SWORDFISH WITH ACHIOTE AND ORANGE

Swordfish with Achiote and Orange image

An achiote rub is the classic Yucatan way of marinating fish. I tasted this rub for the first time in Isla Mujeres in the early 1970s, when you could still live on the beach in a palapa and hammock, eat great seafood, and drink cold beers for a few dollars per day. The fishermen would rub fish with an achiote-citrus paste and grill them on the beach over fires made from coconut husks. When I worked at Chez Panisse in the late 1970s, I duplicated this rub from my taste memory for some of their famous garlic festivals. The light citrus flavors of the achiote paste are a beautiful contrast to the oily texture of the swordfish. If you don't have swordfish, use another meaty ocean fish such as wahoo or mahi mahi.

Yield makes 8 tacos

Number Of Ingredients 17

1/2 cup fresh orange juice
2 teaspoons dried Mexican oregano, toasted and ground (page 161)
1 1/2 tablespoons chopped garlic
1 habanero chile, seeded and chopped
3 teaspoons achiote paste (page 149)
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1/4 teaspoon ground allspice, ground
1 tablespoon lemon-infused olive oil (page 162)
2 tablespoons chopped fresh cilantro leaves
1 Fresno chile, seeded and chopped
1 tablespoon fresh lime juice
1 tablespoon sugar
2 pounds boneless, skinless swordfish fillets, cut into 1-inch cubes
3 tablespoons vegetable oil
8 (5 1/2-inch) soft white corn tortillas (page 13), for serving
Garnish: Shredded lettuce and lime wedges

Steps:

  • Mix all the ingredients except for the fish, oil, tortillas, and garnish in a large bowl. Toss the fish cubes in the mixture and marinate for at least 3 hours.
  • Remove the fish from the marinade, shaking off any excess liquid; discard the marinade. In a large, heavy skillet, heat the oil over medium-high heat and sauté the fish on all sides until cooked through, about 7 minutes.
  • To serve, lay the tortillas side by side, open face and overlapping on a platter. Divide the shredded lettuce and filling equally between the tortillas and top with salsa and a squeeze of fresh lime. Grab, fold, and eat right away. Or build your own taco: lay a tortilla, open face, in one hand. Add some shredded lettuce, spoon on some filling, and top with salsa and a squeeze of fresh lime. Fold, and eat right away.

Salt and pepper
1/2 cup green tapenade (available at specialty food stores)
1 orange, juiced

4 to 6 firm, ripe plum tomatoes

1 tablespoon oregano
1/4 teaspoon salt
1 teaspoon freshly ground black pepper
1/4 cup olive oil

Argentinean-Style Grilled Swordfish with a Spicy-Orange Chimichurri, Pan-Roasted Peppers and Charred Sweet Potato Chips image

Provided by Food Network

Categories     main-dish

Time 1h10m

Yield 4 servings

Number Of Ingredients 30

1 1/4 cups extra-virgin olive oil
6 tablespoons red wine vinegar
1 large orange, zested
1 large lemon, zested
1/2 cup orange juice
1/4 cup lemon juice
2 tablespoons minced garlic
2 tablespoons minced shallots
1 cup chopped fresh Italian flat-leaf parsley, firmly packed
1/2 cup chopped fresh basil leaves, firmly packed
1/2 cup chopped cilantro leaves, firmly packed
2 tablespoons chopped fresh oregano leaves
2 large jalapenos; stemmed, ribs and seeds removed, and minced
1 teaspoon crushed red pepper flakes
2 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 teaspoon sugar
1/8 teaspoon cayenne pepper
2 large sweet potatoes, peeled and sliced into 1/2-inch rounds
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 very large red bell peppers, seeds and ribs removed, cut into large julienne
2 very large yellow bell peppers, seeds and ribs removed, cut into large julienne
2 large cloves garlic, sliced thin
1/2 cup toasted pine nuts
1 tablespoon chopped fresh basil leaves
1 teaspoon chopped fresh oregano leaves
4 (8 to 10-ounce) swordfish steaks, 1-inch thick
Garnishes: orange zest, very thinly sliced jalapeno, 4 thin orange slices (then sliced in the middle to twist).
Warmed sourdough baguette slices

