1/2 cup peanut butter (natural, unsweetened)
2 tablespoons low sodium soy sauce (use tamari or coconut aminos for gluten free)
1 tablespoon rice vinegar
2 tablespoons brown sugar
2 teaspoons chili garlic sauce (more or less to taste)
1 tablespoon fresh lime juice
3 garlic cloves (pressed or grated)
1 tablespoon ginger root (grated)
2-4 tablespoons warm water

Steps:

  • Combine all ingredients except water. Whisk to fully combine.
  • Add water, 1 tablespoon at a time, until desired consistency is reached. I normally use 2 tablespoons for a sauce and up to four if using it for a dressing.

1 cup plain yogurt
1 teaspoon freshly grated ginger
1 teaspoon minced garlic
1 tablespoon curry powder
1 1/2 pounds skinless, boneless chicken breasts, cut into strips
Vegetable oil, for grilling
Butter lettuce leaves
Fresh cilantro leaves
Peanut sauce, recipe follows
1 cup smooth peanut butter
1/4 cup low-sodium soy sauce
2 teaspoons red chili paste, such as sambal
2 tablespoons dark brown sugar
2 limes, juiced
1/2 cup hot water
1/4 cup chopped peanuts, for garnish

Steps:

  • Combine the yogurt, ginger, garlic, and curry powder in a shallow mixing bowl, stir to combine. Place the chicken strips in the yogurt marinade and gently toss until well coated. Cover and let the chicken marinate in the refrigerator for at up to 2 hours.
  • Thread the chicken pieces onto the soaked skewers working the skewer in and out of the meat, down the middle of the piece, so that it stays in place during grilling. Place a grill pan over medium heat and brush it with oil to prevent the meat from sticking. Grill the chicken satays for 3 to 5 minutes on each side, until nicely seared and cooked through. Serve the satays on a platter lined with lettuce leaves and cilantro; accompanied by a small bowl of peanut sauce on the side.
  • Combine the peanut butter, soy sauce, red chili paste, brown sugar, and lime juice in a food processor or blender. Puree to combine. While the motor is running, drizzle in the hot water to thin out the sauce, you may not need all of it. Pour the sauce into a nice serving bowl and garnish with the chopped peanuts. Serve with chicken satay.

2 tablespoons reduced sodium soy sauce
2 1/2 teaspoons yellow curry powder
1 1/2 teaspoons turmeric
3 cloves garlic, minced
1 tablespoon freshly grated ginger
1 tablespoon brown sugar
1 tablespoon fish sauce
2 pounds boneless, skinless chicken thighs, cut into 1-inch chunks
1 tablespoon canola oil
Kosher salt and freshly ground black pepper, to taste
3 tablespoons creamy peanut butter

1 tablespoon freshly squeezed lime juice
2 teaspoons brown sugar

Steps:

  • To make the peanut sauce, whisk together peanut butter, soy sauce, lime juice, brown sugar, chili garlic sauce and ginger in a small bowl. 1/2 tsp chilli flakes (red pepper flakes)
1 tbsp fish sauce ((sub with vegetarian fish sauce if you want it vegetarian))
7 oz (200ml) coconut milk (from a tin)
1 tbsp light brown sugar
1/2 tsp ground coriander
Juice of 1 lime ((about 2 tbsp))
1/2 tsp sesame seeds
1 tbsp roasted peanuts (finely chopped)
pinch chilli flakes
1 tbsp fresh coriander (cilantro leaves)

Steps:

  • Place all of the satay sauce ingredients EXCEPT for the lime juice into a small pan
  • Heat over medium heat whilst stirring with a wooden spoon. The sauce will look thin at first, then as it comes close to boiling point, it will start to thicken. Don't let the sauce boil, just turn down the heat as it approaches boiling point and stir until thickened, then turn off the heat and stir in the lime juice.
  • Transfer the sauce to a serving dish and sprinkle with sesame seeds, chopped peanuts, chilli flakes and fresh coriander before serving.

2 tablespoons low-sodium soy sauce (or tamari for gluten free)

1 tablespoon honey
1 tablespoon Sriracha sauce

This is a wonderful, easy thai recipe I received when I did a Thai cooking course. Be warned - it is hot but it is truly wonderful. You would never go back to bought satay sauce again. What's more it freezes well so make a big batch!!

2 -3 teaspoons crushed dried chili pepper flakes
1/2 cup finely sliced spring onion
1 tablespoon red curry paste
2 kaffir lime leaves, vein removed,chopped finely

2 tablespoons palm sugar (or white will do)
1 lime, juice of

  • Place onion, garlic, galangal, chillies and lemongrass in a food processor (magic bullet type blenders are great), and process until a fine paste is achieved.
  • In a wok heat oil and then pour in paste. Fry continuously stirring until there is very little steam rising from the mixture. The mixture will deepen in colour and become fragrant. You want the mixture to caramelise.
  • Once the mixture is caramelised add water and bring to the boil. Add tamarind, brown sugar, salt, lime juice and peanuts.
  • Bring mixture to a simmer and keep stirring until the mixture thickens to your desired thickness. I like mine quite thick, but if you prefer a thinner sauce, take it off the heat earlier.

  • Toast peanuts in a pan without oil until fragrant. Remove skins by soaking them in a bowl of water. Then, blend/crush peanuts into a grainy texture and set aside.
  • Blend lemongrass, galangal, garlic and dried chillies. In a pan, heat oil over medium heat to fry sliced shallots. Once shallots begin to change colour, add the blended ingredients and sauté until fragrant.
  • Add blended/crushed peanuts, water and a pinch of salt. Mix well and increase heat to allow the sauce to boil.
  • Once the sauce boils, add 'gula Melaka' (palm sugar) and allow it to simmer over low to medium heat. After 20 minutes when the sauce thickens, add tamarind paste. Add sugar to taste (optional).
