2 egg yolks
zest and juice ½ lemon , plus extra wedges to serve
1 garlic clove , crushed
250ml/ 9fl oz olive oil , plus extra for drizzling
500g/ 1lb 2oz Jersey Royal potato
500g/ 1lb 2oz asparagus , trimmed
small bunch chives , snipped
3 tbsp extra-virgin olive oil
3 thyme sprigs, leaves picked
2 garlic cloves , thinly sliced
4 x 140g/5oz sea bass fillets

Steps:

  • Put the egg yolks in a large bowl with a pinch of salt and the lemon zest and juice. Whisk to combine, then add the garlic and whisk again. Slowly add the oil, whisking constantly, until the mixture thickens to a mayonnaise and all the oil is used. Taste and add salt, white pepper and additional lemon juice, if needed. Transfer to a small bowl, cover and chill until required.
  • Put the potatoes in a medium-sized pan, cover with lightly salted water, put on the lid and bring to the boil. Remove lid and cook until tender. Drain, toss with a drizzle of oil, set aside and keep warm.
  • Meanwhile, cook the asparagus in a large pan of boiling salted water for 3-5 mins until tender. Drain, then drizzle with oil and set aside to keep warm.
  • For the sea bass, heat the grill, pour 2 tbsp of the oil into a frying pan set over a medium heat, add the thyme and garlic, and cook for 1-2 mins. Sprinkle a little salt and pepper into the pan, add the fish, skin-side up, cook for 2-3 mins, then remove from the heat. Drizzle with the remaining oil, then cook under the grill for about 4 mins until the skin blisters and the fish is cooked through. Keep the fish warm while you finish the veg.
  • Thickly slice the potatoes and arrange a layer in the middle of each of 4 dinner plates. Scatter the asparagus over the potatoes, squeeze over some lemon juice and finish with a grind of black pepper. Top each plate with a fillet of sea bass, finishing with a dollop of mayonnaise and the snipped chives.

8 spears asparagus
ends removed

4 oz shitake mushrooms
stems removed
1 Tbsp grated fresh ginger
2 Tbsp low-sodium soy sauce
2 Tbsp mirin (sweetened sake)
sake
or sweet white wine
Salt and black pepper to taste

Steps:

  • Preheat the oven to 400°F. Lay 4 large (18" x 12") pieces of aluminum foil on the kitchen counter and fold each into thirds. Place a fish fillet in the center third of each piece, then scatter the asparagus, mushrooms, and ginger over each. Drizzle with the soy sauce and mirin and season with a small pinch of salt (remember, soy sauce already packs plenty of sodium) and black pepper. Fold the outer two sections of the foil over the fish, then roll up the ends toward the center to create fully sealed packets. Arrange the packets on a large baking sheet and bake for 15 for 20 minutes, depending on the thickness of the fish fillet. (If the fillets are 1⁄2 inch thick or less, it will take closer to 15 minutes; if they are almost a full inch, it will need 20 minutes.) Place each packet directly on a plate and serve.

1 cup balsamic vinegar
1 tablespoon brown sugar
2 tablespoons butter
Salt and fresh ground black pepper
1 1/2 pounds asparagus
1 1/4 pounds filet mignon, cut into 6 equal portions
3 tablespoons canola oil
Salt
Freshly ground black pepper
4 tablespoons butter
3 cloves garlic, smashed
5 sprigs fresh thyme
Olive oil
1 head cauliflower, florets and stems cut into large pieces
1 Fuji apple, peeled, cored and sliced
3 tablespoons olive oil
Salt and fresh ground black pepper
1 1/2 cups vegetable stock or broth
Canola oil
1 1/2 pounds sea bass fillet, cut into 6 equal portions
2 tablespoons butter
1 large leek
2 tablespoons olive oil
1 1/2 cups white wine
1 cup vegetable stock or broth
4 tablespoons butter
Salt and fresh ground black pepper

Steps:

