2 tablespoons olive oil
1 medium onion, (about 1 cup), cut into 1/2-inch cubes
1 clove garlic, minced
1/4 teaspoon each ground ginger and ground cinnamon
3/4 teaspoon ground cumin
Salt and freshly ground pepper
1 pound (about 2 cups) butternut squash, peeled and seeded, flesh quartered lengthwise and cut into 1/4-inch-thick slices
1 tablespoon tomato paste
1 1/2 cups low-sodium canned chicken broth
2 teaspoons freshly grated lemon zest
3/4 cup couscous
1/3 cup golden raisins

Steps:

  • Heat oil in a medium saucepan over medium heat until hot but not smoking. Add onion and garlic; cook, stirring occasionally, until softened, 3 to 5 minutes. Stir in ginger, cinnamon, cumin, and 1/2 teaspoon each salt and pepper; cook 1 minute. Add squash and tomato paste; cook 3 minutes more.
  • Stir in broth and zest; simmer until squash is tender and sauce is thickened, 12 to 15 minutes. Season with salt and pepper.
  • Meanwhile, bring 1 1/2 cups water to a boil with 1/4 teaspoon salt. Put couscous and raisins in a glass bowl; pour in boiling water. Cover tightly with plastic wrap; let stand 5 minutes. Uncover; fluff with a fork. Serve couscous with squash and sauce.

  • Cook 1 1/2 cups Israeli couscous as the label directs. Meanwhile, cook 1 small chopped onion, 1 teaspoon chopped thyme, 1 cup cubed butternut squash, 3 chopped dates and 1/2 teaspoon kosher salt in a skillet with olive oil until just tender, 6 minutes. Add 1/2 cup water and cook 4 minutes. Stir in the couscous, 1/2 cup chopped pistachios and 2 tablespoons chopped parsley; season with salt and pepper.

1 1/2 pound butternut squash, peeled and seeded, and cut into 1/4-inch dice
3 tablespoons olive oil
1 large onion, chopped
1 3/4 cups Israeli couscous or acini di pepe (tiny peppercorn-shaped pasta), about 1 pound
1 (3-inch) cinnamon stick
1 cup chopped fresh flat-leaf parsley
1/2 cup pine nuts, toasted
1/2 cup golden raisins
1/4 teaspoon ground cinnamon

Steps:

  • Preheat oven to 475°F.
  • Halve lemons and scoop out flesh, keeping both flesh and peel. Cut enough peel into 1/4-inch dice to measure 1/4 cup. Put lemon flesh in a sieve set over a bowl and press with back of a spoon to extract juice.
  • Toss squash with 1 tablespoon oil and salt to taste in a large shallow baking pan and spread in 1 layer. Roast in upper third of oven 15 minutes, or until squash is just tender, and transfer to a large bowl.
  • Cook onion in 1 tablespoon oil in a 10-inch heavy skillet over moderately high heat, stirring occasionally, until just beginning to turn golden. Add to squash.
  • Cook couscous with cinnamon stick in a large pot of boiling salted water 10 minutes, or until just tender, and drain in a colander (do not rinse). Add couscous to vegetables and toss with 2 tablespoon oil to coat.
  • Add lemon peel and juice, parsley, nuts, raisins, ground cinnamon, and salt to taste. Toss to mix well.
  • To adapt this recipe to serve 50:
  • 4 to 5 preserved lemons
  • 5 lb. butternut squash, peeled and seeded
  • 3/4 to 1 cup olive oil
  • 3 cups chopped onion
  • 7 cups Israeli couscous or acini di pepe (tiny peppercorn-shaped pasta), about 3 lb.

Toss couscous with 3 tablespoons oil in a large bowl. Add squash, onion, lemon peel and juice, and remaining ingredients. Season with salt (you'll need a lot) and toss to mix well.

2 tbsp harissa paste
1 tsp each ground cumin and ground coriander
2 red onions , halved and cut into thin wedges
2 skinless chicken breasts , cut into bite-sized chunks
1 small butternut squash , cut into 1cm chunks (no need to peel)
x cans tomatoes
zest and juice 2 lemons
200g cherry tomato , halved
140g couscous
small bunch coriander , roughly chopped

Steps:

  • Heat a large non-stick casserole dish or pan on the hob. Add the harissa, spices and onions, stir and cook gently for 10 mins until soft. Add chicken and brown for 5-10 mins. Add squash, stirring to combine, and a splash of water if it starts to stick. Cook for 5 mins more.
  • Tip canned tomatoes into the pan with ½ can of water, cover and simmer for 20-30 mins. Add the lemon zest and juice, cherry tomatoes, couscous and seasoning. Cover and turn off the heat. Leave on the hob for 10 mins, then stir through the coriander and serve.

