A quick homemade pickle relish with cucumbers, onions, and golden raisins.

Yield Makes about 2 1/2 cups

Number Of Ingredients 8

1/2 cup apple cider vinegar
2 tablespoons light brown sugar
2 teaspoons kosher salt
2 teaspoons mustard powder
1 medium cucumber (about 1/2 pound), cut into 1/4 inch pieces
1/3 cup finely chopped onion
2 ounces golden raisins (about 1/3 cup)
2 teaspoons mustard seeds

Steps:

  • Bring vinegar, brown sugar, salt, mustard powder, and 1/2 cup water to a boil in a medium pot over high heat, stirring occasionally, until sugar and salt dissolve, about 5 minutes.
  • Place cucumber, onion, raisins, and mustard seeds in a heatproof resealable container. Pour hot brining liquid over cucumber mixture; stir to combine. Let cool to room temperature, then cover and chill at least 2 hours before serving. Serve cool or at room temperature.

1 cup whole berry cranberry sauce
¼ cup dried apricots
⅔ cup raisins
2 tablespoons fresh lemon juice
¼ teaspoon ground cinnamon
¼ teaspoon ground cloves
¼ teaspoon ground nutmeg

Steps:

  • In a medium saucepan, place apple, cranberry sauce, dried apricots, raisins, lemon juice, cinnamon, cloves and nutmeg. Bring to a boil, then reduce heat to simmer. Cook, stirring occasionally, 7 to 10 minutes. Remove from heat. Cover and chill in the refrigerator at least 3 hours. Serve cold.n

1 tablespoon minced shallots

2 tablespoons Moscato vinegar

Steps:

  • Place raisins in a small bowl; add enough warm water to cover. Soak until plump and softened; drain. On a work surface, roughly chop raisins. Transfer to a medium bowl.
  • Stir in olives, shallots, olive oil, and vinegar; mix well.

12 cups finely chopped fresh or frozen rhubarb
1 medium onion, chopped
2 cups sugar
1 cup cider vinegar
1 teaspoon salt
1 teaspoon ground cloves
1 teaspoon ground allspice
1/4 teaspoon paprika
1 teaspoon ground cinnamon

Steps:

  • Rinse four 2-cup freezer containers and lids with boiling water. Dry thoroughly., In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat and simmer until mixture thickens, about 2 hours, stirring occasionally. Fill all containers to within 1/2 in. of tops. Wipe off top edges of containers; cover with lids. Refrigerate up to 3 weeks or freeze extra containers up to 12 months. Thaw frozen relish in refrigerator before serving

2 lbs white pearl onions
1 cup sherry wine
1/2 cup raisins
1/4 cup water
1/4 cup honey
2 tablespoons butter
1/2 teaspoon dried thyme (or fresh)
4 teaspoons red wine vinegar
1/2 cup slivered almonds, to taste
salt and pepper

Steps:

  • Peel the pearl onions by boiling in salted water for 3 minutes.
  • Drain, cool slightly, then cut off the root ends and squeeze onions out of their skins.
  • Combine the onions with sherry, raisins, water, honey, butter and thyme in a heavy skillet.
  • Bring to a boil, then reduce heat and cover.
  • Simmer until the liquid evaporates and the mixture begins to caramelize, about 45 minutes.
  • Check periodically and stir often.
  • Stir in vinegar and almonds; season to taste with salt and pepper, and serve.

2 cups plus 2 tablespoons sugar
1/2 cup water
1/2 cup orange juice
2 cups fresh or frozen cranberries
1/2 cup chopped dried apricots
1/2 cup golden raisins
1-1/2 teaspoons grated orange zest

Steps:

  • In a small saucepan, combine the sugar, water and orange juice; cook and stir over medium heat until sugar is dissolved. , Stir in the cranberries, apricots, raisins and orange peel; bring to a boil. Reduce heat; cover and simmer until the berries pop, about 15 minutes. Serve warm or chilled.

Steps:

  • Mix together 1/4 cup brown sugar, flour, baking powder, salt, raisns and milk in a greased casserole dish.
  • Sprinkle remaining brown sugar and nutmeg on top of batter and dot with butter.
  • Pour on the boiling water.
  • Bake at 375 for 30 minutes.

RAISIN-PINENUT RELISH



Raisin-Pinenut Relish image

Yield makes about 1 1/2 cups

Number Of Ingredients 9

1/4 cup pinenuts
3 tablespoons extra-virgin olive oil
1/2 cup diced yellow onion
1 teaspoon finely chopped garlic
1/2 cup dark raisins
1/2 cup white wine vinegar
1/2 cup Roasted Peppers (page 184), roughly chopped
4 fillets salt-cured anchovies, finely chopped
2 teaspoons chopped fresh oregano, or 1 teaspoon dried Sicilian oregano

Steps:

  • Lightly toast the pinenuts in a skillet over medium-high heat. Be careful to not toast them too much as they will take on a bitter flavor. Set aside.
  • Pour the oil into the hot skillet. Add the onion and sauté over medium-high heat until golden, stirring occasionally. Add the garlic and sauté for another minute or so until the garlic is fragrant. Add the raisins and the vinegar. Reduce the heat and continue cooking for 2 to 3 minutes, until the vinegar has reduced by half and the raisins are plump. Add the peppers, followed by the anchovies, 1/2 cup water, and pinenuts. Stir and reduce the heat to low. Cover the skillet with a lid and cook for another 10 minutes, until most of the water has evaporated. Once the relish has dried, add the oregano and stir well. Allow to cool completely before using. Keeps well if refrigerated for up to 1 week.
