SPICY STRAWBERRY BBQ SAUCE
Sweet, fruity, savory, and spicy. This sauce screams summertime in every aspect. It has the fresh, fruity flavor of strawberry as well as the savory, spicy notes that complement anything being grilled at a summertime BBQ! Refrigerate remaining sauce for up to 14 days.

Steps:
- Combine strawberry preserves, tomato puree, vinegar, sugar, chili powder, red pepper flakes, cumin, cayenne, and black pepper in a medium pot. Whisk to remove any lumps.
- Bring strawberry mixture to a slow simmer over medium-low heat. Cook until sauce evenly coats the back of a metal spoon and is glossy, about 30 minutes, whisking frequently; never allow the bottom of the pot to scorch. Season with kosher salt.
- Remove sauce from heat and let cool before transferring to a tightly sealed quart-sized container.

GRILLED STRAWBERRY BBQ SAUCE BAKED BEANS

- Preheat a charcoal or gas grill to medium-high heat.
- Skewer the strawberries and coat with 2 teaspoons of the vegetable oil. Grill on all sides, 1 1/2 minutes total.
- In a medium saucepan, combine the strawberries, ketchup, jam, balsamic vinegar, molasses, soy sauce, mustard, chiles and garlic. Cook over medium-low heat until the strawberries start to break down and all the ingredients combine, about 15 minutes.
- Preheat the oven to 300 degrees F.
- Using an immersion blender, blend the strawberry mixture until smooth. Continue to cook until the mixture is reduced by a third, about 15 minutes. This will yield about 2 cups sauce.
- In a medium cast-iron skillet, heat the remaining 2 teaspoons oil. Add the onions and bell peppers and saute until soft, about 4 minutes. Add the beans and 1 1/2 cups of the sauce. Put the skillet in the oven and cook until the sauce thickens, about 25 minutes. Garnish with parsley and serve.
STRAWBERRY BARBECUE SAUCE BAKED BEANS

- Preheat a charcoal or gas grill to medium high. Skewer the strawberries and coat with 2 teaspoons vegetable oil. Grill until lightly charred on all sides, 1 1/2 minutes total.
- Remove the strawberries from the skewers. In a medium saucepan, combine the strawberries, ketchup, jam, balsamic vinegar, molasses, soy sauce, mustard, chile and garlic. Cook over medium-low heat until the strawberries start breaking down, about 15 minutes.
- Preheat the oven to 300 degrees F. Using an immersion blender, blend the strawberry mixture until smooth. Continue to cook until the sauce is reduced by one-third, about 15 minutes.
- In a medium enameled cast-iron skillet or nonreactive Dutch oven, heat the remaining 2 teaspoons vegetable oil. Add the onion and bell pepper and saute until soft, about 4 minutes. Add the pinto beans and 1 1/2 cups of the barbecue sauce (reserving the rest for future use). Put the skillet in the oven and cook until the sauce thickens, about 25 minutes. Transfer to a serving bowl and garnish with the parsley.

- Preheat oven to 350°. In a large ovenproof skillet, heat oil over medium-high heat. Brown chicken on both sides. Remove from pan. In same pan, heat butter over medium-high heat. Add onion; cook and stir until tender, about 1 minute., Stir in barbecue sauce, brown sugar, vinegar and honey. Bring to a boil. Reduce heat; simmer, uncovered, until thickened, 4-6 minutes. SPICY AND SWEET STRAWBERRY BBQ SAUCE
strawberries, strawberries. What a wonderful thing to do with them. This is absolutely delicious! I found it several places online, so it isn't my own recipe. We used it with grilled chicken, but I see a future of experimenting going on at my house. What a delicious BBQ sauce!! I did add a lot more hot sauce then called for, and added a dab of chipolte hot sauce with it also. I found this on Razzledazzle, but the other place is probably the original creator. Evidently its a creation that Clark Kenny of Bubba's BBQ entered in a contest so I give him full credit with my highest appreciation.(servings are a guess, but it made around a pint, give or take.

Steps:
- Combine strawberries, sugar, 2 tablespoons water, and balsamic vinegar in a saucepan and bring to simmer over medium heat.
- Reduce heat to medium-low, cover, and simmer for 15 minutes.
- Whisk 2 tablespoons water and cornstarch in a small bowl.
- Whisk cornstarch mixture into strawberry mixture. Cook, stirring constantly, until mixture thickens, 1 to 2 minutes. Remove from heat.
- Transfer mixture to a blender and puree until smooth.

- Heat the oil in a medium to large heavy bottomed saucepan and saute the onion for about 5 minutes until it softens and starts to turn golden. Remove from the burner and add the rum, stirring for 2 minutes (off the heat) Add the strawberries and cook over medium high heat, stirring often, for 5 minutes or until the strawberries have become soft.
- Add the vinegar, sugar, ketchup, Worcestershire sauce, oil, syrup (or molasses,) salt, pepper, garlic, bay leaves, and chile. Cook for about 15 minutes or until thickened and coats the back of your spoon.
- Remove the bay leaves and process the sauce with an immersion blender until smooth. Move the blender around to get all the lumps. Be extra careful as the mixture is very hot and can splatter.
- Ladle the sauce into jars and let cool before refrigerating. Michael says it will last 2 weeks, but ours lasted up to a month or more.