  • In a small pot, over medium-low heat, add the vinegar and brown sugar, and whisk to combine. Cook and reduce until thick, about the consistency of maple syrup. Whisk in 2 tablespoons butter and season with salt and pepper, to taste. Serve drizzled over filet mignon and asparagus.
  • For Filet and Asparagus:
  • Slice the bottom 1 1/2 inches off the asparagus. Bring a large pot of water to a boil over medium heat. Add the asparagus and blanch for 1 minute. Remove from the water and shock in an ice bath. Transfer the asparagus from the ice bath to a sheet pan lined with a paper towel.
  • Take the filets out of the refrigerator 20 minutes before they are to be cooked so they can come to temperature.
  • Preheat oven to 300 degrees F.
  • Heat canola oil in a large heavy bottomed skilled over high heat. Season each filet liberally with salt and pepper. Sear the filets in the skillet until brown and crispy, about 2 minutes per side. Turn the heat to low and add the 4 tablespoons of butter, the garlic and fresh thyme. Using a spoon, baste the filets with the melted butter. Put the pan in the oven for 4 to 5 minutes for medium-rare or until the internal temperature reaches 130 to 135 degrees F on an instant-read thermometer. Let rest for 5 minutes before serving.
  • Heat a small amount of olive oil in a large skillet over medium heat. Add the asparagus, season with salt and pepper, to taste, and saute until heated through, about 2 minutes. Asparagus should be slightly tender but still have a little snap when you bite into them.
  • Preheat the oven to 400 degrees F.
  • To a large baking dish add the cauliflower, apple, and 3 tablespoons olive oil. Season with salt and pepper, to taste, and toss to coat. Roast in oven until brown on top, about 25 minutes, then add the vegetable stock and roast until tender, another 20 minutes.
  • Add the roasted cauliflower, apple and stock to a food processor and puree until smooth. Transfer to a metal bowl and put over a pot of simmering water to keep warm.
  • Turn oven down to 325 degrees F.
  • Heat some canola oil in a large heavy bottomed skilled over high heat. Season each fillet liberally with salt and pepper. Sear the fillets, skin side down, until brown and crispy, turn over and crisp the other side, about 2 to 3 minutes per side. Turn off the heat, add butter and, using a spoon, baste the fillets with the melted butter. Transfer to the oven to finish cooking, about 4 minutes.
  • Beurre Blanc Sauce:
  • Slice the green leaves off the leek and discard. Slice the stem into 1/4-inch thick rings. Put them into a large bowl filled with cold water and let soak for 5 minutes. Remove the leaks and drain on a plate lined with paper towels.
  • Heat the olive oil in a large skillet over medium heat. Add leeks and saute until soft, about 4 minutes. Deglaze the pan with white wine and add the vegetable stock. Reduce by half and then whisk in the cold butter. Serve over sea bass.
  • To Plate:
  • Using a rectangular plate lay a bed of 3 to 4 asparagus down on 1 side of the plate. Arrange a piece of filet mignon on top and drizzle with the balsamic reduction. On the other side of the plate put about a 1/4 cup of the cauliflower puree, top with a piece of sea bass and drizzle with the leek sauce. Repeat with remaining ingredients to make a total of 6 servings.

ROASTED SEA BASS WITH ASPARAGUS SAUCE

1 cup canned low-salt chicken broth
1 pound asparagus, trimmed to 6-inch lengths
1 tablespoon extra-virgin olive oil
Nonstick vegetable oil spray
4 4- to 5-ounce sea bass fillets (each about 3/4 to 1 inch thick)
1 tablespoon fresh lemon juice
1/2 7-ounce jar roasted red peppers, drained, cut into strips (about 1/2 cup)

Steps:

  • Preheat oven to 450°F. Bring broth to boil in heavy large saucepan. Add asparagus; cover and boil until asparagus is very tender, about 8 minutes. Using slotted spoon, transfer asparagus to cutting board; reserve broth. Cut tips from asparagus and reserve. Coarsely chop remaining asparagus; transfer to processor. Add 1/2 cup reserved asparagus cooking broth and olive oil and puree until smooth, adding more cooking broth if sauce is too thick (discard any remaining broth). Season sauce to taste with salt and pepper. Return to same saucepan.
  • Spray baking sheet with vegetable oil spray. Place fish on prepared sheet. Drizzle lemon juice over fish. Sprinkle with salt and pepper. Bake fish until just opaque in center, about 10 minutes.
  • Rewarm sauce over medium-low heat. Divide sauce among 4 plates. Top with fish. Garnish with reserved asparagus tips and roasted red pepper strips. Serve immediately.

SEA BASS WITH TOMATO COULIS, BASIL AND ASPARAGUS

5 ripe plum tomatoes, skins removed and cored (about 1 1/4 pound)
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
16 large asparagus, about 2 pounds
12 fresh basil leaves
Salt and freshly ground pepper to taste
4 fillets of black sea bass, skins on (about 1/3 pound each)
1 tablespoon butter

Steps:

