1 tablespoon maple syrup
1 tablespoon port
1 teaspoon chopped fresh thyme, plus 1 sprig, for garnish
Zest of 1/2 orange plus juice of 1 orange

Steps:

  • Tip the cranberry sauce into a bowl, add the maple syrup, port, chopped thyme and orange zest and juice and stir through. Garnish with a sprig of thyme.

1/2 cup sugar
1/4 cup plus 2 tablespoons crème decassis (black-currant-flavored liqueur)
1 12-ounce bag fresh cranberries
1 cup dried cranberries
1 tablespoon ketchup

Steps:

  • Bring 1 cup water, 1/2 cup sugar, and 1/4 cup crème de cassis to boil in heavy medium saucepan over high heat, stirring to dissolve sugar. Add fresh cranberries; return to boil. Reduce heat to medium-low; simmer until cranberries pop and sauce thickens, about 15 minutes. Remove from heat. Stir in dried cranberries, ketchup, and 2 tablespoons crème de cassis. Chill until cold, at least 4 hours and up to 3 days.

1 tablespoon unflavored gelatin
1/3 cup vodka
2 tablespoons orange-flavored liqueur, such as Cointreau
One 14-ounce can jellied cranberry sauce
Cooking spray

Steps:

  • Put the gelatin in a small bowl, and pour the vodka and liqueur over it. Let sit until the gelatin is completely soft, about 10 minutes.
  • Meanwhile, transfer the cranberry sauce to a small saucepan. Rinse out the can, dry it and coat the inside with cooking spray. Heat the sauce over medium-low heat; once it starts to bubble, whisk it vigorously until it's completely smooth with no lumps (the sauce will darken and have a slight sheen). Remove the pan from the heat, add the softened gelatin and all the liquid, and stir until incorporated. Pour the mixture into the prepared can.
  • Let the cranberry sauce sit at room temperature until the can is just warm to the touch. Cover with plastic wrap, and refrigerate until completely set, at least 4 hours but preferably overnight.
  • To serve, run a small knife around the lip of the can to release the cranberry sauce slightly, then turn the can carefully under running hot water (don't get water in the can). Invert the can onto a cutting board, and firmly tap until the sauce unmolds in 1 piece. Lay the sauce on its side on a serving plate, and cut into 6 or 7 slices.

This is my absolute favorite cranberry sauce recipe. I grew up eating the cranberries out of the can (or should I say avoiding them completely because they're pointless), and then I discovered there's more to cranberries than that jellied version of cranbery sauce. Don't stress about the alcohol because it's only for flavor. You won't really get drunk from this recipe unless you're drinking something while you make it.

1 1/4 cups sugar
1/4 teaspoon ground cinnamon
1 dash nutmeg
1/4 cup Bourbon

Steps:

  • Preheat oven to 350.
  • Combine cranberries, sugar, cinnamon, and nutmeg in an 8" square pan.
  • Bake 50 to 60 minutesor until the cranberries have softened and become juicy.
  • Uncover and stir in the bourbon.
  • The alcohol will evaporate leaving the liquor's smoky essence.
  • Refrigerate covered until ready to serve.

3/4 cup heavy cream
1/4 cup sugar
1 cup cranberries, picked over
1/3 cupcassis
4 1/2 ounces semisweet chocolate, chopped
1 ounce unsweetened chocolate, chopped

Steps:

  • In a saucepan combine the cream, the sugar, the cranberries, and the cassis and simmer the mixture, stirring occasionally, for 10 to 15 minutes, or until the berries have burst. Remove the pan from the heat, stir in the chocolates, stirring until the mixture is smooth, and strain the mixture through a sieve into a bowl. The sauce keeps, covered and chilled, for 2 weeks. Serve the sauce warm over ice cream.

1 1/2 cups cassis syrup (not liquor or juice)
1/2 cup water
3/4 cup granulated sugar
1 1/2 pounds fresh cranberries (6 cups)

Steps:

  • Combine all ingredients in a 2 1/2-quart souffle dish with a tight-fitting lid. Cook, covered, at 100 percent power in a high-power oven for 10 minutes.
  • Uncover and stir well. Cook, uncovered, for 10 minutes.
  • Remove from oven. Rinse a metal bowl or mold with ice water. Pour in cranberry mixture. Allow to cool. Cover with plastic wrap and refrigerate overnight.
  • Just before serving, dip mold into a bowl of hot water for a few seconds and jiggle slightly to loosen. Invert onto a serving platter or into the well of a dinner plate.