1 medium acorn squash
1 cup water
1/2 cup unsweetened apple juice
1/3 cup uncooked couscous
1/2 cup dried cranberries or cherries
2 tablespoons chopped walnuts
2 tablespoons chopped green onion
1 tablespoon butter, melted
2 teaspoons brown sugar
1/8 teaspoon salt
1/8 teaspoon ground cinnamon

Steps:

  • Cut squash in half; discard seeds. Place squash cut side down in an ungreased 13-in. x 9-in. baking dish; add water. Bake, uncovered, at 350° for 40-45 minutes or until tender. , In a small saucepan, bring apple juice to a boil; stir in couscous. Cover and remove from the heat; let stand for 5 minutes or until liquid is absorbed. Fluff with a fork., Scoop out squash, leaving a 1/4-in. shell. Cut pulp into 1/2-in. pieces; place in a bowl. 1 acorn squash, halved and seeded
2 ¼ cups water
1 ½ cups whole wheat couscous
2 tablespoons chopped fresh cilantro
1 bunch fresh spinach, trimmed and coarsely chopped
1 tablespoon margarine
½ small onion, chopped
½ teaspoon seasoned salt, or to taste
salt and ground black pepper to taste
¼ cup crumbled feta cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place acorn squash cut-side down on baking sheet.
  • Bake squash in the preheated oven until tender when pierced with a fork, about 45 minutes. Flip to face up and let cool slightly.
  • Bring 2 1/4 cups water to a boil in a saucepan; remove from heat and stir in couscous and cilantro. Cover saucepan and let stand until water is absorbed completely, about 10 minutes. Fluff couscous with a fork.
  • Bring a large pot of water to a boil. Add spinach and cook until wilted, 3 to 5 minutes. Drain; use paper towels to squeeze out excess moisture. Fold into couscous.

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the onion and cook, stirring occasionally, until soft and golden, about 10 minutes. Add the garlic, tomatoes, and spices and cook until the cinnamon stick unfurls and the tomatoes are cooked down, about 3 minutes. Add the squash, chickpeas, broth, lemon zest, and raisins and bring to a simmer. Cook, partially covered, until the squash is fork tender, about 25 minutes. ROASTED SQUASH WITH CHICORY, GOAT'S CHEESE & HERBY COUSCOUS

1 butternut squash
1 small garlic clove
2 tbsp olive oil
200g giant wholewheat couscous
small bunch of basil, roughly chopped
small bunch of parsley, roughly chopped
2 tbsp pine nuts, toasted
100ml extra virgin olive oil
small pinch of sugar
1-2 lemons, juiced
2 red chicory, leaves separated
100g goat's cheese, sliced into rounds

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Cut the bulbous end from the squash, then halve, scoop out the seeds and cut into wedges (reserve the long neck of the squash for another recipe). Spread the squash wedges out in a roasting tin. Peel the garlic and toss this through the wedges along with some seasoning and the olive oil. Roast for 30 mins until the squash is tender.
  • Meanwhile, cook the couscous following pack instructions. Drain, return to the pan and leave to steam-dry. Tip the basil, parsley, pine nuts and half the extra virgin olive oil into a food processor with the sugar and some seasoning. Blitz to a coarse paste. With the motor running, drizzle in the remaining extra virgin olive oil and lemon juice. Season to taste, then toss with the couscous.
  • When the squash is tender, roughly mash the garlic clove and gently stir through the squash. Toss the wedges through the couscous with the chicory leaves and goat's cheese. Any leftovers will keep covered in the fridge for up to a day.

