CHERRY AND SPRING ONION SALSA



Cherry and Spring Onion Salsa image

Number Of Ingredients 8

1 small red spring onion bulb and greens
3 tablespoons lemon juice, or more to taste
1 1/2 cups pitted cherries, or about 8 ounces
1 teaspoon finely chopped chives
1 tablespoon finely chopped parsley
1 small jalapeño, seeded and finely chopped
5 tablespoons extra virgin olive oil
1/2 teaspoon kosher salt

Steps:

  • Finely dice spring onion bulb and greens. Place 3 tablespoons diced bulb and 1 tablespoon greens in a small bowl and pour lemon juice over them. Set aside for 10 minutes to macerate.
  • Halve the cherries and slice into slivers. Place cherries, herbs, jalapeño, olive oil and salt in a medium-size bowl and stir to combine.
  • Add onion and greens, taste and add more salt and lemon juice if needed.
  • Let the salsa sit for at least 5 minutes to meld flavors.

1 stick (8 tablespoons) salted butter, melted
Zest of 1 lemon plus 1/4 cup lemon juice
2 tablespoons capers
2 cloves garlic, grated on a rasp grater
Pinch kosher salt
4 to 8 spring onions or scallions
4 sole fillets
8 thin slices lemon
Hot Hungarian paprika, for sprinkling

Steps:

  • Line a baking sheet with nonstick aluminum foil and place it in the oven. Preheat the oven to 400 degrees F.
  • For the butter: Meanwhile, whisk together the butter, lemon zest and juice, capers, garlic and salt in a medium bowl.
  • For the sheet: Slice the spring onions in half lengthwise. If using scallions, they can be left whole.
  • Make sure you have all of your ingredients ready to go so you can assemble the sheet and return it to the oven quickly. Remove the sheet from the oven once the oven is preheated. Quickly add the fish in a row, leaving about an inch between each piece. Drizzle the butter mixture over the top, add the lemon slices over the fish, then the spring onions. Sprinkle with paprika. Return the sheet to the oven and bake until cooked through, 12 to 18 minutes. Serve warm, preferably with garlicky mashed potatoes!

"ELMER'S" SUMMERTIME SWEET ONION SALSA



Picked up this recipe at a local "Elmer's" restaurant. It sounds so good and easy to prepare. They were giving out the recipe free so I guess it's OK to post here. I haven't tried it yet, but the card said: It takes only minutes to produce the best-tasting summer salsa ready for dipping, topping, and summertime fun. Cooking time includes standing time.

4 large plum tomatoes, cored, seeded and cut into 1/2 inch dice (about 1 3/4 cups)
1 jalapeno, seeds and ribs removed, minced
2 green onions, including green tops, cut into thin slices
3/4 cup onion, sweet Walla Walla, diced (I think any sweet onion would work)
1/2 cup fresh cilantro leaves, chopped
1/2 teaspoon garlic, minced
1 1/2 tablespoons fresh lemon juice
1 1/2 teaspoons fresh lime juice
1 teaspoon sugar
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/4 teaspoon sea salt or 1/4 teaspoon kosher salt

Steps:

  • In a medium bowl, combine the tomatoes, jalapeno, green onion, sweet onion, cilantro and garlic.
  • In a measuring cup, stir together the lemon juice, lime juice, sugar, coriander, cumin and salt.
  • Stir until the sugar and salt dissolve, and then pour over the tomato mixture.
  • Stir gently to combine.
  • Transfer to a serving bowl, cover, and set aside for at least 1 hour to allow the flavors to meld.

Spring onion & halloumi bruschetta with carrot & saffron salsa image

An interesting new starter idea of fried cheese from Cyprus, crispy toasted sourdough bread and a carrot topping

225g pack halloumi cheese
4 carrots , thinly sliced into rounds
50ml extra-virgin olive oil
pinch of saffron threads
juice ½ lemon
100g whole blanched almond
small bunch coriander , chopped
2 tbsp vegetable oil
4 slices sourdough bread
1 garlic clove , halved
12 spring onions , trimmed
1 red chicory , leaves separated

Steps:

  • If you want to reduce the saltiness of the halloumi, soak it for two hours beforehand in cold water.
  • Cut the halloumi evenly into 8 slices across the width of the cheese. Heat oven to 200C/180C fan/gas 6. Toss the carrots together with the olive oil, saffron, lemon juice and some seasoning. Tip onto a baking tray and roast for 20 mins or until tender and golden. Leave to cool, then tip into a food processor with the almonds and coarsely blitz. Scrape the salsa out into a bowl and add the chopped coriander. Mix well and add more seasoning or lemon juice if needed.
  • Heat the vegetable oil in a large pan. Thoroughly pat dry the halloumi slices. When the pan is hot, carefully place in the pan and cook over a medium heat until golden brown, then turn over and cook until the other side is golden.
  • While the cheese is cooking, toast the sourdough, then rub one side with garlic. Place a piece of toast on each of 4 plates and top with 2 slices of halloumi. Add the spring onions to the pan and cook for a couple of mins on each side until wilting and a little golden. Put 3 spring onions on each halloumi-topped sourdough slice, then generously spoon over the carrot & saffron salsa. Serve with chicory leaves.

Steps:

  • Place sesame seeds in heavy small skillet. Stir over medium-low heat until seeds are light golden, about 2 minutes. Cool.
  • Whisk lime juice, sesame oil, soy sauce, sugar and crushed red pepper in medium bowl to blend. Add sweet onion, green onions, red bell pepper and sesame seeds. Season salsa to taste with salt and pepper; toss to blend. (Can be prepared 2 hours ahead. Cover and chill.)
