BRAISED CHICKPEAS WITH SQUASH

Braised Chickpeas with Squash image

Girl Meets Farm host Molly Yeh celebrates Rosh Hashanah with a vegetarian dish inspired by braised brisket.

Provided by Molly Yeh

Categories     side-dish

Time 2h30m

Yield 6 servings

Number Of Ingredients 17

1/4 cup extra-virgin olive oil
1 large onion, chopped
2 large or 4 small carrots, chopped
2 stalks celery, chopped
Kosher salt
Pinch of cayenne pepper
Freshly ground black pepper
4 cloves garlic, minced
1 cup dry red wine
1 small butternut squash (about 1 pound), peeled and cut into 1 1/2-inch cubes
1 14-ounce can diced tomatoes
2 cups vegetable broth
2 15-ounce cans chickpeas, drained and rinsed
2 sprigs rosemary
2 bay leaves
Chopped fresh parsley, for topping
Bread, for serving

Steps:

  • Preheat the oven to 350˚. Heat the olive oil in a large Dutch oven over medium heat until it shimmers. Add the chopped onion, carrots, celery and a pinch of salt and cook, stirring occasionally, until soft, 10 to 12 minutes. (Alternatively, you can work in a non-ovenproof pot and transfer your mixture to a baking dish when it's time to move it to the oven.)
  • Add the cayenne, a few turns of pepper and the garlic to the pot and cook another minute, until fragrant. Add the wine and cook until it's reduced by half, 3 to 4 minutes. Add the squash, tomatoes, broth, chickpeas, rosemary and bay leaves; give everything a stir.
  • Cover the pot, transfer to the oven and braise until the chickpeas are soft and the squash is tender, about 2 hours. Discard the bay leaves and rosemary sprigs before serving. Top with parsley, serve with bread and enjoy!

BUTTERNUT SQUASH AND TURKEY CHILI

Butternut Squash and Turkey Chili image

This recipe captures many of the traditional flavors of chili, but boosts its texture, color and vitamins. We've used protein-rich black beans, lean ground turkey and sweet butternut squash, as well adding some unexpected crunch and thickening power with chia seeds.

Provided by Food Network Kitchen

Categories     main-dish

Time 1h25m

Yield 6 servings

Number Of Ingredients 17

3 teaspoons olive oil
1 pound 99 percent fat-free ground turkey
1 medium onion, diced
3 cloves garlic, minced
1/4 cup chili powder
1 tablespoon ground cumin
2 teaspoons ground coriander
3 tablespoons tomato paste
Kosher salt
1 small butternut squash, peeled, seeded and cut into 1/2-inch cubes (about 3 1/2 cups)
4 ripe plum tomatoes, chopped
Two 14-ounce cans black beans, drained and rinsed
1/4 cup chia seeds
Freshly ground black pepper
1 to 2 tablespoons apple cider vinegar
1/4 cup fresh cilantro leaves, chopped
1/4 cup reduced-fat sour cream

Steps:

  • Heat 1 1/2 teaspoons of the oil over medium-high heat in a large Dutch oven. Add the turkey and cook, breaking up chunks with the side of a wooden spoon, until browned, about 5 minutes. Push the turkey to the edges of the pan, leaving the middle empty. Reduce the heat to medium and add the remaining 1 1/2 teaspoons oil, then the onion and garlic to the center of the pan. Cook, stirring occasionally, until the vegetables start to soften, about 3 minutes. Add the chili powder, cumin and coriander and stir about 30 seconds. Add the tomato paste and 1 teaspoon salt and stir until the paste begins to darken in color, about 30 seconds. Then add the squash, tomatoes and 4 cups water, scraping the bottom of the pan to release any stuck bits. Bring to a simmer, adjust the heat and simmer, uncovered, until the chili has thickened and the squash is tender, 35 to 40 minutes.
  • Stir the beans and chia seeds into the chili and heat through, about 5 minutes. Season with an additional 1/2 teaspoon salt and a few grinds of pepper, then taste the chili and stir in up to 2 tablespoons of vinegar. Spoon the chili into bowls and top each bowl with cilantro and a dollop of sour cream.

SPAGHETTI SQUASH WITH SPICY TOMATO SAUCE

Spaghetti Squash with Spicy Tomato Sauce image

For me, spaghetti sauce usually means a jar of whatever is on sale at the grocery store, so I wasn't sure about how a spicy spaghetti sauce of my own creation would turn out. I have a tendency to forget that a little bit of spice goes a long way and end up sweating my way through meals. But this time I kept it under control and came up with something that isn't particularly spicy at first but has a bit of a kick at the end. Spaghetti squash is the perfect way to keep calories in check. It has a taste and texture similar to pasta, but only about one-quarter of the calories.

Yield serves 4

Number Of Ingredients 11

1 large spaghetti squash (3 1/2 to 4 pounds)
1 large onion
4 cloves garlic
1 tablespoon olive oil
1 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper
1 (6-ounce) can tomato paste
1 (14-ounce) can diced tomatoes
3/4 cup water
1 tablespoon sugar
Salt and pepper

Steps:

  • Preheat the oven to 350°F.
  • Cut the spaghetti squash in half and remove the seeds and soft strings with a large spoon. Place the squash cut side down in a baking pan and bake for 1 hour, or until a fork easily slides into the squash.
  • While the squash is in the oven, peel the onion and cut into 1/4-inch pieces. Peel and finely chop the garlic or pass it through a garlic press. Place the olive oil in a saucepan over medium heat. Add the onion and cook, stirring occasionally, for 10 to 12 minutes, or until lightly browned. Add the garlic, Italian seasoning, and crushed red pepper and cook, stirring constantly, for 1 minute. Add the tomato paste, tomatoes with their juice, water, and sugar and simmer over low heat for 30 minutes. Season with salt and pepper.
  • When the squash is cooked, take it out of the oven and, holding each of the squash halves with a hot pad, scrape the insides with a fork to remove and separate the squash strands. Place some of the spaghetti squash "noodles" on each of 4 plates and top with the sauce.
  • Although spaghetti squash is considered a winter squash, it's available year-round. When buying it, look for smooth, firm squash without ridges, bumps, or spots. It can be stored for several weeks at room temperature and even longer refrigerated. On top of all that, 1 cup of spaghetti squash contains only 45 calories, is an excellent source of folic acid, and is high in fiber. What more could you ask for?
