt and pepper to taste and serve.

1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained

1 small onion, diced

1 lime, zested and juiced
¼ cup chopped cilantro leaves

Tex-Mex Black Beans & Saffron Rice image

After tasting this at a neighbor's Super Bowl party one year, I quickly scribbled down the recipe. This is a fairly simple dish to throw together and is a great accompaniment to Tex-Mex style dishes, although this isn't pretending to be any sort of authentic dish from any one particular region. I have made it many times over the years and this is a great dish for a potluck. Mahatma saffron rice comes in shiny yellow foil tubes in the rice section of your grocery store. I usually follow the microwave instructions for preparing the rice. I serve this as a side dish, but I think a Vegetarian who eats dairy would be able to enjoy this as a meal as well.

2 (5 ounce) packages saffron rice mix, plus ingredients to prepare rice according to package directions (such as Mahatma brand)
1 (10 1/2 ounce) can diced tomatoes with mild green chilies (such as Ro-tel mild or spicy)
1 (15 ounce) can black beans, drained and rinsed well
1/4 cup sour cream, to taste
1/4 cup shredded cheddar cheese, to taste
2 tablespoons fresh cilantro leaves, chopped (optional)

Steps:

  • Prepare the saffron rice according to the package directions,using the amount of oil/butter and water as indicated on the package (I usually use olive oil).
  • While the rice is cooking, rinse& drain the black beans in a mesh strainer to remove all the sludgey canning liquid and dump them into a small saucepan.
  • Pour the entire contents of the diced tomatoes w/chili peppers,liquid and all,into the same pan with the beans and stir to combine.
  • Cover the saucepan with lid,turn on the heat to low, and let bean mixture heat while the rice cooks, stirring occasionally- it should be ready when the rice is done.
  • When the rice is fully cooked, pour it into a deep, medium sized casserole dish.
  • Pour bean mixture into the center of the rice, leaving a border of the yellow rice peeking out arounds the sides.
  • Place the sour cream in the center of the bean mixture in a dollop as a garnish (you can use more if you like).
  • Sprinkle shredded Cheddar cheese over the top of the sour cream and over the beans.
  • Sprinkle with cilantro leaves (optional) if you like and serve immediately.
  • NOTE: If you don't have access to canned diced tomatoes with chilis, then you can substitute an equal amount of chunky salsa, if you like.
  • You may wish to provide a bowl of additional sour cream as well as a bowl of more cheese for guests to add extra to each serving, but it isn't necessary.

2 cups basmati rice
4 tablespoons (1/2 stick) butter
1 large onion, finely chopped
3 cups canned low-salt chicken broth

1 15- to 16-ounce can garbanzo beans (chickpeas), rinsed, drained

Steps:

  • Cook fresh peas in medium saucepan of boiling salted water until tender, about 5 minutes. Drain and reserve. If using thawed peas, set aside.
  • Place rice in sieve. Rinse rice under cold running water until water runs clear. Drain. Melt butter in heavy large saucepan over medium heat. Add onion and sauté until tender, about 8 minutes. Add rice; stir 1 minute. Add broth, salt and saffron; bring to boil. Reduce heat to low. Cover and cook until rice is tender and liquid is absorbed, about 20 minutes. Remove from heat. Stir peas and garbanzo beans into rice. Cover and let stand 5 minutes. Transfer to bowl and serve.

1/4 cup warm water
1/4 cup extra virgin olive oil, plus
2 tablespoons extra virgin olive oil
2 tablespoons champagne vinegar or 2 tablespoons white wine vinegar
1/2 lb fresh peas, shelled or 1/2 lb sugar snap pea, strings removed
1 1/2 lbs small squid, cleaned,bodies cut into thin rings and tentacles halved if large
1/4 cup dry white wine
2 cloves garlic, finely diced
coarse sea salt
fresh ground pepper
3 large ripe tomatoes, peeled,seeded and cut into small dice
20 basil leaves, finely chopped
2 sprigs fresh thyme, use leaves only,coarsely chopped

Steps:

  • In a large saucepan, bring 10 cups of water to a boil.
  • Stir in 1 tblsp salt.
  • Add the rice and cook uncovered over medium heat until al dente, about 15 minutes.
  • Drain in a colander, rinse with cold water and drain again.
  • Place the rice in a large serving bowl and toss with the saffron water.
  • Stir in ¼ cup of the olive oil and the vinegar.
  • In a large saucepan of boiling salted water, blanch the peas for 1 minutes.
  • Drain in a colander, rinse with cold water and drain again.
  • In a large nonreactive skillet, heat the remaining 2 tblsps olive oil over high heat until hot but not smoking.
  • Add the squid and cook, stirring occasionally, just until opaque throughout, 2-3 minutes.
  • Transfer the squid to a bowl with a slotted spoon.
  • Add the wine and garlic to the skillet and boil until the liquid is reduced to ½ cup, about 3 minutes.
  • Season with coarse sea salt and pepper and let cool.
  • Add the squid and its liquid, the peas, tomatoes, basil and thyme to the rice and toss.
  • Season with salt and pepper if desired.
  • Let stand for at least 20 minutes before serving.
  • This salad is best at room temperature.