  • Halve tomatoes lengthwise, and over a strainer set in a bowl, squeeze to remove juice and seeds. Place tomatoes and strained juice in the bowl of a blender along with 1 tablespoon of the olive oil and the vinegar. Blend to a fine puree.
  • Cut tough stems from asparagus, and discard. With a vegetable scraper, peel asparagus, starting about two inches from tips. Rinse and drain. Cook in boiling salted water for about 6 minutes. Drain immediately, and cool in ice water. Remove, and set aside.
  • With a rubber spatula, push tomato mixture through a fine sieve, to yield about 2 cups of liquid. Place tomato juice in a saucepan, and bring to a simmer. Add basil, remove from heat, cover and let stand in a warm place.
  • Cut three 1/4-inch slices from the flower end of each asparagus. Place a tablespoon of butter in a nonstick pan over medium-high heat. Add the asparagus tips and the rest of the asparagus. Season with salt and pepper. Cook briefly or until just done. Remove asparagus from pan, and keep warm.
  • Heat 1 tablespoon of olive oil in a nonstick pan over high heat. Season fish well, and place in pan, skin side down, cooking for about 1 1/2 minutes a side, or until skin is nicely browned. Flip gently, cover, and remove from heat. Fish will continue to cook.
  • To serve, remove basil from tomato sauce. Distribute sauce evenly over four warm plates. Place fish, skin side up, over sauce. To arrange asparagus on each plate, distribute small pieces around edge; place two large asparagus pieces alongside fish and lay two more long pieces over them in a criss-cross pattern.

1 lb asparagus spears (thick spears are best for roasting)
1-2 Tbsp olive oil
2 cloves garlic, minced
Kosher Salt
Freshly grated black pepper
Lemon juice

Steps:

  • SEA BASS: Preheat oven to 450. Dry off all pieces completely with paper towels. Get your skillet hot over medium high heat. Cover pan with olive oil to prevent sticking. Place the sea bass fillets in the skillet, sprinkle with sea salt and pepper. Once browned, turn and brown on the other side. Place on cookie sheet lined with foil, and in oven for approximately 10 minutes or until the meat flakes easily - don't over cook. You can always let it rest by covering it with foil and it will cook a little more. So if anything, undercook. Mix together olive oil, lemon juice, capers, and garlic, and when you serve the fish, spoon some of this mixture on top! Delish!!! Asparagus: Preheat oven to 400°F. Rinse clean the asparagus. Break the tough ends off of the asparagus and discard. 2 Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. (Alternatively you can put the asparagus and oil in a plastic bag, and rub the bag so that the oil gets evenly distributed.) Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly distributed. 3 Place pan in oven and cook for approximately 8-10 minutes, depending on how thick your asparagus spears are, until lightly browned and tender when pierced with a fork. Drizzle with a little fresh lemon juice before serving. ROASTED MUSHROOMS: Get more of the ingredients that you sprinkled the asparagus with, and the olive oil, mix those together. Cut up your mushrooms, and drizzle with that dressing. Roast at 400 with the asparagus for the same amount of time. Enjoy!

Pan fried chili sea bass with asparagus

Steps:

  • Heat the olive oil in a large, heavy bottomed frying pan over a medium heat before adding the crushed garlic and fresh chilli. Fry very gently for a few minutes, do not let the garlic burn.
  • Lightly score the skin of your sea bass and add skin-side down to the pan with the garlic and chilli
  • Add the asparagus and gently coat in the juices, fry for a couple of minutes before turning the fish over and keeping the asparagus spears moving.
  • When the fish skin is crispy and the asparagus has started to caramelise, squeeze over the juice of half a lemon and sprinkle with thyme, make sure all the ingredients in the pan are well coated with the flavoured oil, chilli pieces, garlic, lemon juice and thyme.
  • Place each piece of sea bass onto a bed of 6 asparagus spears and drizzle with the juices from the pan. Season well with salt and pepper and serve with warm bread to mop up the juices.

1 small red onion, chopped

Steps:

  • Mix all salsa ingredients together in a bowl until combined.
  • Preheat grill to high heat. Brush hot grill rack with olive oil to prevent sticking.
  • Mix all marinade ingredients together in a bowl. Reserve half for grilling process. Place sea bass fillets in glass baking dish or container. Pour marinade over top. Let set for 10-15 min turning once. Cut top of filets to the middle to hold the juices of the marinade. Place fillets about 1/2 apart on grill pouring their marinade juices over top of them. Grill for 8 minutes then, pour reserved marinade over top of them and continue grilling for an additional 8 minutes or until easily flaked with a fork.
  • While fish is grilling break off tough ends of asparagus. Preheat non stick pan for 1 minute. Heat 1 teaspoon of unrefined virgin coconut oil for a minute over a medium heat. Add asparagus, cover with lead for 3-5 minutes until tender. Toss with Sherry vinegar and cook additional 2 minutes. Sprinkle a tablespoon of Balsamic vinegar, wrapped asparagus in the foil and reserved covered in the same pan.
  • Transfer to serving plate, top with salsa, top asparagus with fresh grated Romano cheese and enjoy!
