Steps:
- For ice cream:
- Mix cream and milk in heavy large saucepan. Scrape in seeds from vanilla bean; add bean. Bring to simmer; remove from heat.
- Whisk yolks and sugar in large bowl to blend. Gradually whisk hot cream mixture into yolk mixture. Return mixture to saucepan. Stir over medium heat until mixture thickens and leaves path on back of spoon when finger is drawn across, about 5 minutes. Strain custard into bowl. Cover; chill until cold, about 4 hours.
- For mincemeat:
- Bring all ingredients to boil in heavy large saucepan. Reduce heat to medium and cook until almost all liquid is absorbed, stirring frequently, about 15 minutes. Discard cinnamon stick. Transfer mixture to bowl; refrigerate until cold, about 2 hours.
- Process custard in ice cream maker. Transfer ice cream to bowl. Fold in 3 cups cold mincemeat. Cover and freeze until firm, about 4 hours. (Can be made 3 days ahead. Keep frozen.)
VANILLA ICE CREAM WITH FLAMBEED FRESH MINCEMEAT
Steps:
- Peel, core and dice the apple and mix it in a large bowl with the grated lemon rind and juice so the apple does not discolor. Stir in the grapes, dark and golden raisins, sugar, almonds, candied orange peel, cinnamon, allspice, and cloves until evenly mixed. Scoop the ice cream into individual bowls. Melt the butter in a large frying pan and add the mincemeat.
- Fry it, stirring constantly, until very hot and the juice runs from the fruit, 3 to5 minutes. Pull the fruit to one side of the pan and add the rum in the other. Heat it until almost boiling, then flame it. Stir it into the hot fruit so the whole pan flames. Let the flames die, then spoon the mincemeat over the ice cream.
MINCEMEAT SAUCE FOR ICE CREAM

Mincemeat is a traditional English treat that is usually used as filling for mince pies during Christmas, but it tastes great mixed with vanilla ice cream, as well. - Combine cinnamon, cloves, ginger, nutmeg, and allspice in a bowl. Reserve 1 heaped teaspoon for the mincemeat. Store the rest in a small jar for a later use.
- Inspect two 12-ounce jars for cracks and rings for rust, discarding any defective ones. Immerse in simmering water until mincemeat is ready. Wash new, unused lids and rings in warm soapy water.
- Combine apple, sultanas, sugar, currants, raisins, and butter in a saucepan. Cook over low heat and stir gently until butter has melted. Stir in chopped almonds, orange zest, 1 teaspoon of mixed spice, and cinnamon. Bring mixture to a simmer and cook, stirring occasionally, 5 to 10 minutes.
- Remove from heat and set mincemeat aside to cool down for 30 minutes. Stir in brandy. Spoon into sterilized jars.

I wanted cobbler one day, and all I had was a jar of mincemeat. Decided it was fruit, so why not. Now my family prefers this over the traditional mincemeat pie at the holidays. Great served warm with ice cream!

- Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking dish with cooking spray.
- In a bowl, whisk together the flour, sugar, cinnamon, and nutmeg together until thoroughly combined. Mix in the melted butter and milk, and beat to a smooth batter. Spread the mincemeat out into the prepared baking dish, and pour the batter on top.

- For crust:
- Mix flour, sugar, and salt in processor. Add butter and lard; using on/off turns, process until coarse meal forms. Add 2 tablespoons ice water and process until moist clumps form, adding more ice water by teaspoonfuls if mixture is dry. Form dough into disk. Wrap in plastic and refrigerate 1 hour.
- Roll out dough on floured surface to 12-inch round. Transfer to 9-inch-diameter pie dish. Fold overhang under; crimp edges decoratively. Chill 1 hour.
- Preheat oven to 375°F. Bake crust until edges begin to brown, pressing crust with back of fork if bubbles form, about 15 minutes. Cool slightly. Reduce oven temperature to 350°F.
- Meanwhile, for filling:
- Stir sugar and 2 tablespoons water in medium saucepan over medium heat until sugar dissolves. Increase heat; boil without stirring until sugar turns dark amber, occasionally swirling pan and brushing down pan sides with wet pastry brush, about 7 minutes (time will vary depending on size of pan). Remove pan from heat. Whisk in butter 1 tablespoon at a time (mixture will bubble). Stir in half and half and cream, stirring until all caramel bits dissolve.
- Whisk 2 whole eggs and 1 yolk in large bowl to blend. Whisk in pumpkin, cinnamon, ginger, cloves, and salt. Gradually whisk caramel mixture into pumpkin mixture.
- Transfer filling to crust. Bake until puffed and set in center, about 50 minutes. Cool pie on rack. Chill until cold. (Can be made 1 day ahead. Keep chilled.) Serve with Mincemeat Ice Cream.
MINCE PIE ICE CREAM
Infuse your Ice Cream base with your favourite Mince Pies to create this creamy, delicious Christmas dessert

- If your Mince Pie pastry is a little on the soft side, refresh in an oven at 180C (fan) for 10 mins
- Heat Milk, Cream, half of the Caster Sugar and Vanilla paste in a saucepan over a medium heat. Heat until just starting to simmer then remove from the heat.
- Meanwhile, blitz Mince Pies, Salt and Spices in a food processor until the mix resembles a course crumble (if you blitz too fine the pastry will over-thicken your custard).
- Add the Mince Pie mixture to the Milk and Cream, then leave to cool and infuse for half an hour.
- In a clean bowl, cream together the Egg Yolks and the other half of the Caster Sugar with an electric whisk, until light and fluffy.
- Pass the Mince Pie/Custard mix through a sieve and return to the heat until just simmering again, before gradually and slowly adding it to the creamed Egg Yolks, whisking all the time with a hand whisk.
- Return to the heat in a saucepan and reduce to a thick custard, again whisking all the time. Once it clings to the back of your spoon and leaves a trail when you drizzle it, remove from the heat.
- Churn according to your Ice Cream Machine's instructions before decanting into freezable containers and allowing to firm for a few hours before serving.
- Serve with crumbled Ginger Biscuits, Toasted Pistachios (or your favourite nut) and a drizzle of Date Molasses - fruitier than Treacle and reminiscent of a juicy Mince Pie filling.