Steps:

  • To prepare the chimichurri, place all the ingredients in a food processor and process for 1 to 2 minutes until the ingredients are well combined. Can be used immediately, but for best results refrigerate overnight. Remove from the refrigerator 2 hours before serving, to allow to come to room temperature.
  • Preheat your grill pan (or outdoor grill) over medium-high heat. Brush each sweet potato slice generously with extra-virgin olive oil and sprinkle both sides generously with salt and pepper. Grill for 3 to 4 minutes per side, or until tender when poked with a knife (you want some nice char marks on the potatoes.) You may need to grill in 2 batches. Place on a baking sheet, wrap with foil and place in a preheated to 200 degree F oven.
  • Next, in a large saute pan over medium-high heat, add 2 tablespoons of extra-virgin olive oil. When hot add the bell peppers and season generously with salt and pepper. Saute until caramelized, about 5 to 6 minutes. Add the garlic and saute for an additional 2 minutes. Turn the heat off, toss in the toasted pine nuts, basil and oregano and add a pinch more salt and pepper. Stir to combine and keep warm on the stovetop.
  • For the swordfish, again heat your grill pan (or outdoor grill) over medium-high heat. Brush both sides of the swordfish generously with extra-virgin olive oil and sprinkle both sides generously with salt and pepper. Grill until just cooked through, but still moist, about 3 to 4 minutes per side (being careful not to overcook the fish.)
  • To plate, first put 1/4 of the sweet potato slices onto each of 4 warmed plates. Top potatoes with a drizzle of extra-virgin olive oil and a tiny pinch of salt. Next, top the sweet potatoes, with 1/4 of the bell pepper mixture. Then place the swordfish atop that, and spoon a generous amount of the chimichurri over the middle of the fish. To garnish, top the chimichurri with a tiny sprinkling of orange zest, then just a few very thinly sliced pieces of jalapeno, and a twisted orange slice. Serve with warmed sourdough baguette slices and the additional chimichurri on the side. Enjoy!!

1/2 cup coarsely chopped onion
3 cups fresh bread crumbs
1 tablespoon toasted pine nuts
1 tablespoon raisins
1/2 cup grated aged pecorino cheese
4 blood oranges
Salt and freshly ground black pepper
4 pounds swordfish, sliced thinly in to 12 compact-disc-size pieces

GRILLED SWORDFISH A L'ORANGE

Grilled Swordfish a L'orange image

This is simple-to-make dish with a bright and refreshing taste. This can also be prepared using halibut, and it goes well with a steamed fresh green vegetable. Preparation time does not include marinating time.

Provided by TasteTester

Categories     < 30 Mins

Time 30m

Yield 4 serving(s)

Number Of Ingredients 8

1 1/2 lbs swordfish steaks (4) or 1 1/2 lbs halibut steaks (4)
1 orange
3/4 cup orange juice
1 tablespoon fresh lemon juice
1 tablespoon sesame oil
1 tablespoon soy sauce
1 teaspoon cornstarch
salt & fresh ground pepper

Steps:

