1/3 cup butter, softened
1-1/4 cups sugar
2 eggs
1/2 cup buttermilk
1/3 cup unsweetened applesauce
2 ounces semisweet chocolate, melted
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1-1/2 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon baking soda
2 cups shredded zucchini
2 teaspoons confectioners' sugar

Steps:

  • In a large bowl, beat butter and sugar until crumbly, about 2 minutes. Add eggs; mix well. Beat in the buttermilk, applesauce, chocolate and vanilla. Combine the flour, baking powder, salt and baking soda; beat into butter mixture just until moistened. Stir in zucchini., Transfer to a 13x9-in. baking dish coated with cooking spray. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Sprinkle with confectioners' sugar.

⅓ cup vanilla or plain yogurt
3 tbsp butter, softened
½ cup brown sugar, lightly packed
¼ cup granulated sugar
2 eggs
1 cup shredded zucchini
¾ cup quick oats
1¼ cup whole wheat flour
2 tsp ground cinnamon
½ tsp baking soda
½ tsp baking powder
½ tsp salt, scant
½ cup semi-sweet chocolate chips, heaping

Steps:

  • Preheat oven to 325 degrees.
  • Spray a 9x13 pan with cooking spray and set aside.
  • Combine yogurt, butter, brown sugar, and granulated sugar. Mix well with a hand mixer or in a stand mixer for 1 minute or until thoroughly combined.
  • Add eggs and mix until thoroughly incorporated.
  • Next, add shredded zucchini and quick oats. Stir and let sit for 5-10 minutes. (This step gives the zucchini a chance to seep and a chance for the quick oats to absorb moisture.)
  • Mix in the flour, cinnamon, baking soda, baking powder, and salt until evenly combined.
  • Stir in chocolate chips and spread evenly in the greased 9x13 pan.
  • Bake at 325 degrees for 20-23 minutes or until a toothpick comes out clean.

1 cup (2 sticks) unsalted butter, softened
1 cup (packed) light brown sugar
1 teaspoon pure vanilla extract
3 large eggs, at room temperature
2 cups coarsely grated zucchini
1 cup semisweet chocolate chips
1/2 cup walnuts, toasted and chopped
Special equipment: 12-cup Bundt or fleur-de-lis pan

Steps:

  • Preheat the oven to 350°F. Butter a 12-cup Bundt pan well and dust with some flour, knocking out excess.
  • Sift together the flour, baking soda, baking powder, and salt into a bowl. Beat together the butter and brown sugar in a large bowl with an electric mixer at high speed until pale and fluffy, about 3 minutes, then beat in the vanilla.
  • Reduce the mixer speed to medium and add the eggs 1 at a time, beating well after each addition and scraping down side of bowl occasionally, then beat until very smooth and fluffy, about 2 minutes more.
