Spicy pepper & tomato soup with cucumber yogurt image

Serve this healthy, vibrant, veggie blend cold as a Spanish-style gazpacho or hot as a comforting supper

2 tbsp olive oil , plus extra to serve
2 onions , finely sliced
1 carrot , finely chopped
3 red peppers , roughly chopped
3 garlic cloves , sliced
1 red chilli , sliced
400g can chopped tomato
850ml-1 litre/1½-1¾pts vegetable stock or bouillon
4 tbsp Greek-style yogurt
½ cucumber , halved, deseeded, coarsely grated and squeezed of excess water
a few mint leaves, chopped

Steps:

  • Heat the oil in a large saucepan. Tip in the onions, carrot and peppers. Cook gently for 15 mins, to soften. Add the garlic and chilli, and cook for a few mins more. Pour over the chopped tomatoes and 800ml of the stock. Bring to the boil and simmer for 10-15 mins until the veg is completely tender.
  • Meanwhile, mix the yogurt, cucumber and mint in a bowl, and season.
  • Blitz the soup with a hand blender until smooth, using the extra stock to thin if it has become too thick. Heat through, season and spoon into bowls. Serve with a dollop of the yogurt mixture on top and a drizzle of olive oil.

This quick and easy chilled roasted red pepper soup recipe has tons of summery flavor from the roasted peppers, basil, garlic, and tomatoes. It also gets a bit of creaminess and richness from Greek yogurt.

1 (16 oz.) jar roasted peppers with juice - homemade peppers also work
1 (28 oz.) can diced tomatoes with juice
1 cup Greek yogurt
¼ cup fresh basil leaves (plus more for garnish)
½ tsp. salt
¼ tsp. coarse pepper
1 clove garlic
4 cups ice cubes, divided

Steps:

  • Put the roasted peppers with their juice, the diced tomatoes with their juice, the yogurt, ¼ cup basil leaves, salt and pepper in a large bowl.
  • Finely chop the garlic clove and stir it in.
  • Put one-third of the roasted pepper mixture into a blender with one-third of the ice cubes. Puree until smooth. Transfer to an empty bowl.
  • Puree another third of the roasted peppers with another third of the ice and transfer to the already-pureed mixture. Finish with the final third of roasted peppers and ice. Stir it all together.
  • Serve immediately by ladling into bowls and top with extra basil leaves for garnish. Or cover and refrigerate for up to 2 days.

3 pounds tomatoes (about 6), cored and cut into chunks
1 cup plain yogurt
1 teaspoon curry powder
1 cup packed fresh basil leaves, chopped fine

  • In a food processor or blender purée the tomatoes in batches, force the purée through a fine sieve set over a bowl, and whisk in the yogurt, the curry powder, the basil, and salt and pepper to taste. 1 teaspoon olive oil
1 onion, chopped
2 cloves garlic, minced
3 red bell peppers
4 large tomatoes - peeled, seeded and chopped
1 ½ teaspoons dried thyme
2 teaspoons paprika
⅛ teaspoon white sugar
6 cups chicken broth
salt and pepper to taste
1 pinch ground cayenne pepper
1 dash hot pepper sauce
2 tablespoons butter
1 ½ tablespoons all-purpose flour
6 tablespoons sour cream

Steps:

  • Roast peppers: rub oil on peppers and put them under the broiler until blackened, turn to get all sides. Put into paper bag and seal. Let rest for 15 minutes, then peel will come right off and core and seeds will fall out. Chop peppers. Reserve one chopped pepper; set aside.
  • Heat olive oil over moderate heat. Add onion and garlic and cook until soft but not brown, about 5 minutes. Stir in tomato, bell peppers (except reserved), thyme, paprika, and sugar. Cook over medium-low heat until all the tomato juices have evaporated, about 25 minutes.
  • Stir in chicken stock, salt and pepper, cayenne pepper, and hot sauce (if using). Bring to boiling, lower heat, and simmer, partially covered, for 25 minutes or until vegetables are tender.
  • Strain soup, reserving broth. Place solids in food processor or blender, and process until fairly smooth. Add puree back into broth.
  • Melt butter and stir in the flour, cook for 1 minute. Stirring slowly, add the broth/vegetable mixture. Add reserved chopped pepper and bring to boiling. Lower heat and simmer 10 minutes.
  • Ladle into bowls and add 1 tablespoon of sour cream to each bowl. For a lighter soup, this is also delicious without the sour cream.

Rice is used as the thickening agent, rather than cream. If you don't like a lot of spice, reduce the amount of cayenne and red pepper flakes.

6 red bell peppers, seeded and chopped

2 -3 tablespoons olive oil
3 red bell peppers, chopped
2 green bell peppers, chopped
1/4 cup green onion, chopped
3 garlic cloves, minced
1 tablespoon dried basil
2 -3 tablespoons red hot sauce
1 cup tomato juice
3 cups water
1 teaspoon salt
1 cup milk
1/2 cup plain yogurt
1 -2 tablespoon parmesan cheese, per serving

Steps:

  • Heat olive oil in soup pot over med-high heat.
  • Add chopped bell peppers, green onion, garlic, basil, and red hot sauce. Stir occasionally for 5-10 minutes, or until peppers become soft.
  • Stir in tomato juice, water, and salt.
  • If you have a hand-held blender, you can blend the soup right in the pot. If not, remove a few cups at a time (or enough to fill your blender halfway) and blend to a smoothie-like mixture. Pour the blended soup into a bowl and repeat with the rest of the soup, a few cups at a time, until all of it has been blended. Pour the soup from the bowl back into the pot. Note: If you prefer a smoother soup, blend longer - but I don't suggest any chunkier, as the skins of the peppers will be too noticeable.
  • Add the milk and yogurt, and stir to blend.
  • Let simmer on low heat for 5-10 minutes. Serve with parmesan sprinkled over top.

2 lbs firm ripe tomatoes
2 lbs red bell peppers
6 -8 tablespoons extra virgin olive oil
2 teaspoons sugar
4 tablespoons balsamic vinegar
1 head garlic
2 -4 cups chicken broth
2 tablespoons olive oil (optional)
salt & freshly ground black pepper
1 teaspoon lemon zest
2 teaspoons Tabasco sauce
1 cup Greek yogurt
basil, chiffonade (to garnish)
finely chopped scallion (to garnish)

Steps:

  • Wash and dry tomato and peppers. Cut in half lengthwise and core.
  • Meanwhile wrap the garlic in foil and roast in 400 degree oven for 10 minutes or until soft .
  • Toss the tomato and pepper with olive oil, balsamic vinegar, sugar, salt and pepper and grill on high heat 4-5 minutes or until tender.
  • Remove garlic from oven and squeeze roasted garlic out of each individual clove.
  • Place roasted vegetables and garlic in a food processor and pulse until thick paste consistency.
  • Place the mixture in a large pot and dilute with chicken broth over medium heat.
  • Reduce a bit until desired consistency. Add olive oil and adjust flavor with salt and pepper if necessary.
  • Combine yogurt, lemon zest and hot sauce in a small mixing bowl.
  • Divide soup into four separate soup bowls. Add a dollop of yogurt in the center of the soup and garnish basil and chopped scallion.