4 squash, each about 1 to 2 pounds
3/4 cup water, salted if desired
2 1/2 cups uncooked couscous
1 cup currants
2 tablespoons margarine
4 tablespoons fat-free margarine, spread
2 large golden delicious apples, cored and sliced
2 pears, cored and chopped coarsely
1/2 cup dried apricot, cut into small pieces
1/2 cup golden raisin
1/2 cup coarsely chopped walnuts
4 tablespoons mild honey
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon mace
1/2 teaspoon ground allspice
1 1/4 teaspoons cardamom
1/2 teaspoon fresh ground black pepper
salt
1 pinch ground cinnamon
fresh greens or fresh edible flower, for garnish

Steps:

  • Cut the top of each squash off to make a handsome lid.
  • Set aside the lids.
  • Cut a thin slice from the bottom of each squash to make it stand firmly.
  • Using a large metal spoon, scoop out and discard the seeds and stringy flesh.
  • Remove the flesh from each to weigh a combined total of about 1 pound, taking some from the lid pieces, if necessary.
  • Cut the scooped-out squash into 1/2 inch cubes.
  • Steam until fork-tender, about 10 minutes.
  • Meanwhile, bring salted water to a rolling boil.
  • Stir in the couscous and currants, cover and remove from the heat.
  • Let sit 10 minutes.
  • Preheat the oven to 325*.
  • Heat 2 tbls.
  • margarine in a large skillet, and cook the apples, pears, apricots, raisins and walnuts, stirring, for 5 minutes.
  • Add 2 tbls.
  • honey, spices except for the pinch of cinnamon, couscous, steamed squash and salt to taste.
  • Cook, stirring gently, for 2 or 3 minutes more.
  • Remove from heat.
  • In a small pot, melt the remaining margarine, stir in the remaining honey and a pinch of cinnamon.
  • Generously brush the inside of the squash with the honey mixture and divide the filling equally among them.
  • Replace the squash lids, carefully turn upside down and place on a baking sheet sprayed with nonstick cooking oil.
  • Bake until a fork easily pierces the squash, about 1 hour.
  • Carefully transfer the roasted squash to a large serving platter, remove the lids and cut each squash in half vertically.
  • Garnish the platter with fresh greens or flowers.

2 large butternut squash, halved lengthwise, seeded
1 small sweet potato
2 parsnips, peeled
1 cup chicken broth, homemade or low-sodium canned
1 lemon, seeded and thinly sliced
1/2 teaspoon thyme
1 cup water
1 cup cooked couscous
1/4 cup minced sage
1/2 teaspoon salt, plus more to taste
1 teaspoon freshly ground pepper, plus more to taste

Steps:

  • Preheat the oven to 350 degrees. Place the butternut squash, cut sides down, on a cookie sheet. Bake until tender, about 45 minutes, along with sweet potato. Scoop the pulp from both the squash and sweet potato. Set aside, reserving the squash shells.
  • Combine the parsnips and broth in a small saucepan. Simmer gently over medium-low heat until tender, about 15 minutes. Set aside.
  • Combine the sliced lemon, thyme and water in a saucepan. Simmer over medium heat until the water is reduced to 1/4 cup, about 10 minutes. Transfer to a blender. Puree until smooth. Set aside.
  • Combine the squash and sweet potato flesh, parsnip and broth mixture and lemon puree in a blender or food processor. Puree until smooth. Transfer to a large bowl. Add the couscous and sage. Season to taste with salt and pepper.
  • Fill the butternut squash shell with the couscous mixture. Cover with foil and bake until warmed through, about 20 minutes.

2 medium (blank)s acorn squash, halved and seeded
3 tablespoons olive oil, divided
1 (15 ounce) can garbanzo beans, drained
1 cup orange juice
1 tablespoon ground cinnamon
2 teaspoons ground cumin
3 ounces whole wheat couscous
½ cup cranberries
¼ cup chopped pistachio nuts
¼ cup grated carrots
2 tablespoons butter

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Brush each squash half with 1/2 tablespoon olive oil. Place on a rimmed baking sheet, cut-sides down. Use a sharp knife to cut off a small section of the rounded squash, so it will sit flat when turned upside-down.
  • Bake in the preheated oven until squash is soft when pierced with a fork, 30 to 40 minutes.
  • Meanwhile, combine garbanzo beans, orange juice, cinnamon, cumin, and remaining 1 tablespoon olive oil in a saucepan over low heat. Cook the beans for 10 minutes while the mixture slowly comes to a boil. Remove from the heat, stir in couscous, and cover with a lid. Let sit for 5 minutes.
  • Remove the lid and stir cranberries, pistachio nuts, carrots, and butter into the couscous.
