The easiest and tastiest fish marinade ever! Best on halibut, mahi mahi, or orange roughy.

- In a shallow dish, mix the soy sauce, vegetable oil, and bourbon whiskey. Place the halibut fillets in the dish, and marinate 30 minutes in the refrigerator.
- Preheat the grill for high heat.
- Lightly oil the grill grate. Place halibut on the grill, and discard marinade. Cook 5 minutes on each side, until easily flaked with a fork.

SIMPLE SAUTEED FISH WITH GARLIC

Steps:
- Rinse the fish fillets and blot dry with a paper towel. Season with salt and pepper.
- Heat butter in wide sauté pan over medium low heat. Once butter has begun to foam, place the fish into the pan.
- Add garlic. Sauté 1 minute without disturbing the fish.
- Tilt the pan toward you and using a spoon, ladle the garlic butter over the fish. Continue to sauté while basting the fish for 2-3 minutes.
- Using a spatula, gently flip fish. Reduce heat to low, cover pan and cook for 2 minutes.
- Uncover pan, and continue basting fish with butter until it is just cooked through, another minute or two.
- Add 3 tablespoons of parsley and turn off the heat.
- Transfer fish onto a platter or individual plates. Tilt pan and spoon butter sauce evenly over fillets.
- Sprinkle with remaining tablespoon parsley and lemon juice.
FISH TACOS

- Marinate the Onion
- Put the onion in a small bowl and pour in enough red wine vinegar to cover well. Set aside for at least 30 minutes or up to several weeks.
- Marinate the Fish
- Pour the olive oil into a small bowl and add the ancho chile powder, oregano, cumin, chopped cilantro, and jalapeño. Mix well. Place the fish on a dish and pour the marinade over it, making sure to coat the fish well on both sides. Allow to marinate for 20 minutes.
- Cook the Fish
- Heat a nonstick sauté pan over medium-high heat. Remove the fish from the marinade and place in the hot pan (there is no need to add more oil). Season the fish with salt. Cook the fish for 4 minutes undisturbed, then turn over, and cook for another 2 minutes. Remove the pan from the heat and flake the fish into the pan with a fork, making sure to mix in all the marinade that has stuck to the bottom of the pan. Check for seasoning and add more salt if necessary. Set aside.
- Heat the Tortillas
- Place four of the tortillas on a plate and sandwich them between two slightly dampened sheets of paper towel. Microwave on high for 45 seconds. Place the warm tortillas in a towel-lined basket or plate and cover. Repeat with the remaining tortillas.
- Assemble and Serve
- To assemble the tacos, place a heaping spoonful of the marinated flaked fish onto the center of a tortilla. Top with the marinated onions. Serve accompanied by Mexican crema and salsa.
- Garnish with lime wedges and cilantro sprigs.
PAN-SEARED MARINATED HALIBUT FILLETS

- In a large sealable plastic bag, combine the 6 tablespoons olive oil, garlic, basil, salt, pepper and lemon juice. Add fish, seal bag, and turn to coat. Refrigerate for at least 30 minutes or up to 2 hours.
- In a large flat skillet (do not use a ridged pan), pour light olive oil or vegetable oil, tilting pan to spread evenly. Warm over high heat until smoking, then add fish fillets. Brush top and sides with marinade. Cook until seared, about 3 minutes; turn and sear other side, about 3 more minutes. Brush top and sides with marinade again. Reduce heat to medium. Cook until centers of fillets are just opaque, 2 to 4 minutes more on each side depending on thickness, brushing with marinade as before. Garnish with parsley, if desired, and serve.

PAN-SEARED TILEFISH WITH GARLIC, HERBS AND LEMON
All cooks needs a basic sautéed fish fillet recipe in their repertory, and this one could not be much simpler. It does require a step that may intimidate on first glance: you baste the fish with the fat you're cooking it in. Don't worry. Just use a good amount of fat in the pan, about a tablespoon per person (you could get away with a little less if you insist, or use half white wine and half fat). Basting helps cook the fish evenly and keeps it and moist. In this recipe, the fat is butter. As the fish cooks, the butter browns, taking on a nutty scent that is classic with seafood. Tilefish is specified but any firm fillet will do, from sea bass to grouper.

- Remove any remaining pin bones in the fish, pat dry, and season both sides with salt and pepper.
- In a large sauté pan over medium heat, melt butter. Once butter has begun to foam, lay fish in pan. Add green garlic or scallions and a pinch of salt. - Mix marinade ingredients in glass bowl or pie plate and then add fish. Marinate for no more than 2 hours, you don't want ceviche!
- When ready to make fish put skillet on medium heat with oil and butter.
- In one bowl beat egg. In another bowl put in bread crumbs.
- Dip fillets, one at a time, in egg mixture, then roll in bread crumbs. Discard marinade. Then saute in skillet. Don't overcrowd them! I usually only have room for 2 fillets at a time. Fry 5 minute one side then flip. Fry 5 minute on other side. Fillets are done when flake easily with a fork. flip one more time and cook each side 2 more min if unsure.
- If butter runs low add more, maybe 2 more TB. Add a splash of wine to the skillet if u want.
- Repeat with other fillets. Enjoy!

- place shrimp in bowl. add garlic, crushed chilies, teriyaki sauce and lemon juice, marinate for 30 minutes.
- heat half of oil in frying pan over high heat. add vegetables and season. cook for 6 minutes. remove vegetables from pan and set aside.
- add remaining oil to pan and heat. add shrimp and saute 2 minutes on each side over high heat.
- return vegetables to pan with shrimp. pour in marinade and season well. add almonds, stir and cook 2 minutes.

FISH MARINATED WITH VINEGAR, SWEET WINE, TOMATO, AND ROSEMARY

- Sprinkle fish with salt and pepper. Coat with flour. Heat 3/4 cup oil in heavy large skillet over high heat. Sauté fish in batches until golden brown, about 5 minutes per side. Transfer to paper towels to drain. Discard oil; wipe out skillet.
- Heat remaining 3/4 cup oil in same skillet over medium-high heat. Add onions and crushed red pepper. Sauté until onions are tender, about 4 minutes. Add garlic and dried rosemary; sauté 1 minute.