While most of it is poured over the folded crepes, a bit is added to the yogurt, honey and lime filling, making it just sweet enough.

1 1/4 cups/300 milliliters low-fat milk, such as skim or 1 percent
2 large eggs
1/4 teaspoon salt
1 tablespoon/15 grams sugar
1/3 cup plus 1 tablespoon/55 grams unbleached all-purpose flour, sifted
1/3 cup plus 1 tablespoon/55 grams whole wheat flour or whole wheat pastry flour, sifted
3 tablespoons unsalted butter, melted, plus butter for the pan
1 teaspoon finely grated lime zest (from about 1/2 lime)
1/4 cup sugar
1/2 teaspoon rose water
1 6-ounce box raspberries (about 1 1/4 cups)
1 tablespoon crème de cassis liqueur
1 1/4 cups/300 milliliters plain Greek yogurt (2 percent fat)
1 tablespoon plus 1 teaspoon mild honey, such as clover or acacia (more to taste)
1 1/4 teaspoons finely grated lime zest (from about 1/2 lime)
1 to 1 1/2 teaspoons fresh lime juice (to taste)
1 6-ounce box raspberries (about 1 1/4 cups)
Powdered sugar for dusting (optional)

Steps:

  • To make crepe batter, place milk, eggs, salt and sugar in blender. Turn on and, with the motor running, add flours, then melted butter and blend at high speed for 1 minute, until well mixed and smooth. Transfer to a bowl, stir in lime zest, cover and let rest for at least 30 minutes. If resting batter longer, refrigerate. (Whisk again before making crepes.)
  • While batter is resting, make raspberry sauce. Combine 1/3 cup water and sugar in small saucepan and bring to a boil. Reduce heat to medium low and simmer until sugar has dissolved. Remove from heat. Stir in rose water, raspberries and cassis liqueur. Return to heat, bring to a simmer, cover and simmer 10 minutes. Remove from heat and strain the mixture into a bowl. Press the raspberry pulp through strainer with a spatula and discard seeds. Whisk or stir to blend pulp and syrup and set aside.
  • Make the yogurt filling: In a separate bowl, whisk together yogurt, honey, lime zest and juice. Taste and adjust sweetness. Set aside.
  • To make crepes, heat 8-inch nonstick crepe pan or skillet over medium-high heat and brush lightly with butter. Pan must be hot when you add crepe batter. Lift pan off heat and pour or ladle in a scant 1/4 cup batter, enough to thinly coat bottom of pan. Tilt and swirl pan to distribute batter in an even layer. Return pan to heat and cook crepe for about 1 minute, until edges color and bottom of crepe is lightly browned. Crepe should not stick to pan. Flip crepe over and cook for 30 seconds on the other side, until speckled. Turn out onto a plate. Continue with remaining batter, brushing pan occasionally with butter if desired.
  • If you want to serve crepes at their hottest, assemble them as they come out of the pan. Spread a rounded tablespoon of the yogurt mixture over each crepe, drizzle on 1/2 teaspoon raspberry sauce, fold crepe in half and then in half again. Place on plate or platter. When all crepes are made and filled, spoon or pour sauce over, garnish with raspberries, and, if desired, dust with powdered sugar. Serve.

This recipe was graciously shared with me by a Jamaican friend, many years ago. It makes a delicious sauce, different from any other cranberry sauce I've ever tasted or made. It does not "gel" but you do want to cook it long enough to make a good, thick consistency. You can use 1 tablespoon of excellent quality ground cinnamon instead of the cinnamon stick, if you prefer. Immediately turn heat down and simmer for about 1 hour or until the sauce has thickened. Taste for sweetness and adjust with additional sugar if necessary. You can not overcook, so continue cooking until you have a good thick consistency. Let mixture cool a bit then refrigerate in a covered container.
