MANDARIN ORANGE NAPOLEONS
Chinese five-spice powder, sprinkled throughout the layers of phyllo dough, and an orange-cream cheese filling give this dessert a wonderful aroma.

Steps:
- Put oven rack in middle position and preheat oven to 375°F.
- Whisk together five-spice powder and 2 tablespoons granulated sugar in a small bowl.
- Cover phyllo with overlapping sheets of plastic wrap and a dampened kitchen towel. Arrange 1 phyllo sheet on a large baking sheet, then brush with some butter and sprinkle with one third of spiced sugar. Make 2 more layers in same manner. Top with remaining phyllo sheet and brush with remaining butter. (For a corrugated look, invert a large rectangular cooling rack and place it on top of phyllo.)
- Bake until golden, 12 to 15 minutes. Carefully remove cooling rack (if using) and transfer phyllo (in 1 piece) with 2 metal spatulas to another rack to cool.
- While phyllo cools, blend together cream cheese, lemon juice, vanilla, 2 tablespoons reserved orange syrup (discard remainder), and remaining 2 tablespoons granulated sugar in a food processor until smooth. Transfer to a bowl and fold in oranges.
- Break phyllo with your hands or cut with a serrated knife into 12 pieces. Arrange 1 piece of phyllo on a plate and top with a dollop of orange cream. Repeat layering and top with another piece of phyllo. Make 3 more napoleons in same manner. Dust with confectioners sugar.
MANDARIN ORANGE MARMALADE COOKIES
A tasty little cookie that comes from the about.com site. I have made this once (today actually lol) and used semi sweet chocolate and added a teaspoon of orange extract....very very good. Prep time includes chilling time for dough.

Steps:
- Preheat oven to 300 degrees F & Line cookie sheets with parchment paper or silpats.
- Whisk together flour and baking powder in a medium bowl; set aside.
- Place butter and sugar in a large mixing bowl and blend with an electric mixer on medium speed until the mixture appears grainy but well-mixed.
- Add egg and orange marmalade, beating until smooth; reduce mixer speed to low and add flour mixture and mandarin oranges.
- Mix only until combined; do not overmix.
- Fold in white chocolate chips; chill mixture for 30 to 60 minutes to firm up.
- Drop tablespoons of dough onto prepared cookie sheets, placing cookies 1-1/2 inches apart.
- Bake 15 to 18 minutes, until bottoms just begin to brown.
- Let rest on cookie sheets for 5 minutes before using a spatula to move them to racks.
- Cool to room temperature and dust with powdered sugar, if desired.

- Preheat the oven to 300 degrees F (150 degrees C), fan-forced.
- In a mixing bowl, cream together Salted Butter (75 gram) and Powdered Confectioners Sugar (75 gram) until fluffy.
- Grate in the zest of the mandarin orange and drizzle in 1 1/3 Tbsp Mandarin Orange (1).
- Add some Orange Extract (1 teaspoon) followed by an Egg (1).
- Once it is well combined, stir in All-Purpose Flour (200 gram) and knead until it turns into a dough.
- Portion out 20 grams of dough into a separate bowl. Stir in 1/2 Tbsp of salted butter and Green Food Coloring (as needed). Transfer into a piping bag and set aside.
- For the rest of the dough, dye it with some Orange Food Coloring (as needed) and knead until the color is even.
- Roll them into 1/2 Tbsp balls.
- Then insert a Whole Clove (as needed) onto each ball. Pipe out the green paste you prepared earlier to mimic it like the leaves of the oranges.
- Bake them in the oven for about 30 to 35 minutes at 300 degrees F (150 degrees C).
- Let them cool before transferring to a container or serving.

- Preheat oven to 350°.
- In a large bowl, cream the butter with the sugars for about 2-3 minutes. Add the egg and orange extract and beat for another 1-2 minutes. (One teaspoon of orange extract yields a fairly subtle orange flavor in the cookies, so if you want more orange flavor, go ahead and add a little more.)
- Add the flour, baking soda and salt and mix until well combined.
- Once the mandarin oranges are drained, place them on a plate and mash them with a fork. Don't re-drain the oranges, and then add them to the dough. Mix just until combined.
- Use a cookie scoop to scoop the dough onto cookie sheets that have been lined with parchment paper or silicone baking mats.
- Bake cookies for 8-9 minutes. Allow the cookies to cool on baking sheets for a few minutes before transferring to wire racks to cool completely.
- To make the glaze, mix the powdered sugar, orange extract and about 2 tablespoons of reserved mandarin orange juice together. Add more juice as needed to achieve the desired consistency. Spoon or drizzle about 1 teaspoon of glaze onto each cookie.