  • Rinse fish and pat dry with paper towels.
  • Grate the peel from the orange using the finest side of a grater, being careful to remove only the outermost layer of skin and not any of the bitter white pith. Grate enough peel to measure 1 teaspoon. Set aside.
  • Combine orange juice, lemon juice, oil and soy sauce in small bowl. Pour 1/2 of this orange juice mixture into a shallow glass dish. Add 1/2 teaspoon grated orange peel to orange juice mixture. Coat fish in mixture; cover and allow to marinate in refrigerator at least 1 hour.
  • Prepare grill for direct grilling over medium heat.
  • Place remaining 1/2 of orange juice mixture in small saucepan. Stir in cornstarch and remaining 1/2 teaspoon orange peel. Heat over medium-high 3-5 minutes until sauce thickens, stirring constantly; set aside.
  • Remove fish from marinade; discard remaining marinade. Lightly sprinkle fish with salt and pepper to taste. Grill fish steaks, on uncovered grill, over medium coals 3-4 minutes per side until fish is opaque and flakes easily when tested with fork. Spoon orange sauce over grilled fish, and garnish with orange segments, if desired. Serve immediately.
  • **Optional: If you'd like to garnish the steak with orange segments, cut off a slice from the top and bottom of the orange you grated peel from. Slice the remaining peel and pith off orange in wide strips, following curve of orange.
  • Make "V-shaped" slices into center of orange just inside of membranes to remove orange segments; set aside. Discard orange membranes.

SEARED SWORDFISH WITH ARTICHOKE AND OLIVE

Seared Swordfish With Artichoke and Olive image

Tetsuya Wakuda's restaurant, Tetsuya's, is a highly regarded restaurant in Sydney, Australia with a definite Japanese flair but making extensive use of Australia's ingredients in innovative ways (http://en.wikipedia.org/wiki/Tetsuya's). Tetsuya's is considered Australia's best restaurant and has routinely been ranked in the top 20 in the world (http://www.theworlds50best.com/module/acms_winners?group_id=1&item_id=55). Australia has an abundance of fresh fish and seafood, so a saltwater fish, prepared with a minimum of fuss, is a very traditional Australian preparation. Substitutions and variations: You can substitute marlin, tuna or bonito for the swordfish. You can substitute a relatively neutral oil with a high smoke point for the grapeseed oil -- I have used canola oil successfully. I use low sodium chicken stock. You can augment (or substitute for) the tomato with tomato paste. Wakame is available in dried form in most oriental grocery stores or via the Internet. To prepare dried wakame, wipe very lightly with a damp paper towel, then soak in room temperature water for no more than 60 seconds. "Rocket" is the UK (and Australian) term for arugula. This recipe is adapted from "Tetsuya" by Tesuya Wakuda. Uploaded for Zaar World Tour 5 (2009).

Time 1h

Yield 4 serving(s)

Number Of Ingredients 16

200 -280 g swordfish fillets (4 fillets, each 50-70g)
1/2 teaspoon grapeseed oil
2 large artichokes
1 teaspoon lemon juice
1/2 teaspoon salt, to taste
4 pieces wakame seaweed, each about 2 inches by 3 inches
1 teaspoon soy sauce
1 teaspoon mirin
80 ml olive oil
1 1/2 teaspoons black olive paste
1/2 teaspoon minced garlic clove
2 tablespoons chicken stock
4 -6 leaves rocket
1 tablespoon parsley, finely chopped
1 tablespoon spring onion, julienned (scallions)
2 tablespoons tomatoes, peeled and diced

Steps:

  • Preheat the oven to 275 dgrees F.
  • In an oven-safe non-stick frying pan over high heat, add the grapeseed oil and then sear the swordfish fillets on both sides.
  • Transfer the frying pan and fillets to the oven for a few minutes ONLY to help the fillets cook through -- ideally, you will remove the fish when they are medium-rare.
  • Trim the artichoke, cut in half and remove the choke.
  • Cut each half into half again, put into a pan containing water, the lemon juice and salt; and cook until tender.
  • To make the sauce, put the soy sauce, mirin, olive oil, black olive paste, garlic and chicken stock into a saucepan, stir, and gently heat.
  • Just before serving, wilt the rocket in the sauce and then remove with a slotted spoon onto a plate.
  • To serve, warm 4 plates; place the wakame in the center, with the swordfish on top of it; place an artichoke quarter by the side of the fillet; garnish with parsley, scallions, rocket and tomato.
  • You may dress the fillet with sauce or pass the sauce separately.
