CREAMY WHITE CHOCOLATE AMBROSIA
Looking for a scrumptious (but simple) holiday dessert? Made with white chocolate pudding mix and canned pineapple, this creamy ambrosia fits the bill.

AMBROSIA SALAD
Remember this classic? You might be surprised at how it satisfies a modern palate, even as it gives a retro wink to the last century.

Steps:
- Position an oven rack in the center of the oven and preheat to 350 degrees F.
- Spread the pecans on a small baking sheet and bake, stirring once halfway through, until lightly browned and toasted, 6 to 8 minutes. Transfer the pecans to a medium bowl and cool completely.
- Whip the heavy cream in a medium bowl with an electric mixer to stiff peaks. Stir in the sour cream by hand until combined. Stir in the marshmallows, pineapple and coconut. Gently fold in the mandarin oranges. Cover with plastic wrap and refrigerate until chilled, at least 2 hours and up to overnight.
- Right before serving, roughly chop the pecans. Fold the pecans and maraschino cherries into the ambrosia salad. Transfer to a serving bowl and serve immediately.

- Combine the heavy cream and confectioners' sugar in a large bowl. Whip with an electric mixer until thick but not grainy. Mix in sour cream.
- Use a rubber spatula to fold in the flaked coconut, pineapple, strawberries, blueberries and marshmallows until everything is evenly distributed. Cover and chill for at least 4 hours before serving. It tastes best if chilled overnight.

MOM'S AMBROSIA CHOCOLATE CHIP COOKIES
These are the cookies my mom used to make and I haven't found a better recipe anywhere! I also like to mix in white chocolate chips or the Nestle swirled chips. Just make sure to put some of the swirled chips on top of each ball right before you cook them.

Steps:
- Preheat oven to 375°F.
- In a small mixing bowl, stir together flour, baking soda and salt.
- Set aside.
- In a large mixing bowl, cream butter and sugar together until light and fluffy.
- Add vanilla and egg. Beat well.
- Add dry ingredients to creamed mixture. Mix well.
- Add chocolate chips. Mix well.
- Roll a heaping teaspoon of dough into a ball.
- Place each ball 2" apart on an ungreased cookie sheet.
- Bake in preheated oven for 10-15 minutes.
- Remove from oven and place cookies on a cooling rack.

- Preheat oven to 400°F with rack in middle.
- Pierce softest eye of coconut with a small screwdriver, then drain liquid and discard. Bake coconut in a shallow baking pan until it cracks, about 20 minutes. When cool, wrap in a towel and break shell with a hammer. Pry flesh from shell with screwdriver and peel off brown membrane with a vegetable peeler. Rinse coconut flesh. Coarsely grate coconut on large holes of a box grater using light pressure in long strokes to produce long, feathery flakes.
- Cut peel and pith from oranges with a sharp paring knife. Working over a large bowl, cut segments free from membranes, letting them drop into bowl; squeeze juice from membranes into bowl.
- Gently toss oranges with coconut, sugar, salt, and Sherry. Chill, covered, at least 1 hour.

- Peel the oranges, taking care to remove all the white pith. Slice the oranges over a bowl or storage container so that you catch any juice, and add the slices to the bowl. Circular slices look prettiest, hold together best, and are easiest.
- Add the pineapple and coconut to the orange slices and gently toss. The ambrosia can be refrigerated up to two days, covered.
- When ready to serve, slice the banana and toss it with other fruits. Add the cherries last.
- Serve the ambrosia in your prettiest glass bowl. It will become a tradition.

- Heat oven to 350°F (325°F for dark or nonstick pans). Make, bake and cool cake as directed on box for two 8-inch or 9-inch round pans.
- To make orange-coconut filling, in small microwavable bowl, mix sugar and cornstarch. Gradually stir in 1/3 cup water. Stir in orange peel and orange juice. Microwave uncovered on High about 1 minute or until mixture thickens and boils; stir. Microwave 30 seconds longer, stirring every 15 seconds. Stir in 2 tablespoons coconut; cool.
- Fill cake layers with orange-coconut filling. Frost side and top of cake with frosting. Sprinkle 1/2 cup coconut over top. Store loosely covered.
